This will remind you of a Christmas pudding but can be used any time of year. The Brown Sugar Sauce is great over pudding or over cake for dessert.

1 cup dry breadcrumbs
1/4 cup butter or 1/4 cup firm margarine, melted
1/3 cup raisins
1/3 cup currants
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
1/16 teaspoon ground cloves
2 large eggs
1/4 cup brown sugar, packed
1 tablespoon all-purpose flour
1/8 teaspoon salt
1/2 cup water
1/4 teaspoon vanilla
1 teaspoon butter (optional) or 1 teaspoon firm margarine (optional)

Steps:

  • Measure first 9 ingredients into bowl. Stir.
  • Beat eggs in separate bowl until light and volume is increased. Stir into crumb mixture. Turn into greased 3 cup mold. Bake in 350°F oven for 25 to 30 minutes until an inserted wooden pick comes out clean. Serve plain or with brown Sugar Sauce. Makes 4 smaller servings (or 2 large).
  • FOR THE SAUCE: combine sugar, flour and salt in saucepan. Mix well.
  • Stir in water and vanilla. Add butter. Heat and stir until mixture boils and thickens. Makes a generous 1/2 cup.
  • VARIATIONS FOR THE SAUCE: Rum sauce: Add 1/4 teaspoons rum flavoring.
  • Chocolate Sauce: Add 1 1/4 teaspoons cocoa to sugar mixture.

2 tablespoons sugar
1 1/2 teaspoons cornstarch
1 pinch salt
1 cup milk
1 egg yolk
1 1/2 teaspoons butter or 1 1/2 teaspoons margarine
1/2 teaspoon vanilla extract

Steps:

  • Combine sugar, cornstarch, and salt in a small saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture comes to a boil. Cook 1 additional minute, stirring constantly. Remove from heat.
  • Beat egg yolk until thick and lemon colored. Gradually stir about 1/4 of hot mixture into yolk; add to remaining hot mixture, stirring constantly. Bring mixture to a boil over medium heat and cook 1 minute, stirring constantly. Remove from heat; stir in butter and vanilla. Pour mixture into two 6-ounce custard cups. Chill. Yield: 2 servings.
