This is a simple but delicious way to serve cauliflower. American cheese can easily be substituted for Cheddar if you would rather eat American cheese.

2 heads cauliflower
1 ½ cups sour cream
1 ½ cups shredded Cheddar cheese
1 tablespoon butter
1 cup bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch casserole dish.
  • Break cauliflower into florets, place in large covered saucepan and steam until tender.
  • Place cauliflower in casserole dish; gently stir in sour cream and cheese.
  • In a saute pan over medium heat, melt butter; add bread crumbs and evenly coat.
  • Sprinkle bread crumbs over cauliflower mixture and bake for 25 to 30 minutes.

2 tablespoons sugar
1/2 cup sliced almonds
1 package (5 ounces) spring mix salad greens
6 cups torn romaine
1 can (11 ounces) mandarin oranges, drained
2 celery ribs, thinly sliced
1 small red onion, chopped
2 green onions, thinly sliced
DRESSING:
3 tablespoons canola oil
2 tablespoons cider vinegar
5 teaspoons sugar
1 tablespoon minced fresh parsley
1/4 teaspoon salt

Steps:

  • In a small heavy skillet, cook and stir the sugar over medium-low heat until melted. Stir in almonds; cook for 1 minute or until lightly browned. Spread onto foil coated with cooking spray; set aside. , In a large salad bowl, combine the mixed greens, romaine, oranges, celery and onions. In a small bowl, whisk the dressing ingredients. Drizzle over salad; add almonds and toss to coat.

1 large head cauliflower, broken into small florets
1 (10.75 ounce) can condensed cream of chicken soup
¾ cup mayonnaise
¼ cup milk
2 teaspoons curry powder
12 wheat crackers
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cauliflower in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm. Drain, and place in a greased casserole dish.
  • In a large bowl, mix together soup, mayonnaise, milk, and curry powder. Pour over cauliflower. Crush crackers, and mix with butter. Sprinkle over cauliflower.
  • Bake in preheated oven for 30 minutes.

1/4 cup water
1/2 cup mayonnaise
1 teaspoon onion
1 teaspoon mustard
1/4 teaspoon salt
1/2 cup shredded cheddar cheese

Steps:

  • Steam cauliflower by putting it in a covered dish with the water and microwave for 9 minutes
  • Combine rest of ingredients - spread over cauliflower (like frosting).
  • Return to microwave for about 1 - 1 1/2 minutes.

1 pound 10-bean mix (about 2 cups)
8 cups water
3 cups cubed fully cooked ham
1 teaspoon salt
1/2 teaspoon pepper
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 large onion, chopped
1/4 cup lemon juice
1 teaspoon garlic powder

Steps:

  • Place beans and enough water to cover in a Dutch oven or soup kettle. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. , Drain beans and discard liquid. Return beans to kettle; add the water, ham, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until beans are tender. , Add remaining ingredients; cover and simmer for 30 minutes or until onion is tender.

1 large cauliflower, small florets
1/3 c green bell pepper
1/3 c orange bell pepper
1/3 c yellow bell pepper
1 c diced onion
1 pkg raw mushrooms, rough chopped
1 jar(s) pimento (small jar) diced
1 bunch green onion diced
1/4 c butter
1/3 c all purpose flour
2 c milk
1/4 tsp cayenne pepper
1 tsp salt
1 c velveeta cheese shredded or a mix of cheddar & swiss shredded

Steps:

  • 1. Cook cauliflower in boiling, salted water until barely tender, Drain
  • 2. While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.
  • 3. In a large skillet saute onion, mushrooms and peppers in butter until tender.
  • 4. Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened
  • 5. stir in salt, cayenne & cheese. Cook until cheese is melted.
  • 6. in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly
  • 7. Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.

1 medium cauliflower
2 cups chicken stock
1/4 cup butter or 1/4 cup margarine
1/4 cup chopped onion
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup grated medium cheddar
buttered bread crumb (to garnish)
parsley

Steps:

  • Cook cauliflower in chicken stock until tender. Do not drain. Cool a bit. Run through blender to desired texture. Set aside.
  • Melt butter in saucepan. Add onion and saute until limp. Do not brown.
  • Mix in flour, salt and pepper. Add milk. Heat and stir until it boils and thickens.
  • Add cheese and cauliflower mixture. Stir to heat and melt cheese. Garnish with buttered bread crumbs, Parsley may e added as an ingredient or garnish.
