Got this recipe in a 2004 Taste of home magazine. It's really nice on a cold winters day. I know some wouldn't consider it chili because of the beans but it is really good.

Number Of Ingredients 19

1 pound boneless beef sirloin steak cut into 3/4 cubes
4 italian sausages links, casings removed and cut into 3/4 inch slices
2 Tbsp olive oil divided
1 medium onion chopped
2 garlic cloves minced
2 green onions thinly sliced
2 tsp beef bouilon
1 c boiling water
1 6 ounce can tomato paste
3 Tbsp chili powder
2 Tbsp brown sugar
2 Tbsp worcestershire sauce
2 tsp ground cumin
1 tsp crushed red pepper flakes
1 tsp salt
1/2 tsp pepper
3 cans 141/2 ounce diced tomatos
3 15 ounce cans pinto beans rinsed and drained
shredded cheese optional

Steps:

  • 1. In larg skillet brown the beef and sausage in 1 tablespoon oil. drain
  • 2. Transfer meat to a 5 quart slow cooker.
  • 3. In the same skillet saute the onio, garlic and green onion in remaining oil until tender. Transfer to slow cooker.
  • 4. In small bowl dissolve bouilon in water. Stir in tomato paste, chili powder, brown sugar, worcestshire sauce, and other seasonings till well blended. Add to slow cooker.
  • 5. Stir in tomatos and beans.
  • 6. Cover and cook on high for 6 ot 8 hours or until the meat is tender.
  • 7. Serve iwht cheese if desired.

2 lbs ground beef (can substitute elk, deer, or have a mix)
2 medium yellow onions, chopped
2 garlic cloves, minced
oil
1 (16 ounce) can tomatoes, broken up
4 tablespoons tomato paste
4 ounces diced green chilies
2 pickled jalapeno peppers, chopped (optional)
3 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 tablespoon oregano
2 (14 1/2 ounce) cans beef broth
5 cups water
1 (15 ounce) can pinto beans

Steps:

  • Brown mean with onions and garlic in small amount of oil. Add tomatoes, tomato paste, chilies, jalapenos, seasonings, beef broth, and water. Bring mixture to a boil. Reduce heat to low and cook 4-5 hours, stirring occasionally. Adjust seasonings, if necessary. Add beans during last 30 minutes of cooking. Serve hot in bowls with an assortment of condiments such as grated cheeses, sliced olives, pico de gallo, chopped onions, etc.

2 pounds ground beef
1 large sweet onion, chopped
1 medium sweet red pepper, finely chopped
1 medium sweet yellow pepper, finely chopped
2 cans (16 ounces each) chili beans, undrained
2 cans (14-1/2 ounces each) stewed tomatoes, drained
1/2 cup tomato juice
2 jalapeno peppers, seeded and minced
2 garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon cayenne pepper
Shredded cheddar cheese, optional

Steps:

  • In a large skillet, cook the beef, onion and peppers over medium heat until the meat is no longer pink, 5-7 minutes; crumble beef; drain., Transfer to a 4- or 5-quart slow cooker. Stir in the beans, tomatoes, tomato juice, jalapenos, garlic, cumin, chili powder, salt and cayenne. Cover and cook on low for 5-6 hours or until heated through. If desired, top with shredded cheddar cheese.

I always wanted to try a chili with beef chunks. My friend made this and brought me a sample. It was delicious! My husband insisted chili has to have ground beef but once he tried it he was hooked! This has now become a favorite in our house and I hope yours too!

3 1/lbs chuck roast
3 tbsp veg oil
1 lb bulk pork sausage
1/4 c butter
2 medium onions, chopped
2 medium green bell peppers, chopped
2 c shredded cabbage
6 cloves garlic, minced
2 cans (10oz each) or-tel tomatoes with green chili
1 can or bottle (12-oz) beer
1 can (46oz) v8
1 jar (8oz) red jalapeño sauce
1 cup fresh parsley
1 dried red chili pepper pod
2 tsp salt
1/2 tsp freshly ground black pepper
5 to 7 tsp chili powder
1 1/2 tsp cayenne pepper
3 1/2 tsp powder cumin
1 tsp mono sodium glutamate
1 tsp oregano
2 tbsp brown sugar
2 tbsp beef bouillon granules
1 tsp paprika
1 tsp hot red pepper sauce
1/2 tsp anise seed
2 tbsp flour dissolved in 1/3 c water, if desired

Steps:

  • Cut chuck into 3/8 inch cube, discarding gristle and fat. In large, heavy pot, brown chuck in oil until all,pink color is gone. In separate pan, brown sausage, breaking up large chunks with fork. Drain sausage, and add beef pork. In skillet, melt butter, add onions, peppers, cabbage and garlic and sauté until onions are limp, about five to seven minutes. Add vegetables to pot with remaining ingredients except flour mixture. Stir well and bring to a boil, reduce heat and simmer one hour. (If desired you can add beans) Remove hot chili pepper rod and continue cooking another 60 minutes. Add more cumin, salt and pepper to taste, if necessary. If desired, thicken with flour mixture the,sat 15 minutes of cooking time. Makes bout 1 1/2 gallons of chili

1 (10 ounce) jar salsa (or larger)
1 (8 ounce) package corn tortilla chips
fresh cilantro leaves

Steps:

  • In a large saucepan over medium heat cook onion and olive oil for 3 minutes. Stir in hominy ,beans, chicken broth, chicken strips, lime juice, cilantro, cumin and pepper.
  • Cover and bring to a boil over high heat, stirring occasionally. serve topped with cheese, tortilla chips and fresh cilantro leaves.
