COMPANY BREAKFAST
I first had this at an in-laws! I'm not sure where she got the recipe, but I'm assuming it was from Company's Coming. I omit the green peppers as they don't agree with me. Great with fresh fruit. It has also been called "Christmas Morning Wife Saver".

Steps:
- Using a greased 9" x 13" baking pan, put enough slices of bread to cover bottom of dish.
- Cover bread with thin slices of ham, grated cheese, onions and green pepper.
- Then cover with remaining bread.
- In a large bowl beat eggs, salt, pepper, dry mustard, Worcestershire, Tabasco and milk.
- Pour over bread.
- Cover and refrigerate overnight.
- In the morning, melt 1/2 cup butter or margarine and drizzle over the top.
- Cover with crushed Corn Flakes.
- Bake uncovered in 350 F oven for 1 hour.

Steps:
- Preheat oven to 350 degrees.
- Mix cheeses together.
- Put 1/2 the cheese in the bottom of a 13x9 (ungreased) baking dish.
- In a skillet, melt butter and cook the mushrooms and green onions until tender.
- Sprinkle all this over the cheese layer.
- Then layer ham over the vegetables.
- Then layer remaining cheese over the ham.
- Combine flour, milk and eggs, blending well.
- Pour this mixture over the layers.
- Bake at 350 degrees for 35 to 45 minutes, or till mixture is set and lightly browned.
- Let set 10 minutes.
- Cut into squares.
- May make the night before; cover and refrigerate till cooked.

- Spread half of the hashbrowns in a lightly greased 13"x9" baking pan. Layer ingredients as follows: half the onion, sausage, remaining onion, green pepper, mushrooms and half the cheese. In a separate bowl, whisk together eggs, milk and seasonings. Pour egg mixture over casserole; top with remaining hashbrowns and remaining cheese. Cover with aluminum foil and refrigerate overnight.
- Bake, covered, at 350 degrees for 45 to 60 minutes. Uncover and bake an additional 20 minutes or until a knife inserted in center comes out clean.

- In a large bowl, combine the flaxseed, water, and banana. Mash and stir until well combined. Let the mixture sit for 5 minutes to thicken. Add the olive oil, vanilla, and almond milk and whisk. Add the flour and sprinkle the baking powder, baking soda, cinnamon, nutmeg, and salt evenly over the top. Stir until all the ingredients are combined, but the batter is still a bit lumpy. The batter will be a bit thick but if it’s too thick to scoop, stir in an additional 1 tablespoon almond milk.
- Heat a nonstick skillet or griddle to medium heat. Brush the skillet with a little olive oil and use a ⅓-cup measuring cup to pour the batter onto the pan. Use the back of the cup to gently spread the batter a little more. Cook the pancakes until bubbles appear, about 1½ minutes per side, turning the heat to low as needed so that the middles cook without burning the outsides. I usually start with medium heat and move to low heat as my pan starts to hold residual heat after each batch.
