I created this recipe myself. The cheddar cheese and bread crumb topping makes it a pretty casserole for a holiday dinner. You can easily double the amounts if you're having a larger group.

1 medium onion, chopped
4 tablespoons butter, divided
2 tablespoons olive oil
1 garlic clove, minced
1 package (16 ounces) frozen cauliflower, thawed
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1/4 cup dry bread crumbs
1/4 cup shredded cheddar cheese

Steps:

  • In a large skillet, saute onion in 2 tablespoons butter and oil until onion is tender. Add garlic; cook 1 minute longer. Stir in the cauliflower, salt, pepper and nutmeg; saute for 2 minutes., Transfer to a greased 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over cauliflower mixture. , Cover and bake at 350° for 15 minutes. Uncover; bake for 10 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted.

RAINBOW CAULIFLOWER GRATIN

Number Of Ingredients 10

Two 9.5-ounce bags frozen mixed variety cauliflower, such as Birds Eye® Steamfresh® Rainbow Cauliflower
One 10.8-ounce bag frozen green beans, such as Birds Eye® Steamfresh® Whole Green Beans
5 tablespoons unsalted butter
1/4 cup all-purpose flour
2 1/4 cups whole milk
1 1/4 cups shredded sharp white Cheddar (about 5 ounces)
1/3 cup plus 2 tablespoons freshly grated Parmesan (about 2 ounces)
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
1/4 cup breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook the cauliflower and green beans according to the package directions. Transfer to a colander to drain.
  • Meanwhile, melt 3 tablespoons of the butter in a large saucepan over medium heat. Add the flour and whisk until bubbling all over, about 1 minute. While whisking continuously, slowly add the milk and continue to cook until the mixture is thick enough to coat the back of a spoon, about 3 minutes more. Whisk in 1 cup of the Cheddar, 1/3 cup of the Parmesan, the nutmeg, 1 teaspoon salt and several grinds of pepper until smooth.
  • Place half of the cauliflower and green beans in the bottom of a 7-by-11-inch or other 2-quart baking dish, then pour over half of the cheese sauce. Top with the remaining cauliflower and green beans, then the remaining cheese sauce, making sure the vegetables are evenly coated.
  • Melt the remaining 2 tablespoons of butter in a small microwave-safe bowl, then mix in the breadcrumbs, remaining 1/4 cup shredded Cheddar and remaining 2 tablespoons Parmesan. Sprinkle the breadcrumb mixture over the gratin. Bake until the top is golden brown and the cheese sauce is bubbling at the edges, about 20 minutes. Let cool for 5 minutes before serving.

1 large head cauliflower
½ cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
¼ cup margarine, melted
⅛ teaspoon garlic powder
⅛ teaspoon salt
1 pinch red pepper flakes
1 pinch dried oregano

Steps:

  • Clean cauliflower, and trim off leaves and any brown spots. Place the whole head of cauliflower into a steamer basket, place the basket in a large pot, and add one inch of water. Cover, and bring to a boil over medium heat. Cook for about 20 minutes or until tender.
  • Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the bread crumbs, Parmesan cheese, melted margarine. Season with garlic powder, salt, red pepper flakes, and oregano, and mix well. Place the head of cauliflower into a baking dish, and coat with the breadcrumb mixture.
  • Bake for about 10 to 15 minutes in the preheated oven, or until golden brown.

1 large head cauliflower, broken into small florets
½ cup butter, melted
¼ cup grated Parmesan cheese
⅔ cup Italian seasoned bread crumbs
1 pinch salt
1 teaspoon crushed red pepper flakes
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring 2 inches of water to a boil in a medium saucepan. Add cauliflower, cover, and cook for about 10 minutes. Drain, and place in a 2 quart casserole dish.
  • In a small bowl mix together butter, Parmesan cheese, bread crumbs, salt, and red pepper flakes. Sprinkle mixture over cauliflower, and top with Cheddar cheese.
  • Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.

1/4 teaspoon garlic salt
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1 1/3 cups skim milk
1 cube chicken bouillon
2 tablespoons drained, chopped pimientos
1/2 cup sliced green onions
1 (16-ounce) package cut, frozen cauliflower, thawed, well-drained

Steps:

  • 1. Combine KELLOGG'S ALL-BRAN cereal, margarine and garlic salt. Set aside for topping.2. In 3-quart saucepan, combine flour, salt and pepper. Add milk, stirring until smooth, using a wire whip, if necessary. Add bouillon cube. Cook, stirring constantly, over medium until mixture boils. Continue cooking and stirring 1 minute longer. Remove from heat. Add pimentos, onions and cauliflower, mixing until combined. Spread evenly in 1 1/2-quart baking dish. Sprinkle with cereal topping.4. Bake at 350°F about 20 minutes or until thoroughly heated and sauce is bubbly.NOTE: 3 1/2 cups fresh cauliflower flowerets, cooked crisp-tender may be substituted for frozen cauliflower.

3 cups fresh cauliflowerets
3 cups sliced carrots
3 cups fresh broccoli florets
1 cup mayonnaise
1/4 cup finely chopped onion
3 tablespoons prepared horseradish
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup dry bread crumbs
2 tablespoons butter, melted
1/8 teaspoon paprika

Steps:

  • In a large saucepan; add 1 in. water. Add cauliflower and carrots. Bring to a boil. Reduce heat; cover and simmer for 4-8 minutes. Add broccoli; cook 4-6 minutes longer or until all the vegetables are crisp-tender. Drain., In a small bowl, combine the mayonnaise, onion, horseradish, salt and pepper. Add vegetables; toss to coat., Pour into a greased 2-qt. baking dish. In a small bowl, combine the bread crumbs, butter and paprika until crumbly; sprinkle over vegetables. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

This is a great way to make cauliflower. Add more cheese if desired. I used light cream when I made this. You can cover and chill for up to 24 hrs if making ahead. Bake in oven covered for 15 min then uncovered for 10 min.

1 (1 1/2 lb) cauliflower
1 small onion, chopped (1/3 cup)
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8-1/4 teaspoon pepper
1 dash ground red pepper
1 cup light cream or 1 cup milk
1/2 cup shredded cheddar cheese
2 tablespoons snipped parsley

Steps:

  • Wash cauliflower and remove leaves and woody stem.
  • Break into floweretts. (You should have about 4 cups.)
  • In a medium saucepan cook cauliflower, covered, in a small amount of boiling salted water for 5 minutes. Drain.
  • In the same saucepan cook onion in margarine or butter until onion is tender but not brown.
  • Stir in the flour, salt, pepper, and ground red pepper.
  • Add half-and-half, light cream, or milk all at once.
  • Cook and stir over medium heat until thickened and bubbly.
  • Add cheese, stirring until cheese melts.
  • Stir in cooked cauliflower.
  • Transfer mixture to a 1-quart casserole.
  • Bake in a 350 degree F oven about 15 minutes or until heated through. Sprinkle the top with the snipped parsley.
