SHRIMP DUMPLINGS (SAEU MANDU)



Shrimp dumplings (saeu mandu) image

Filled with shrimp and lots of healthy vegetables, these dumplings are easy to make, juicy and flavorful!

Number Of Ingredients 18

2 cups all purpose flour (about 9 ounces/260 grams, more for dusting)
1/2 teaspoon salt
⅔ cup water
2 to 3 ounces (60 to 90 grams) spinach
12 ounces (340 grams) raw shrimp (Peeled and deveined)
10 ounces (280 grams) green cabbage
4 ounces (110 grams) fresh mushroom caps, stems removed ((shiitake, button, crimini, etc.))
1/2 small onion
1 teaspoon minced garlic
1 teaspoon finely grated ginger (or juiced)
1 teaspoon soy sauce
2 teaspoons sesame oil
salt to taste (about 1/4 teaspoon)
pinch pepper
1 tablespoon soy sauce
1 teaspoon vinegar
1 tablespoon water
pinch of black pepper (and/or gochugaru (red chili pepper flakes))

Steps:

  • Add 2 cups of flour to a bowl. Dissolve 1/2 teaspoon of salt in ⅔ cup of water. Gradually add the water to the flour while mixing and checking the moisture level. Keep mixing by hand until the dough comes together, and knead with the heel of your hand until the dough is smooth bur slightly stiff. You can adjust the dough by kneading in a little more flour or more water.
  • Cover with a plastic wrap, and let it rest for 30 minutes to an hour. After resting, the dough should feel soft and smooth. (This is a good time to start making the filling.)
  • When ready to use, using a sharp knife, cut the dough into 4 long pieces on a lightly floured work surface. Roll each piece with both hands to make a thin log, 3/4 to 1-inch diameter. (Cover the remaining dough to keep it from drying out.)
  • Cut each log into 3/4 to 1-inch pieces. Press the cut side with the thumbs to flatten to a small disk. Dust and roll out each disk with a small rolling pin to a thin 3.5-inch circle. (You can also use a round cutter or wine glass.) Make a few wrappers at a time and wrap the filling in. Always cover the dough and wrappers that are not being used.
  • Blanch the spinach in boiling water, puree in a food processor. Run it through a sieve to extract green juice, about ⅔ cup. Follow the same steps for the wrappers above.
  • Coarsely chop the shrimp or pulse several times in a food processor. Finely chop the cabbage. Mix with 1 teaspoon of salt. Let sit for 5 - 10 minutes. Squeeze out excess water. (If using a food processor, add salt with the cabbage before pulsing.) Finely chop the onion and mushrooms. Combine all the filling ingredients in a large bowl. Mix well by hand.
  • Place a tablespoon of the filling on a wrapper. You don't need to wet the edges of the homemade wrapper. Seal tightly (pushing the air out with your fingers) into a half-moon shape. (You can add pleats if desired.) Dust the bottom of the dumpling with flour to keep it from sticking as the skin absorbs the moisture from the filling. Repeat this process until all the filling/wrappers are used.
  • Steaming: steam the dumplings for about 10 minutes in a steamer (longer if frozen). Make sure to line the steamer with a wet cheesecloth or paper towel to prevent the mandu from sticking.
  • Boiling: bring a pot of water to a boil. Add mandu (stirring gently so they don't stick to the bottom of the pot), a few at a time, and cook until all of them come up to the surface. Continue to cook for another minute or two.
  • Pan frying, heat the pan with 1 tablespoon of vegetable oil over medium high heat. Add the dumplings, making sure they aren't touching each other. Fry for 1 - 2 minutes, until the bottoms are golden brown. Add 1/4 cup of water to the pan, and cover immediately with a lid. Reduce the heat to medium low, and steam for 4 to 5 minutes. If the dumplings are frozen, cook a little longer.

If you've never heard of mandu, it's a Korean-style dumpling that can be filled with a variety of toppings and boiled, steamed, or fried. This recipe uses a mixture of tofu, pork, beef, kimchi, scallions, and seasonings. The mandu are boiled until they're tender, chewy, and bursting with flavor. Thanks to store-bought wrappers, it's easy to make a big batch of these dumplings to feed a crowd or freeze for later.

7 oz tofu
½ lb ground pork
½ lb ground beef
½ cup scallion, chopped
¼ cup white onion, chopped
½ cup kimchi, roughly chooled
2 cloves garlic, finely chopped
2 teaspoons ginger, finely chopped
2 tablespoons sesame oil
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon pepper
1 egg
1 tablespoon water
80 small dumpling wrappers
dipping sauce, optional
⅓ cup soy sauce
1 teaspoon sesame oil
1 teaspoon rice wine vinegar
¼ teaspoon korean red pepper

Steps:

  • Place the tofu in a small bowl lined with paper towels. Top with another paper towel and a bowl filled water for weight. Let sit for 15 minutes to extract some moisture from the tofu.
  • Crumble the tofu into small pieces in a large bowl. Add the pork, beef, scallions, onion, kimchi, garlic, ginger, sesame oil, soy sauce, salt and pepper. Mix well with your hands.
  • In a small bowl, combine the egg and water.
  • Put two teaspoons of filling in the middle of a dumpling wrapper. Using your finger, wet half of the outer rim of the wrapper with the egg and water mixture.
  • Fold the wrapper in half. Using your fingertips, start make pleats to seal the mandu. Repeat with the rest of the wrappers and filling.
  • Bring a large pot of water to boil over high heat. Once boiling, add 6-7 mandu at a time. Once the mandu start floating on the surface, boil for another 1-2 minutes. Remove the mandu from the water with a spider or slotted spoon and repeat with the rest of the dumplings.
  • Serve with dipping sauce.

1 pound lean​ ground beef (or pork)
1 onion (finely chopped)
1 cup cabbage (about 1/2 of a small cabbage head, finely chopped and parboiled)
1/2 cup tofu (1 cake, chopped)
4 ounces​ mung bean noodles (or sweet potato noodles, soaked, and then chopped)
3 cloves garlic (finely chopped)
1 tablespoon sesame oil
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon pepper
1 package circular mandoo wrappers (or​ Japanese gyoza or​ Chinese wonton wrappers )
Dumpling dipping sauce , for serving

Steps:

  • Gather the ingredients.
  • In a large mixing bowl , gently combine the ground beef or ground pork, onion, cabbage, tofu, and noodles.
  • In a separate small bowl, combine the garlic, soy sauce, sesame oil, salt, and pepper.
  • Pour seasoning mixture over meat and vegetables and mix with hands to combine.
  • Place about 1 tablespoon of filling in the center of a dumpling wrapper.
  • Dip your finger in water and wet the perimeter of half of the wrapper.
  • Fold the wrapper in half, pressing to seal and then crimp the edges. Repeat until the filling is gone.
  • You can steam, boil, fry, or sauté the dumplings as you wish.
  • Serve with a basic dipping sauce or a spicy sauce .

1 cup cellophane noodles
4 cups chopped cabbage
1 cup chopped onion
1 cup chopped bell pepper
1 medium carrot, chopped
1 tablespoon minced garlic
1 ½ teaspoons salt
1 pinch ground black pepper
1 tablespoon olive oil, or more as needed
1 cup crumbled firm tofu
2 tablespoons chopped scallions
2 tablespoons sesame oil
5 cups all-purpose flour
1 cup beet juice
1 large egg, beaten
1 pinch salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender yet firm to the bite, 6 to 7 minutes. Drain and dice.
  • Place cabbage, onion, bell pepper, carrot, garlic, salt, and pepper in the bowl of a food processor; pulse until vegetables are diced.
  • Heat olive oil in a pan over medium-low heat. Saute the vegetable mixture in the hot oil, stirring frequently, until soft, about 6 minutes. Add tofu; saute for 5 minutes.
  • Place filling in a cheesecloth and squeeze as much water out as possible. Transfer the filling to a bowl and mix in the diced noodles, scallions, and sesame oil until well combined.
  • Mix flour, beet juice, egg, and salt for dough together in a bowl and knead until cohesive but not sticky.
  • Roll out dough with a thin rolling pin, or roll it through your pasta machine at the thickest setting. Progressively roll the dough thinner until it reaches the second-thinnest setting on your machine--or, thin enough that it's see-through, but not quite transparent. Cut circles for dumpling wrappers with a 3 1/2-inch biscuit cutter or cup. Roll excess dough back through the machine, or with a rolling pin, repeating the process and cutting out more wrappers until you have no more dough left.
  • Place about 2 teaspoons of filling in the center of each dumpling wrapper. Fold each wrapper in half and pinch all the way across until the dumpling is sealed firmly shut.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Working in batches, add dumplings, cover, and steam until heated through, about 10 minutes.
