This is a delicious, hearty stew that's perfect for late fall or winter. For the beer, I recommend Sierra Nevada Pale Ale.

4 tablespoons bacon drippings
¼ cup flour
Salt and pepper to taste
2 ½ pounds beef stew meat, cut into 1 inch cubes
5 tablespoons olive oil
1 onion, thinly sliced
6 cloves garlic, thinly sliced
1 pound carrots, peeled and sliced
1 pound celery, sliced
¼ cup rice vinegar
2 tablespoons brown sugar
4 cups beef broth
2 (12 fluid ounce) cans or bottles ale
1 parsnip, peeled and sliced
1 turnip, peeled and chopped
1 pound baby red potatoes, washed
¾ cup parsley, chopped
4 whole bay leaves

Steps:

  • Heat bacon grease in a large pot over medium heat.
  • Combine flour with salt and pepper. Coat beef cubes.
  • Brown meat in the bacon grease until nicely browned. Remove to a paper towel, and set aside.
  • Heat olive oil in the same pot. Cook onions, garlic, carrots, and celery over low heat. Add the vinegar and sugar. Pour in the broth and bring to a boil. Deglaze the pan by scraping off the food stuck on the bottom of the pot.
  • Return meat to pot. Pour in beer, then stir in parsnips, turnips, red potatoes, parsley, and bay leaves. Reduce heat to medium low. Cover and simmer for 90 minutes, stirring occasionally.

1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 medium red or green bell pepper, diced
1 cup water
4 heaping cups prebaked, peeled, and diced orange squash (sugar pumpkin, butternut, carnival, etc.)
3 cups corn kernels (preferably fresh, scraped from 3 to 4 ears)
One 28-ounce can salt-free diced tomatoes, undrained
One 16-ounce can red or black beans, drained and rinsed
1 to 2 fresh hot chilies, seeded and minced, or one 4-ounce can chopped mild green chilies
2 teaspoons ground cumin
1 teaspoon dried oregano
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a soup pot or steep-sided stir-fry pan. Add the onion and sauté over medium heat until translucent. Add the garlic and bell pepper and continue to sauté until the onion is golden.
  • Add all the remaining ingredients except the salt and pepper. Bring to a rapid simmer, then lower the heat. Cover and simmer gently for 15 to 20 minutes. Season gently with salt and pepper, then serve in shallow bowls.

2 lbs boneless pork shoulder, cut into 2-inch pieces
1 (10 3/4 ounce) can Campbell's French onion soup
1/2 cup apple cider or 1/2 cup apple juice
3 large Granny Smith apples, seeded and cut into 2-inch pieces
2 medium parsnips, peeled and cut into 1-inch pieces (about 2 cups)
1/2 teaspoon dried thyme leaves, crushed

Steps:

  • Stir the pork, soup, cider, apples, squash, parsnips and thyme in a 6-quart slow cooker.
  • Cover and cook on LOW for 7 to 8 hours or until the pork is fork-tender.
  • TIME-SAVING: This recipe may also be cooked on HIGH for 4 to 5 hours.
  • FOR THICKER GRAVY, stir 1/5 cup all-purpose flour and 1/2 cup water in a small bowl until the mixture is smooth. Stir the flour mixture in the cooker. Cover and cook on HIGH for 10 minutes or until the mixture boils and thickens.

1 1/2 lbs chicken breast halves, cut into bite sized pieces (about 3 boneless, skinless breast halves)
2 lbs butternut squash, peeled, seeds removed, and diced into large bite sized pieces
2 leeks, white part only, sliced into thin rings, and soaked in water to remove sand
2 celery ribs, sliced into 1/8 inch pieces
4 small parsnips, peeled and sliced into 1/4 inch coins
3 large carrots, peeled and cut into 1/4 inch coins
2 medium potatoes, peeled and cut into 8 pieces each
1 small apple, peeled, cored, and diced (any variety suitable for baking or cooking can be used. I used Honeycrisp)
3/4 cup chicken broth
2 medium garlic cloves, minced
1 teaspoon herbes de provence
salt and pepper, to taste

Steps:

  • Combine all ingredients in a 4 qt crock pot, stir well.
  • Cover and Cook on low for 5-6 hours or until vegetables are fork tender and chicken pieces are no longer pink.
  • Gently stir halfway through cooking.
  • Serve with fresh, crusty bread.
  • Enjoy!

1-1/2 pounds boneless pork, cut into 1-inch cubes
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons butter
3 cups chicken broth
3/4 teaspoon salt
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon rubbed sage
1 bay leaf
1 medium butternut squash, peeled and cubed (3 cups)
2 medium apples, peeled and cubed

Steps:

  • In a large saucepan, cook the pork, onion and garlic in butter until meat is no longer pink; drain. Add the broth, salt, rosemary, sage and bay leaf. , Cover and simmer for 20 minutes. Add squash and apples; simmer, uncovered, for 20 minutes or until squash and apples are tender. Discard bay leaf.

4 medium red potatoes, cubed
3 medium carrots, sliced
3 medium celery ribs, sliced
1 large onion, chopped
1/4 cup(s) coarse ground mustard
1/4 teaspoon(s) pepper
1 package(s) (16 ounces) johnsonville® smoked bratwurst, sliced
2 medium tomatoes, cut into wedges
3 tablespoon(s) cornstarch
3 tablespoon(s) cold water

Steps:

  • In a large saucepan, combine the broth, Beck's Oktoberfest Beer, potatoes, carrots, celery, onion, mustard and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes until vegetables are tender. Stir in Johnsonville® Smoked Bratwurst and tomatoes.
  • Combine cornstarch and water until smooth; stir into stew. Bring to a boil. Cook and stir for 1 minute or until thickened. Serve hot with a thick slice of bread.
