- Gradually beat 2/3 cup sugar into the beaten egg until light.
- Sift together flour, baking powder and salt.
- Add the flour mixture to the egg mixture alternately with 1/3 cup of milk.
- Add 3 tablespoons butter and 1 teaspoon vanilla or almond extract.
- Beat well, then fold in 1 1/2 cups fresh huckleberries.
- Pour into an 8" cake pan and bake at 400 degrees for about 40 minutes, or until toothpick inserted in center comes out clean.

- 1. Add flour, salt, cinnamon and baking powder into your flour sifter, sift into large bowl. (If you don't have one, add ingredients to a large bowl and whisk together, then "sift" with whisk for awhile lifting ingredients from bottom of bowl and sprinkling on top. Repeat, repeat....but you really need to get a flour sifter! LOL ;) ) (*This is for the young ones that think "flour sifters" are old fashioned and aren't needed...uhm, yeah, ya need one.)So anyways...In mixing bowl, cream sugar and butter. Add eggs, vanilla, lemon juice and milk to creamed mixture. Add dry ingredients to creamed mixture. Beat for 2 minutes. Gently fold in frozen huckleberries. Bake in greased (I use butter-flavored crisco), and floured bundt cake pan for 20 minutes at 400 degrees, then reduce heat to 350 and bake 40 more minutes. Cool in pan 10 minutes. (If it apears to be sticking anywhere, loosen with sharp knife.) Turn out onto plate. When cooled, sprinkle heavily with powdered sugar. Good for at LEAST 3 days. (Covered.)

- Sift dry ingredients into mixing bowl and nest the flour mixture.
- Add most of buttermilk.
- Cut in the lard.
- Begin squeezing the lard and flour in the milk until thoroughly mixed.
- Add the rest of the buttermilk if needed and mix.
- Turn on to floured board.
- Knead until consistency desired.
- Cut into biscuits.
- Place on a lightly greased baking sheet.
- Bake in a preheated 450°F oven for 12-14 minutes.

- On stove, soften butter and 1 pound of sugar, remove from heat and let cool to warm.
- Add whiskey, then second pound of sugar; nuts, and lemon juice.
- Blend until all are mixed. Roll into balls and let cool overnight to firm up.
- Melt chocolate and paraffin in top of double boiler; blend well. Remove from the heat and cool slightly. Dip candy in chocolate mixture.
- Set one waxed paper to harden.
- Store in an airtight container.

- Beat margarine and cream cheese at medium speed of an electric mixer until creamy; gradually 1 cup sugar, beating well. Add egg, and beat well.
- Combine flour, baking powder, and salt; stir into margarine mixture. Stir in vanilla, then fold in berries.

- Sift the flours together.
- Dissolve cake yeast in the warm water.
- Mix all ingredients well, into a batter.
- Set at room temperature for 1 hour.
- Cover and place into the refrigerator overnight.
- Stir in baking soda to the portion to be used to leaven the sourness of yeast.
- Pour onto greased hot griddle and cook until bubbly, then flip cake over until golden brown on both sides.
- Serve hot with my "Kentucky Whipped Butter" and pure maple syrup.

Steps:
- Preheat oven to 150°C and grease a 20cm square or round cake tin.
- Pick over the sultanas to remove any stem- nothing worse than a crunch in your cake.
- Place sultanas in a saucepan and cover them with cold water. Bring to the boil and then drain off the water. Return sultanas to saucepan.
- Stir in the chopped butter and set aside the sultanas to cool.
- Beat together the eggs, essence and sugar. Then add in the sultanas.
- Add your flour and baking powder to another mixing bowl and aerate with a kitchen whisk (or you can sift them together).
- Stir the flour into the sultana mix.
- Pour into prepared cake tin and bake for 1 1/2 hours.
