Asian Slaw - crunchy Oriental Cabbage Salad with Asian Dressing image

Recipe video above. A light, healthy, CRUNCHY Asian salad that is a great side for all types of Asian foods. Dressing is a great salty / sour / spicy lime dressing reminiscent of Thai and Vietnamese food. Add CHICKEN if making this as a meal. Serves 8 - 10 as a side, 4 as a meal with chicken.

3 cups green cabbage or Chinese cabbage (, shredded)
3 cups red cabbage (, shredded)
2 large carrots (, julienned)
3 cups bean sprouts
3 green onions (, finely sliced on the diagonal )
1/2 cup coriander / cilantro leaves
1/2 cup mint leaves
1/4 cup Asian Fried Shallots ((optional), to garnish (Note 1))
3 tbsp rice vinegar ((Note 2))
3 tbsp soy sauce ((Note 3))
2 tsp fish sauce (, or more soy (Note 4))
2 tbsp lime juice (, or more rice vinegar (Note 5))
3 tbsp peanut oil ((Note 6))
1 1/2 tbsp sugar (, any type)
1/2 tsp birds eye or other red chilli (, finely minced (optional))
2 garlic cloves (, minced)
3 cups shredded cooked chicken

Steps:

  • Combine the dressing ingredients in a jar and shake well.
  • Combine the salad ingredients, except the Asian Fried Shallots.
  • Pour over dressing and toss to combine.
  • Garnish with Asian Fried Shallots. Serve!

Steps:

  • Whisk mayonnaise, onion, vinegar, sugar, and seafood seasoning in a salad bowl until sugar has dissolved. Stir cabbage, carrots, and green bell pepper into dressing until coated.

3/4 cup white vinegar

1 tablespoon salt
1 teaspoon celery seed
1 medium head cabbage, shredded (about 10 cups)
1 large onion, chopped
1 medium green pepper, chopped

Steps:

  • In a small saucepan, combine first five ingredients. Bring to a boil; cook and stir until sugar is dissolved, 1-2 minutes. Remove from heat; cool completely. , In a large bowl, toss vegetables with dressing. Refrigerate, covered, until cold. Serve with a slotted spoon.

1 medium fennel bulb, chopped (save a few fronds for garnish)
1/2 cup fresh flat leaf parsley, chopped (Italian parsley)
3 tablespoons capers, drained
3 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
salt, to taste
pepper, to taste

Steps:

  • Combine the red cabbage, fennel, Italian parsley and capers in a large salad bowl and toss to blend.
  • Mix in lemon juice, oil, and garlic. Season to taste with salt and pepper.
  • Best prepared several hours in advance to allow ingredients to marinate.

I serve pulled pork with baked beans and some of this lovely, creamy coleslaw, then sit back and collect the compliments! Again, this makes a LOT, so adjust accordingly. This recipe is easily increased or decreased. Use a 16-ounce package of coleslaw mix for every six guests.

3 (16 ounce) packages coleslaw mixed vegetables
2 large carrots, grated
2 bell peppers, cut into short, thin slivers (I use 1 each red and yellow)
1 medium red onion, halved and sliced thin
1 1/2 teaspoons celery seeds
1 3/4 cups mayonnaise
6 tablespoons rice wine vinegar
salt and black pepper, to taste

Steps:

  • In a large bowl, toss together all vegetables and celery seed.
  • In a small bowl, combine the mayonnaise, vinegar, salt and pepper.
  • Toss together the vegetables and dressing until thoroughly combined. Taste and correct seasoning.
  • Refrigerate 30 minutes to let flavors blend. Serve.
