4 cups shredded cabbage
1 large apple, chopped
3/4 cup raisins
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a serving bowl, combine the cabbage, apple, raisins, celery and onion. In a small bowl, combine the remaining ingredients. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 30 minutes.

1 small Vidalia onion, thinly sliced
½ teaspoon salt
Dash of ground nutmeg
2 tablespoons cider vinegar
1 teaspoon sugar

Steps:

  • Melt butter in a large skillet. Add apples, cabbage, onion, salt, nutmeg, vinegar, and sugar; sauté over medium-high heat until tender (about 12-15 minutes). Season with salt and pepper, to taste.

This is my favourite coleslaw. The dressing is much lighter than the usual coleslaw dressing. It comes from Anne Lindsay's "Smart Cooking".

2 cups finely shredded cabbage
1 medium carrot, grated
1/2 sweet green pepper, chopped
1 apple, chopped
2 green onions, chopped
salt and pepper
1/4 cup plain yogurt
2 tablespoons light mayonnaise
1 teaspoon fresh lemon juice
1/4 teaspoon dried dill (or 2 tbsp fresh dill, chopped, I often omit this if there are people who don't like dill)

Steps:

  • In serving bowl, combine cabbage, carrot, green pepper, apple and onions.
  • Yogurt Dressing:.
  • Combine yogurt, mayonnaise, lemon juice and dillweed, mixing well.
  • Pour over salad and toss to mix.
  • Season with salt and pepper to taste.
  • Make Ahead: Salad can be covered and refrigerated for up to one day.

1 cup shredded red cabbage
1 carrot (thinly slivered )
1/3 cup canola oil
1/4 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon caraway seeds
1 teaspoon celery seed
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, combine the coleslaw mix with the red onion, shredded red cabbage, and carrot. In a small bowl, whisk the canola oil, apple cider vinegar, sugar, caraway seeds, celery seed, kosher salt and freshly ground black pepper. Pour over the cabbage mixture and toss. Cover and refrigerate for 1 hour for flavors to blend.

This spicy braised red cabbage dish is traditionally served on high days and holidays such as Thanksgiving and Christmas. However, it's so easy to make and tastes so delicious that I think it should be served as often as possible. I've got lots of tips and hints for making the perfect braised red cabbage, and also a couple of secret ingredients that make this dish the perfect vegetable to serve any day of the week.

1 pound (500 grams) red cabbage (Core and outer leaves removed and finely sliced )
1 large Granny Smith apple (Peeled and roughly chopped)
1 large red or white onion (Peeled and finely sliced)
2 tablespoons brown sugar
1 teaspoon Chinese 5-spice powder
3 tablespoons balsamic vinegar
1 vegetable stock cube (Dissolved in one cup of boiling water)
½ teaspoon salt

Steps:

  • Place the chopped cabbage and onions into a large saucepan.
  • Dissolve the stock cube in one cup of boiling water and add the brown sugar, balsamic vinegar, 5-spice powder and salt. Stir to dissolve the sugar and then add it to the cabbage and onions in the saucepan.
  • Cover the pan with a lid and bring to the boil. As soon as it starts to boil, turn down the heat to a simmer and leave for about 30 minutes until the cabbage has softened and most of the liquid has been absorbed.
  • Add the chopped apple to the cabbage in the saucepan.
  • Replace the lid and simmer for about 10 minutes until the apple has disintegrated into the cabbage.
  • Taste for seasoning and add more salt if you think it needs it.
