4 eggs, beaten
3/4 cup sugar
2 tablespoons flour
4 tablespoons melted butter
1 1/2 cups churned buttermilk
1 teaspoon vanilla extract
3 tablespoons fresh lemon juice

Steps:

  • Beat 4 eggs and 3/4 cup sugar together until light and lemon colored.
  • Add 2 tablespoons flour and beat some more.
  • Mix the butter, vanilla, lemon juice and buttermilk, then add it to the egg mixture.
  • Pour into baked, but not browned, pie shell.
  • Bake at 375 degrees for 20-30 minutes (over baking makes it tough).

3 cups half-and-half
4 eggs, beaten
2 1/2 cups sifted flour
1 tablespoon baking powder
2 teaspoons salt
1 cup unsalted butter, melted

Steps:

  • Beat 3 cups half and half with 4 beaten eggs.
  • Mix together sifted flour, baking powder, and salt (omit salt if using salted butter).
  • Add 2 sticks hot melted unsalted butter slowly while stirring and mix.
  • Pour batter onto hot lightly greased griddle and flip when bubbly on surface.
  • Cook until golden brown on both sides.
  • Serve with my "Kentucky Whipped Butter" and pure maple syrup.

This is my personal recipe for homemade buckwheat cakes, a real treat served with my Kentucky whipped butter and pure maple syrup.

2 cups buckwheat flour
1 cup white flour
1/4 ounce cake yeast
1 quart warm water
1 tablespoon salt
1/3 cup sugar
1/4 teaspoon baking soda
1/2 tablespoon bacon drippings

Steps:

  • Sift the flours together.
  • Dissolve cake yeast in the warm water.
  • Mix all ingredients well, into a batter.
  • Set at room temperature for 1 hour.
  • Cover and place into the refrigerator overnight.
  • Stir in baking soda to the portion to be used to leaven the sourness of yeast.
  • Pour onto greased hot griddle and cook until bubbly, then flip cake over until golden brown on both sides.
  • Serve hot with my "Kentucky Whipped Butter" and pure maple syrup.

1 1/2 cups flour
1 1/2 teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
1 cup buttermilk (scant)
1/3 cup lard

Steps:

  • Sift dry ingredients into mixing bowl and nest the flour mixture.
  • Add most of buttermilk.
  • Cut in the lard.
  • Begin squeezing the lard and flour in the milk until thoroughly mixed.
  • Add the rest of the buttermilk if needed and mix.
  • Turn on to floured board.
  • Knead until consistency desired.
  • Cut into biscuits.
  • Place on a lightly greased baking sheet.
  • Bake in a preheated 450°F oven for 12-14 minutes.
