This is Anthony Bourdain's Beef Chili Recipe, New Mexico Style. Deep and richly flavored, this is a hearty chili stew featuring beef chuck and New Mexico Hatch chile and poblano peppers.

4 poblano peppers (roasted, chopped)
1 pound Hatch chili peppers (roasted, chopped)
½ cup all-purpose flour
2 pounds beef chuck (cut into 1-inch cubes)
2 to 3 tablespoons vegetable oil
1 large yellow onion (coarsely chopped)
5 garlic cloves (minced)
2 jalapeño peppers (seeds removed and chopped)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 1/2 teaspoons dried Mexican oregano
2 tablespoons tomato paste
1 cup beer
2 cups veal or beef stock
Chopped cilantro for garnish

Steps:

  • Preheat broiler and position rack as close to the broiler heat source. Line the bottom of a broiling pan with aluminum foil (this will catch any juices from the peppers). Place poblano peppers on top of the broiling pan. Place under the broiler. Let cook until peppers' skin is blackened, turning peppers with tongs so they blacken on all sides, approximately 10 to 15 minutes.
  • Place peppers in a large plastic bag and loosely seal for 30 minutes. Remove and discard as much of the blackened skin as possible along with the stems and seeds. Use your hands. Don't rinse peppers under water, you'll rinse away flavor. If you want your chili to be hotter, leave in some of the seeds (source of the peppers' heat). Coarsely chop peppers and set aside.
  • Repeat this roasting process for the hatch chile peppers. If you're using frozen (no need to thaw) or canned peppers (no need to drain), they are likely already roasted, peeled and seeded. In some cases they are already coarsely chopped, too - if not, then coarsely chop them and set aside.
  • In a large mixing bowl, whisk together flour and about 2 teaspoons each of salt and freshly ground pepper. Toss beef in the flour mixture to coat. Heat 2 tablespoons of oil in a Dutch oven (at least 5 quarts) over medium-high heat until just smoking. Add beef in batches and sear until dark brown on all sides. Be sure not to crowd beef too much. Using tongs, remove cooked beef to a plate. Continue to cook remaining beef in batches, so you're not crowding the beef pieces.
  • Add onion, garlic and jalapeño peppers to the pot and season with salt and freshly ground pepper. Cook over medium-high heat, scraping the bottom of the pot with a wooden spoon to dislodge browned bits. Add an additional tablespoon of oil if necessary to keep the caramelized bits of onion mixture and beef (know as "fond") from scorching. You can also add a splash of stock at this point. Cook for about 5 to 7 minutes or until the onion has begun to soften and brown.
  • Add cumin, coriander and Mexican oregano and cook for an additional 2 minutes.
  • Stir in tomato paste and beer. Bring to a boil and cook until liquid has reduced by about two-thirds. Scraping the bottom of the pan to loosen any bits of fond.
  • Stir in stock and return beef to pot. Add reserved poblano and hatch chili peppers. Bring to a boil and reduce heat to a simmer. Cook, covered for 2-1/2 hours or until beef is fork tender.
  • Remove chili from heat and serve in bowls with chopped cilantro, corn chips or flour tortillas and a wedge of lime. A splash of acid always brightens the flavor.

1 onion, chopped
4 garlic cloves, chopped
1 cup bell pepper, chopped
1 cup carrots, chopped
1 cup celery, chopped
1 jalapeno, deseeded and chopped
One 28-ounce can crushed tomatoes
One 14-ounce can diced tomatoes
One 15-ounce can tomato sauce
1 can black beans, drained
1 can kidney beans, drained
2 tablespoons chili powder
1 tablespoon oregano
1 tablespoon basil
1 tablespoon cumin
1 teaspoon adobo sauce
Sea salt and black pepper to taste
½ teaspoon cayenne pepper

Steps:

  • Saute onions, garlic and bison in a saucepan over medium heat. Once meat is no longer pink, add to slow cooker.
  • Add remaining ingredients to slow cooker and mix.
  • Cover and cook on low for 8-10 hours.

2 lbs. Al natural bison chuck roast, cut in 1/2″ cubes
1 onion, chopped fine
2 tbsp. tomato paste
2 - 14.5 oz. can fire roasted diced tomatoes
1 8oz. can tomato sauce
1/4 cup red chili powder
1 Dried ancho chili pod, chopped fine or ground.
1 1/2 tsp cumin, ground
1/2 tsp. paprika
2 tbsp garlic powder
24 oz of your favorite dark beer, I recommend Shiner Bock or Ziegen Bock (Any good German beer will do)
1 medium butternut squash, peeled, seeded and cut in 1/2 cubes.
4 cups cooked pinto beans (or about 3 cans, if you don't want to cook them.)
10 oz. whole kernel corn (or the corn from 2 cobs)
4-6 oz. chicken stock or water.
1 1/2 tsp dried Mexican oregano
2 tsp dried cilantro leaves
2 tbsp corn masa flour (Masa Ferina)
Salt and pepper to taste.
2 tbsp vegetable oil or bacon grease.
Beef stock if needed to thin chili during cooking.

Steps:

  • Heat oil or bacon grease in a large pot or dutch oven over medium heat. Add cubed bison in batches, browning well on all sides. Remove browned pieces and place in a large bowl until all buffalo is browned well.
  • Return browned bison to pot with whatever juices collected in bowl. Add onion and cook for about 2 minutes, stirring often. Add tomato paste and continue stirring until paste no longer smells raw (Your nose will know, the paste will start to smell a bit sweet and the aroma will deepen.)
  • Add tomatoes, tomato sauce, ancho chili, chili powder, cumin, paprika, garlic powder and beer. simmer for 30 minutes and taste for seasoning. (it will still taste bland at this point, just make sure the amounts are close.)
  • Add butternut squash and simmer 45 minutes to 1 hour or until squash is just about fork tender, stirring occasionally to avoid sticking.
  • Add remaining ingredients and simmer uncovered for 1 hour, stirring often to prevent burning. Add beef stock or water as needed to achieve desired consistency.Taste for seasoning and adjust if necessary.
  • Simmer uncovered for an additional hour, adding liquid if necessary. Allow to rest 15 minutes before serving
  • Serve with cheddar or jack cheese, sour cream and a slice of good cornbread .

3 lbs (3 packages) ground bison meat
2 large onions (- chopped)
16 oz can peeled tomatoes
25 oz can kidney beans
25 oz can chili beans
4 cups ketchup
1 teaspoon garlic (- minced)
2 teaspoons cilantro (- chopped)
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 tablespoon black pepper (- freshly ground)
1 teaspoon thyme
1/2 teaspoon powdered mustard
salt and pepper (- to taste)
chopped jalapeño peppers (- to taste)

Steps:

  • Brown the bison in a large skillet over medium-high heat, season with salt and pepper as desired.Optional Step: add onions to bison and cook until tender.
  • In a large pot (or Crock Pot) add the ground bison, onions, tomatoes, chili beans, kidney beans, ketchup, garlic, cilantro, chili powder, cayenne pepper, black pepper, thyme and powdered mustard. Stir to combine.
  • Simmer at medium heat on stove top (or in Crock Pot on low heat) for at least 1 hour, stirring occasionally.

2 green bell peppers
2 jalapeno peppers ((de-seeded and finely chopped))
3 chipotles in adobo sauce ((finely chopped))
6 ounces tomato paste ((1 small can, 170g))
1 teaspoon cumin
½ teaspoon cayenne pepper
1 teaspoon smoked paprika
2 teaspoons salt
½ teaspoon black pepper
1 teaspoon sugar
1 can kidney beans ((15 ounce can, rinsed and drained, about 250g rehydrated))
1 can pinto or pink beans ((15 ounce can, rinsed and drained, about 250g rehydrated))
28 ounces crushed tomatoes ((800g))
3 cups chicken stock ((700 ml))

Steps:

  • Heat a large soup pot over medium-high heat. Add the ground bison and let it brown, breaking it up with a wooden spatula (you can add a couple tablespoons of oil if there isn't enough fat in your bison to prevent sticking). When the bison is browned, add the onions and garlic. Saute until the onions are translucent.
  • Next, add the bell peppers and jalapeno peppers. Cook for 5 minutes to let the peppers cook. Add the chilis in adobo sauce, tomato paste, cumin, cayenne pepper, paprika, salt, pepper, and sugar. Stir to combine. Add both cans of beans, the crushed tomatoes, and chicken stock.
  • Bring to a boil, stirring to combine. Turn the heat down to low, and let the chili simmer for an additional two hours. Before serving, add salt to taste, and finish each bowl with a sprinkling of grated cheddar cheese, sliced avocado, and a side of tortilla chips!

Of course, you can always dial up the heat, but if you're looking for the earthy rich flavor that only chilis can give a dish, then my Beef Chile Colorado is just what you're looking for.

3 dried Guajillo chiles (stems removed and seeded)
3 dried Ancho chiles (stems removed and seeded)
2 New Mexico chiles (or pasilla) (stems removed and seeded)
2 tablespoons olive oil
½ sweet Vidalia onion (chopped)
3 clove garlic (finely chopped)
3 cups beef broth (1 cup reserved (chicken or vegetable broth can be substituted))
3 teaspoon cumin
1 teaspoon sea salt (or more to taste)
1½ teaspoon dried oregano
½ teaspoon black pepper
1 cup fire-roasted tomato
2 tablespoons olive oil
2 pounds beef chuck ( cut into 1 inch squares)
1 tablespoon masa harina

Steps:

  • In a large sauté pan or wide bottom pot, toast the chiles over medium heat for 1-2 minutes to bring out the flavor of the peppers. Remove from the pan until needed.
  • Add olive oil to the hot pan and sauté the onions for 2-3 minutes then add in the garlic and continue to sauté for 1 minute.
  • Add the toasted chiles, fire-roasted tomatoes, seasonings and beef stock to the pan.
  • Bring the mixture to a gentle boil. Turn off heat, cover the pot and let it steep for 45 minutes.
  • Reserve one cup of the stock. Add the remainder of the ingredients to a blender and blend until smooth at the highest setting. Add additional liquid if the mixture is too thick for your blender. Reserve the remainder of the liquid till needed.**Depending on the power of the blender it may completely puree all the ingredients. If it has bits and pieces remaining, run the sauce through a sieve to take out and pieces that didn't get pureed.
  • Heat a large pot or Dutch oven over medium-high heat. Add the oil and half of the meat and brown on all sides so they have a good sear, about 5-7 minutes. Transfer the browned beef into a bowl and repeat the process with the remaining uncooked meat.
  • When all the beef has browned, return all the meat to the pot. Add in the red chile sauce, and reserved beef broth. Stir to combine and bring the mixture to a boil. Once the mixture has begun to boil, reduce the heat to simmer. Cover the pot and continue to simmer for 2 hours.
  • Uncover, taste and reseason as necessary.
  • Mix the masa harina with 2 tablespoons of the broth from the pot to make a slurry. Add the slurry back into the pot and mix well.
  • Raise to medium heat and cook for another 15 to 30 minutes, until the sauce has reduced and thickened slightly. If you prefer a thicker sauce, cook longer.
  • Serve with rice, tortillas and beans and enjoy!

Steps:

  • Brown the buffalo in a skillet over medium heat; season with 1/2 teaspoon cumin and 1 pinch cayenne pepper, or to taste. Drain excess grease.
  • Combine the buffalo, tomatoes with green chiles, tomato soup, kidney beans, chili beans, onion, garlic, Anaheim chile pepper, poblano chile pepper, chili powder, red pepper flakes, 1 1/2 teaspoons cumin, 1/2 teaspoon cayenne pepper, salt, and black pepper in a slow cooker. 12 ounces Your favorite dark beer
1 tablespoon Cumin
1 tablespoon Coriander
15 ounce Kidney beans

1 Large onion (chopped)
2 tablespoon Guajillo Adobo sauce
1 Poblano pepper
1 tablespoon Chili powder
1 cup Strong coffee
2 tablespoons Extra virgin olive oil

Steps:

  • Sauté onions in olive oil over medium heat for three minutes, then add cumin, coriander, chili powder and sauté an additional two minutes.
  • Deglaze pan with bottle of beer, then add tomatoes, adobo sauce, and coffee. Bring to low boil and simmer for at least two hours.
  • Add the beans and simmer an additional 30 minutes.
  • Although completely optional, I like to roast the poblano over an open flame, turning until all the skin is charred black. Let cool then peel skin, remove seeds, and dice the pepper. This fills the kitchen with a wonderful aroma and gets me excited for the chili to come.
