BEST EVER MUFFINS
Start with this basic recipe, and add one of several different ingredients for a variety of different muffins.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
- Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.
- Bake for 25 minutes, or until golden.

COLONIAL MUFFINS
This is a recipe I used when I had a winter lodge. It was popular on cold winter mornings, especially when they were still warm and the butter melted into them. Any prepared mincemeat will do but I prefer the non alcoholic for this recipe.

Steps:
- Combine all of the dry ingredients and mix well.
- In a seperate bowl stir the apple juice and eggs into the melted butter, beat well.
- Stir the liquid ingredients into the dry mixture.
- Add the mincemeat and stir in until moistened.
- Spoon into a greased muffin pan and add 1 tsp of the sugar/rum mix on top of the batter.
- Bake in a 375F oven for 15 to 20 minutes.

OLD-FASHIONED MOLASSES MUFFINS
The spicy aroma of these muffins in the oven is truly mouthwatering! I've fixed batches for Christmas breakfast...frozen more to snack on later...and sent plenty to school with our youngsters.

- In a large bowl, combine the dry ingredients. In another bowl, beat egg, water, oil and molasses. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until muffins test done. Cool in pan for 5 minutes before removing to a wire rack to cool completely.

CINNAMON MUFFINS
A family favorite, these Cinnamon Muffins are tender and sweet and filled with lots of cinnamon flavor.

Steps:
- Preheat the oven to 375ºF. Grease 18 muffins cups.
- In a bowl, combine the flour, sugar, baking powder, cinnamon and salt.
- In another bowl, beat together the milk, vegetable oil, and eggs. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined - don't over mix.
- Divide the mixture evenly between the prepared muffin cups.
- In a small bowl, combine the 2 tablespoons sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the tops of the batter filled cups.
- Bake the muffins until a toothpick instead in the center comes out clean, 13-15 minutes.
