COMFORT FOOD: PORK & CHORIZO SOUP
Here is a great little soup that is easy to put together, and will keep you warm on a cold Winter's eve, or just about any old time of the year when you crave good comfort food. Prep is a snap, and the cooking process is non-labor intensive. As a matter of fact, you just might have all the ingredients at hand... just sitting there in your fridge and pantry. So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- Gather your ingredients.
- Thinly slice the onion, mince the garlic, and cut the carrots thickly on the bias, and then cut in half.
- Add the chorizo sausage to a heavy-bottomed pot, over medium heat.
- Cook until the sausage is almost cooked through, but still a bit pink.
- Drain of all but a tablespoon of grease from the pot, and then add the onion, garlic, and cubed pork tenderloin.
- Reduce heat to medium low, and cook until the pork tenderloin is beginning to brown, and the onions, are softened, about 10 minutes.
- Add the red wine the rice, cayenne, and cumin.
- Bring the heat back up to medium, and stir, until the wine reduces by half, about 3 minutes.
- Add the water, stock, and the carrots.
- Bring the pot up to a boil, and then reduce to a simmer.
- Allow the pot to simmer until the rice and carrots have cooked, about 20 minutes.
- Chef's Note: During this time, add a bit of salt and pepper, to taste.
- Chef's Note: If the soup gets too thick, you can thin it out with some water, or more chicken stock.
- PLATE/PRESENT
- Serve in nice bowls with some crackers, bread, or possibly warm tortillas. Enjoy.

SAVORY CHORIZO SAUSAGE, RICE & BEAN SOUP
Perfect as a cool-weather warmer-upper-or any time of year when you're in the mood for a hearty soup. Just reading the ingredients list-chorizo sausage, black beans, garlic-and-butter flavored rice-is enough to make your mouth water. Enjoy!

- In a Dutch oven over medium heat, brown sausage (10 to 12 minutes).
- Add onion and garlic. Continue cooking, stirring occasionally, until onion is softened (4 to 5 minutes).
- Add remaining ingredients except Parmesan cheese.
- Reduce heat to low; continue cooking 12 to 15 minutes.
- Scoop into individual bowls and sprinkle with 1 tablespoon Parmesan cheese. Refrigerate leftovers.

- Place a large soup pot over medium-high heat, and drizzle in about 1 tablespoon of avocado oil; once the pot is hot, crumble in the chorizo, and stir it around for a few minutes until mostly cooked through.
- Add in the leeks, plus a pinch of salt and pepper, and cook those with the chorizo for about 4 minutes, or until they start to become tender; add the garlic and stir, and once aromatic, add in the cumin, chili powder and smoked paprika, and stir to combine.
- Add in the diced sweet potato, the drained fire-roasted tomatoes and the navy beans, along with the chicken stock, and to stir to incorporate; bring the soup to a vigorous simmer, then cover with a lid askew, and turn down the heat to allow the soup to simmer for about 20 minutes, or until the sweet potato is tender.
- Turn off the heat, and check to see if additional salt/pepper is needed; then, stir in the spinach and the cilantro, and serve.
