BLUEBERRY PIE MUFFINS
Love warm blueberry muffins and the sweet taste of homemade blueberry pie? This recipe is the perfect harmony of both - a muffin bursting with both blueberry pie filling and fresh blueberries.

Steps:
- Heat oven to 400°F.Place paper baking cup in each of 12 regular-size muffin cups or grease with shortening or cooking spray.
- In small bowl, mix filling ingredients; set aside. In medium bowl, mix all streusel ingredients with fork until crumbly; set aside.
- In large bowl, beat milk, oil, egg and lemon peel with fork or whisk until blended. Stir in remaining muffin ingredients all at once just until flour is moistened (batter will be lumpy).
- Spoon about 1 tablespoon batter in bottom of each muffin cup (spread, if necessary, to cover most of bottom of cup). Alternately drop rounded 1/2 teaspoon blueberry mixture and 1 teaspoon remaining muffin batter in different areas in each muffin cup, layering as necessary. (Cups will be three-fourths full.)
- Sprinkle streusel evenly over batter and blueberry mixture in each cup.
- Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan to cooling rack. Serve warm if desired.

This cobbler is so easy to make. It can be made with any flavor pie filling. I make this when hubby wants a "nice" desert and I don't feel like "making" one.

Steps:
- Melt butter or margarine in 9 x 9 baking dish.
- Mix sugar, flour, salt, and baking powder.
- Add milk and mix well.
- Pour batter into melted butter-- do not stir.
- Pour pie filling into batter (I drop it by spoonful and put several spoons in the middle and then divide the rest into the corners and sides-- do not stir).
- Bake@ 350° for 50 minutes to 1 hour or until golden brown.

BLUEBERRY CRUMBLE
This is a quick and easy dessert with canned pie filling and white cake mix that I've made for years. You can make a cherry version by substituting cherry pie filling and yellow cake mix. Serve warm with vanilla bean ice cream and enjoy! Walnuts may be used instead of pecans, if desired.

- Gather the ingredients.
- Heat oven to 350 F. Add butter to an 8-inch square baking dish or a 9-inch round baking dish and place in the oven to melt.
- Combine sugar, flour, baking powder , salt, and milk in a large bowl. Mix until well blended.
- Remove baking dish from oven once butter has melted. Pour batter over butter.
- Pour pie filling over top of batter.
- Bake for 50 to 60 minutes or until crust is golden brown around the edges. It might look buttery on top, but the butter will sink into cake as it cools a bit.
