SWEET BABY CARROTS
Honey, butter, and brown sugar make these baby carrots irresistible! It may not be the most nutritious recipe, but the carrots turn out so yummy, you won't care!

Steps:
- Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
- Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 5 minutes

Steps:
- Cook whole carrots in salted water until tender, saving 1/4 cup cooking liquid.
- Cut lengthwise in narrow strips.
- Arrange in 9 x 9 baking dish.
- Set aside.
- Combine reserved carrot liquid with mayonnaise, onion, horseradish, salt and pepper.
- To serve, pour sauce over carrots.
- Sprinkle cracker crumbs on top.
- Dot with butter.
- Sprinkle with parsley and paprika.
- Bake at 375° for 20 minutes.

- Set oven to 350 degrees.
- Butter a 2-quart baking dish.
- Cook the carrots in a saucepan until fork-tender, about 15 minutes drain VERY well (you might even want to pat dry with a paper towel) cool slightly.
- Place the cooled carrot in a food processor and process until smooth.
- Add in all remaining ingredients; pulse to combine.
- Transfer to baking dish.
- Bake for about 40 minutes or until puffed and set.

- Preheat oven to 375 degrees F (190 degrees C).
- Place carrots into a saucepan and cover with water; bring to a boil. Reduce heat to medium-low and simmer until just soft, 6 to 8 minutes. Drain, reserving 1/4 cup of cooking liquid.
- Mix onion, horseradish, mayonnaise, Parmesan cheese, and reserved 1/4 cup liquid in a bowl; toss horseradish mixture with carrots. Transfer carrot mixture to a shallow baking pan. Season with salt and black pepper. Sprinkle panko bread crumbs over carrots.
- Bake in the preheated oven until bread crumbs are lightly browned, about 20 minutes.

- 1. Cook carrots. Drain & save the liquid. Cut in to 1/4" lengthwise pieces. Place in a buttered 9 x 13 pyrex dish.
- 2. Mix sauce ingredients and pour over carrrots: Cooking liquid, mayonaise, onion & horseradish
- 3. Sprinkle the seasoned breadcrumbs over the carrots. Cut butter in small pieces and place on top. Season with Paprika & Parsley.
