EASY CONCORD GRAPE JUICE



Easy Concord Grape Juice image

Very simple method to make your own grape juice if you have too many grapes or if you would like to try making your own fresh tasting grape juice.

2 cups washed and cleaned concord grapes
1/2 cup sugar

Steps:

  • In sterilized jar place 2 cups grapes.
  • Add 1/2 cup sugar.
  • Fill to top with boiling water.
  • Seal jars at once with 2 piece lids. Process in water-bath canner for 10 minutes. Remove from canner and keep out of drafts(cover with a towel). Next day remove metal lid-bands, and label with date and contents.
  • Let juice stand 3 to 4 weeks before using.
  • Strain juice from grapes and use juice.

1 recipe pastry for a 9 inch double crust pie
5 cups Concord grapes
1 ¼ cups white sugar
¼ cup all-purpose flour
1 pinch salt
¾ teaspoon lemon juice
1 ½ tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a sheet pan on the lower oven rack.
  • Wash and stem grapes; squeeze grapes out of their skins. Save the skins and set aside. Place grape pulp in a large saucepan; mash a few at the bottom to release their juice. Cook over medium-low heat until grapes come to a full boil. Remove pulp from heat, and press through a food mill to remove seeds. Combine pulp and skins in a large bowl. Stir in lemon juice.
  • In a separate bowl, mix sugar, flour, and salt. Stir into grape mixture. Pour filling into pastry crust, and dot with butter. Cover with second pastry shell. Flute edges, and cut little slits in the top crust for steam to escape.
  • In preheated oven on sheet pan for 45 to 50 minutes, or until crust is brown and juice begins to bubble through slits in top crust. Allow to cool before serving.

At one time my mother in law would make many different flavors of jams and jellies. This is one of her old recipes that she has given to me.

3 ½ pounds Concord grapes
½ cup water
7 cups white sugar
½ (6 fluid ounce) container liquid pectin

Steps:

  • Sort and wash grapes, and remove stems. Place them into a large kettle and crush them. Add water, cover, and bring to a boil over high heat. Reduce heat to low, and simmer for 10 minutes. Remove from heat, and extract juice. Allow the juice to stand in a cool place overnight to prevent the formation of crystals in the jelly.
  • Strain the juice through a double thickness of damp cheesecloth. Measure 4 cups of the juice into a large pot. Stir in the sugar. Quickly bring to a full rolling boil. Stir in pectin, and allow to boil hard for 1 minute. Remove from heat, and skim off foam. Pour into hot sterile jars, and process for 5 minutes in a boiling water bath.

6 lbs concord grapes
1 1/2 cups sugar

Steps:

  • Wash grapes and remove from stems. Measure 14 cups grapes.
  • Combine grapes and 2 cups water in large kettle, cover. Heat to boiling and cook slowly until very tender, about 30 minutes.
  • Remove from heat; strain through cheesecloth. Let juice stand 24 hours in refrigerator then strain again.
  • Combine strained grape juice and sugar in large kettle; heat to boiling. Pour hot juice into hot jars, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath 10 minutes.
  • Before serving, dilute grape juice concentrate with water to taste and chill thoroughly.

Steps:

  • In a medium stockpot, combine Concord grape juice, cardamom pods, cinnamon, and nutmeg. Bring the mixture to a boil, then reduce heat. Simmer the mixture until the juice becomes infused with the spices, about 20 minutes. Serve immediately, or keep warm until ready to serve.

  • Extract the grape juice by combining grapes and water in a saucepan over low heat. Heat and simmer slowly until skins are soft, and the juices are released. Gently mash the grapes with a potato masher and simmer over low heat for 15 minutes, stirring occasionally.
  • Strain through a damp jelly bag or double layers of cheesecloth. Discard solids. Refrigerate grape juice for 24 to 48 hours to allow the sediment to settle to the bottom. This will help eliminate crystals in your juice.
  • When you are ready to can your grape juice, prepare your jars and lids by washing in warm, soapy water and rinsing thoroughly. Place jar rack into water bath canner, set jars in the canner, add water, and boil jars for 10 minutes to sterilize. Warm lids in a small pot over low heat. Keep jars and lids warm until ready to use. *
  • Carefully remove the grape juice from the refrigerator without disturbing the sediment. Gently pour off clear liquid and discard sediment. Strain through a paper coffee filter if a clearer juice is desired. Add grape juice to a saucepan and bring to a boil. Continue boiling for 10 minutes stirring occasionally.
