1 (15 ounce) can black beans, drained and rinsed
1/2 cup yellow bell pepper, chopped
1/2 cup red bell pepper, chopped
1/2 celery, chopped
2 tablespoons red onions, chopped
1 tablespoon chopped fresh parsley
2 tablespoons freshly squeezed lemon juice
1 clove garlic, crushed
1/4 teaspoon ground cumin
3 tablespoons extra virgin olive oil

Steps:

  • Toss together beans, yellow and red peppers, celery, onion and parsley.
  • Whisk together lemon juice, olive oil, garlic& cumin and toss into bean mixture.

1 cup white rice
2 cups water
1 (14.5 ounce) can diced tomatoes, drained
⅓ cup red wine vinegar
3 cloves garlic, minced
1 tablespoon ground cumin
4 teaspoons chili powder
1 ½ teaspoons salt
1 teaspoon oregano
ground black pepper to taste
¾ cup canola oil
3 (15.5 ounce) cans black beans, drained and rinsed
½ (10 ounce) box frozen corn, thawed

Steps:

  • Bring rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Mix tomatoes, vinegar, garlic, cumin, chili powder, salt, oregano, and black pepper together in a bowl. Whisk oil into tomato mixture to make a dressing.
  • Stir rice, black beans, and corn together in a bowl; toss with dressing until well-coated.

3/4 cup red wine vinegar
1/3 cup vegetable oil
1 1/2 teaspoons chili powder
3/4 teaspoon ground cumin
3 small cloves garlic, crushed
1 bag (12 oz) frozen corn, cooked, drained
3 cups diced peeled jicama
3 medium tomatoes, seeded, chopped (3 cups)
6 cans (15 oz each) Progresso™ black beans, drained, rinsed
6 green onions, thinly sliced

Steps:

  • In large bowl, mix all dressing ingredients until well blended.
  • Add salad ingredients; toss to mix. Cover and refrigerate at least 2 hours but no longer than 24 hours, stirring occasionally.

2 tablespoons olive oil
1 garlic clove, minced
3/4 teaspoon ground cumin
1/2 teaspoon salt

Steps:

2 cups frozen corn kernels
1 small red bell pepper, seeded and chopped
