SPICY MONTANA CHILI
This thick and chunky chili has some kick to it. I like to top it with shredded cheddar and then serve it with a side of cornbread. -Donna Evaro, Casper, Wyoming

- In a large skillet, cook the beef, onion and peppers over medium heat until the meat is no longer pink, 5-7 minutes; crumble beef; drain., Transfer to a 4- or 5-quart slow cooker. Stir in the beans, tomatoes, tomato juice, jalapenos, garlic, cumin, chili powder, salt and cayenne. Cover and cook on low for 5-6 hours or until heated through. If desired, top with shredded cheddar cheese.

FIRE ON THE MOUNTAIN CHILI RECIPE

- Cut chuck into 3/8 inch cube, discarding gristle and fat. In large, heavy pot, brown chuck in oil until all,pink color is gone. In separate pan, brown sausage, breaking up large chunks with fork. Drain sausage, and add beef pork. In skillet, melt butter, add onions, peppers, cabbage and garlic and sauté until onions are limp, about five to seven minutes. Add vegetables to pot with remaining ingredients except flour mixture. Stir well and bring to a boil, reduce heat and simmer one hour. (If desired you can add beans) Remove hot chili pepper rod and continue cooking another 60 minutes. Add more cumin, salt and pepper to taste, if necessary. If desired, thicken with flour mixture the,sat 15 minutes of cooking time. Makes bout 1 1/2 gallons of chili
COLONY MOUNTAIN CHILI
I always wanted to try a chili with beef chunks. My friend made this and brought me a sample. It was delicious! My husband insisted chili has to have ground beef but once he tried it he was hooked! This has now become a favorite in our house and I hope yours too!

- 4. In a small bowl, dissolve bouillon in water. Stir in the tomato paste, chili powder, brown sugar, worcestershire sauce and seasonings until blended. Add to slow cooker.
- 5. Stir in tomatoes and beans. Cover and cook on high for 6-8 hours or until meat is tender. Serve with cheese if desired.
COLONY MOUNTAIN CHILI
Got this recipe in a 2004 Taste of home magazine. It's really nice on a cold winters day. I know some wouldn't consider it chili because of the beans but it is really good.

- Brown mean with onions and garlic in small amount of oil. Add tomatoes, tomato paste, chilies, jalapenos, seasonings, beef broth, and water. Bring mixture to a boil. Reduce heat to low and cook 4-5 hours, stirring occasionally. Adjust seasonings, if necessary. Add beans during last 30 minutes of cooking.
