3 cups whole milk
1 cup + 2 tablespoons of cornstarch
1 cup coconut milk
1/2 cup grated coconut
2 cinnamon sticks
1 can (14 oz condensed milk)
1/2 teaspoon vanilla extract
1/3 cup sugar or to taste
Pinch salt
1 tablespoon butter
Cinnamon powder to taste

Steps:

  • Place 1 cup of milk in a small bowl, add the cornstarch and stir to dissolve it, then set aside.
  • Place the coconut milk and grated coconut in the blender and blend until smooth and set aside.
  • Place the rest of the milk and cinnamon sticks in a medium pot and bring the mixture to boil over medium-low heat. When the milk is a little warm, but not boiling, add the coconut mixture.
  • When the milk starts boiling, add the condensed milk, sugar and salt. Stir well with a wooden spoon. Add the milk and cornstarch mixture and continue stirring constantly.
  • Add the vanilla extract. Reduce the heat to low and continue stirring until the Natilla thickens, about 10 to 20 minutes. Add the butter, stir and remove from the heat. Discard the cinnamon sticks. Ladle into a serving dish or individual custard cups. Sprinkle cinnamon powder on top and let it cool at room temperature for at least 2 hours. Refrigerate until ready to serve.

Coconut Rice: Arroz con Coco image

This savory coconut rice (arroz con coco) has the delicious caramel flavor of toasted coconut and sweet raisins.

1 (13.5-ounce) can coconut milk
2 cups rice
1/4 cup raisins
3 cups water
1 teaspoon salt
1 to 2 tablespoons sugar

Steps:

  • Place the coconut milk in a heavy saucepan over medium heat and bring to a boil.
  • Simmer the coconut milk, uncovered, until the liquid has evaporated and the coconut solids start to separate from the oil. Continue to cook, stirring constantly, until the coconut solids have turned a dark golden brown color.
  • Stir the rice and the raisins into the pot with the coconut milk. Add the water, the salt, and the sugar, and mix well.
  • Bring the water to a boil, then lower the heat and simmer the rice, covered, for about 15 to 20 minutes. Turn off the heat and let the rice remain on the stove for another 5 to 10 minutes, covered.
  • Fluff the rice and serve.

This is a very good rice pudding recipe that I got from a box of Carolina White Rice. I usually add the flake coconut as my optional ingredient, but it is also terrific with diced mango. It does not work well with skim milk or 1% milk, but is ok with anything 2% or more.

1 cup carolina white rice (or any other brand of long grain white rice)
1 (1 3/4 ounce) package instant pudding mix, I use Vanilla or 1 (1 3/4 ounce) package coconut cream
2 cups half-and-half (or whole milk)
1/2 cup flaked coconut, chopped pistachios, raisins, macadamia nuts, chocolate chips, fun chips (optional) or 1/2 cup diced fresh fruit (optional)
whipped cream, chocolate curls, maraschino cherries for garnish

Steps:

  • Prepare rice according to package directions. Set aside to cool.
  • In mixing bowl, combine pudding mix, and Half and Half.
  • Mix for 2 minutes.
  • Fold in rice and desired choice of add ins.
  • Spoon into 6 dessert cups.
  • Chill.
  • Garnish as desired.
  • Enjoy.

  • In a wide saucepan, heat the coconut milk until simmering. Reduce the heat to medium low and simmer, stirring often, until the coconut milk has reduced to the point where it becomes a thick paste and the solid coconut pieces begin to turn a deep golden brown, 50-60 minutes. (As it reduces, you will hit a point, once it is nearly reduced completely, where the coconut oil will come out of the milk and the mixture will start to separate into clear liquid (fat) and white parts (coconut solids). If, once your coconut milk has nearly completely reduced, you don’t see this separation; your coconut milk has too many stabilizers in it to let the fat separate out. Add 2 Tbsp vegetable oil-- or better yet, coconut oil-- to the reduced coconut milk and continue cooking until the coconut solids turn golden brown.)
  • Once you have a golden brown coconut paste, add the rice, sugar, and salt. Turn the heat to medium high and continue to cook until the rice grains begin to turn golden brown, 3-4 minutes.
  • Remove the pan from the heat and add the water carefully. (Oil has a boiling point MUCH higher than water. So when you add the water it will sputter and steam. BE CAREFUL!) Stir to combine.
  • Return the pan to the heat and bring the mixture to a simmer. Then, reduce the heat to low, cover and cook the rice for 15 minutes.
