2 Cans Tuna in Water, drained, 12oz each
¼ Cup Fresh Lemon Juice
2 TBSP Lemon Zest
¼ Cup Olive Oil
½ Cup Kalamata Olives, chopped
¾ Cup Celery, diced (about 2-3 stalks)
½ Cup Shallot, minced
¼ Cup Scallion, sliced thin
2 TBSP Flat Leaf Parsley, minced
2 TBSP Dijon Mustard
1 TSP Celery Seed
1 TBSP Capers, rinsed
1 Cup Feta Crumbles
¾ Cup Seedless Cucumber, diced
½ TSP Balsamic Vinegar
½ TSP Kosher Salt
Fresh Cracked Pepper

Steps:

  • Take out a large bowl. Add in the tuna and roughly break apart.
  • Add in the remaining ingredients and mix well.
  • Serve in a lettuce wrap, over a salad, on some cucumbers or in a delicious wrap with some fresh pea sprouts.
  • Enjoy cold and happy eating.

Easy, nutrition-packed, healthy salad that combines potatoes, eggs and tuna.

1 pound potatoes
4 eggs
2 5-ounce cans of tuna, drained
¼ cup chopped fresh dill
¼ cup micro greens
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Put potatoes in a pot, fill it with water. Bring it to boil and then let it simmer over medium high heat until potatoes are tender. Check their tenderness with a fork. Drain and then wash them under cold water so that they are cool enough to peel. Chop and put them aside to cool completely before combining with the other ingredients.
  • Put eggs in a saucepan with cold water. Bring it to boil and then cook over medium heat for 5 minutes so that they are hard-boiled. Transfer them into a bowl of cold water to cool. Peel, chop and put aside.
  • In a large salad bowl, combine chopped potatoes, eggs, tuna and chopped herbs like fresh dill and micro greens.
  • Prepare the dressing by whisking together lemon juice, olive oil, salt and black pepper well. Pour it over the salad, toss gently and serve.

2 stalks celery, thinly sliced
1 carrot, shredded
1/4 cup sliced green onion (or chopped onion)
1/2 red bell pepper, diced (about 1/4 cup)
1/4 cup olive oil
Juice of 1 lemon (2-3 tablespoons)
1 tablespoon Dijon mustard
1 garlic clove, minced
1/4 cup chopped fresh parsley or cilantro
1/4 teaspoon coarse salt
Black pepper, to taste

Steps:

  • In a large bowl, flake the tuna with a fork.
  • Add celery, carrot, onion and bell pepper.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard and parsley. Pour dressing into salad and stir to combine.

2 tbsp Pickles ((finely chopped))
2 tbsp White onion ((minced))
4 large Hard boiled eggs ((diced))
Sea salt ((to taste))
Black pepper ((to taste))

Steps:

  • In a medium bowl, use a fork to whisk together the mayo, mustard, parsley, and paprika, until smooth.
  • Add the tuna, celery, pickles, and onions. Stir together, breaking apart any large pieces of tuna.
  • Fold in the diced eggs.

5 eggs
1 ¼ cups bread and butter pickles
2 (5 ounce) cans tuna, drained
3 stalks celery, chopped
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon sweet pickle juice

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water and cool under cold running water. Peel.
  • Place the eggs and pickles into a food processor; pulse until roughly chopped. Transfer to a medium bowl and stir in tuna and celery. Season with salt and pepper, and stir in the pickle juice until thoroughly blended.

If you want to add a touch of mayo for creaminess, go ahead- but it's plenty good without! You can change up the ingredients to suit what you have on hand, or what you like- chopped pickles instead of capers, oil packed tuna instead of water packed, different herbs, shallot instead of green onion... This is just how I first made it based on what was in my kitchen.

1 (5 ounce) can tuna in water, well drained
2 hard-boiled eggs, peeled and diced
1 tablespoon capers
1 tablespoon red bell pepper, diced fine
1 green onion, white and green parts chopped
1/2 teaspoon fresh tarragon, chopped
1 teaspoon red wine vinegar
2 teaspoons olive oil
1/4 teaspoon kosher salt (or to taste)
fresh ground pepper, to taste

Steps:

  • Combine tuna, eggs, capers, pepper, onion and tarragon gently in a bowl.
  • Whisk together vinegar, oil, salt and pepper in another small bowl.
  • Fold the dressing into the tuna mixture. Taste for seasoning, and add more salt or pepper as needed.
  • Chill for 1 hour for flavors to combine, then serve.

1 (16 ounce) box salad rotini pasta (any variety will do, but this is my favorite)
1 tomatoes, diced
1 (16 ounce) can kidney beans, drained & rinsed
0.5 (2 1/4 ounce) can sliced black olives
1 (16 ounce) bottle Italian dressing, any brand
crouton, favorite variety
bacon bits
parmesan cheese

Steps:

  • Cook pasta to desired tenderness.
  • When cooled, add diced tomatoes, olive slices and beans.
  • Add Italian dressing, measure by eye, pasta should be coated, but not swimming!
  • I usually use packets of powdered dressing mix, as do not keep bottles of Italian dressing on hand, and can make as much or as little as I want.
  • I've also played with different varieties of Italian dressings.
  • You can have fun with it, tweak to your taste.
  • If not serving immediately, refrigerate. But mix well before serving to redistribute dressing that may settle at bottom of dish.
  • Serve with croutons, bacon bits & Parmesan cheese.
  • (I serve this on the side to sprinkle on top, because if any leftovers croutons& bacon bits will get soggy when refrigerated, and vegans don't eat cheese!).

1 can light tuna in water, drained
1/4 cup red onion, sliced thin
1/4 cup roasted red bell peppers (jarred in water), chopped
2 Tbs fresh basil, chopped
black pepper to season

Steps:

  • In a small bowl, whisk together the lemon juice and olive oil until emulsified. Stir in the tuna, red onions, roasted bell peppers and basil. Season to taste with black pepper. Boom. Serve as a sandwich with bread, half of a pita, or a sandwich thin. This is also AMAZING served over some greens for a yummy, filling salad.
