COLOSSAL CHOCOLATE CHIP COOKIES

Colossal Chocolate Chip Cookies image

Monster cookies! You may want to half these if you don't have a heavy duty mixer. Cooking time depends on the size of your oven and the number of cookie sheets you have. Cooking time is 8-10 minutes a cookie sheet!

Provided by breezermom

Categories     Dessert

Time 25m

Yield 4 dozen

Number Of Ingredients 13

2 cups butter, softened
2 cups sugar
2 cups brown sugar, firmly packed
4 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
5 cups regular oats, uncooked
3 cups semisweet chocolate morsels (18 oz)
7 ounces milk chocolate candy bars, coarsely chopped
2 cups pecans, chopped

Steps:

  • Beat butter at medium speed of a heavy-duty electric mixer until creamy; gradually add sugars, beating well. Add eggs and vanilla; beat well.
  • Combine flour and next 3 ingredients; gradually add to the butter mixture, beating well.
  • Position knife blade in the food processor bowl; add oats. Process until finely ground. Gradually add to the butter mixture, beating well. Stir in chocolate morsels, chopped chocolate, and pecans.
  • Shape cookie dough into 2 inch balls. Place 3 inches apart on ungreased cookie sheets. (I use parchment paper, just to be sure!) Flatten each ball to a 2 1/2 inch circle. Bake at 375 degrees for 8 to 10 minutes or until lightly browned.
  • Cool slightly on the cookie sheets; remove to wire racks, and let them cool completely.

COLOSSAL CHOCOLATE CHIP COOKIE

Colossal Chocolate Chip Cookie image

Number Of Ingredients 10

1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine, softened
3/4 cup brown sugar packed light or dark
3 tablespoons granulated sugar
1 egg large
1 1/2 teaspoons vanilla extract
1 cup semi-sweet chocolate chips
3/4 cup nuts coarsely chopped (optional)

Steps:

  • In a small bowl, mix flour, baking soda and salt set aside. In a large mixer bowl at medium speed, beat butter, brown sugar and sugar until creamy. Beat in egg and vanilla. At low speed, gradually beat in flour mixture until well blended. Stir in 1 cup chocolate chips. Chill in refrigerator for 1 1/2 hours or freeze for 45 minutes or until well chilled, but not hard (chilling makes the dough less sticky and helps prevent excessive spreading during baking).Preheat oven to 325°. Grease a 12-inch round metal or foil baking pan.Place dough in center of pan. Press evenly to within 1 1/2 inches of edge of pan. If desired, sprinkle nuts and additional 1/4 cup chocolate chips on top, pressing down lightly. For easier handling, place foil pan on a baking sheet.Bake in center of oven for 25 to 30 minutes or until edges are firm and no indentation remains in center of cookie when lightly touched. For a softer cookie, bake the minimum time. Place baking pan on a wire rack and cool cookie completely. Cookie can be left in the pan as part of the gift. When cool, decorate with frosting if desired. Wrap in plastic wrap (see below). Overwrap with foil to retain freshness. Store in a cool place.
