- In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.
- On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.

Steps:
- Make the Homemade Italian Dressing.
- Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.
- Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

SPICY THAI SHRIMP SALAD
A simple, healthy Thai shrimp salad with an authentic sour-savory-spicy-sweet combination of fresh lime juice, fish sauce and chili paste, showered with fresh herbs and crunchy roasted peanuts.

Steps:
- Bring a large pot of salted water to a boil.
- In a large bowl, combine lime juice, lime zest, fish sauce, sugar, and chili paste. Taste, and adjust with any of the ingredients. It should taste quite sour, but also a little salty, spicy and sweet.
- Turn heat off and poach the shrimp in the water until just cooked through, 2-3 minutes. Be careful not to overcook. Drain well.
- Add the warm shrimp to the sauce and toss well. Add the shallot, cilantro and mint leaves. Toss, and transfer to a serving bowl. Scatter over the peanuts and garnish with a few more herbs. Serve immediately with hot rice or rice noodles.
COMBINATION SALAD FROM WV
This recipe my dad and my husbands dad both made when we grew up. I love it. You can use a food processor, but using a grinder is the best! We made it with a cast iron food grinder and it just don't get any better. Also, don't use slice bologna or cheese if you can help it. Getting a chunk from the deli if possible it best. Consistency is the key to this recipe. It really changes the taste. This is great t take to parties. cut bread into 4's to make it grabable. Note: I will have to remake recipe to get measurement on mayo. I never measure. I just go on consistency. Add until nice and spreadable.

- grind bologna, cheese, pickle, boiled eggs.
- mix all together adding mayo. (and recently I started adding lemon juice so it cuts down the salty taste. I add 1 to 2 tsp to desired taste. If you like the salty taste, skip this.).
- once it is spreadable, place between 2 slices of white bread.
- Enjoy!
- Note: you can also add onion if you like.

OLD FASHIONED BOLOGNA SALAD
I remember this sandwich spread from when I was a kid. Mom and Dad would buy bulk bologna every time we traveled to Indiana to see family and this was the treat that was made from the ends of the log. Chopped olives, shredded cheese or chopped pickled banana peppers could be added for a different flavor.
