PERFECT CREAMY COLESLAW
This creamy coleslaw recipe provides the perfect balance of flavors and is just what you need for your barbecue, picnic or potluck!

Steps:
- Place the shredded cabbage and carrots in a large bowl and sprinkle a teaspoon of salt over them. Toss to combine. Let this sit for at least an hour to draw out excess water. Rinse and thoroughly drain (either use a salad spinner to spin dry it or lay it out on paper towels and blot dry.) Return the cabbage to the bowl.
- Combine the dressing ingredients in a small bowl. Pour it over the cabbage mixture and stir until combined. Cover and refrigerate for at least 2 hours before serving.

Creamy Dill Coleslaw with white and red cabbage, carrots, a good splash of cider vinegar and freshly chopped dill, a delicious and super easy side dish that goes well with any roast. A classic side for the BBQ season, this dill coleslaw is best served cold from the fridge. My homemade coleslaw is easy to customize, for a no mayo version just replace the mayonnaise with yogurt.

- Cut the cabbages in half, then quarters, and use a big sharp knife to shred them, or use a vegetable shredder.
- Use the vegetable peeler to peel thin strips of carrot, or shred it together with the cabbages.
- Add everything to a large bowl, then add the mayo, salt, pepper, dill and vinegar, and mix to combine.
- Serve cold from the fridge.

Steps:
- Mix first 5 ingredients until smooth.
- (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
- I use the Zender's seasoning.
- Store in refrigerator.
- Chill before using.
- Shred cabbage.
- Add carrots, onions, red cabbage and green peppers.
- Add dressing until it coats the cabbage but doesn't make it soggy.
- Recipe may be halved as it makes a large quantity, otherwise.

- Cut the cabbage in half, and then into quarters. Slice away the white core. Cut the quarters into 1/8 inch slices, a mandoline slicer works well for this, Put the cabbage in your largest mixing bowl.
- Slice the onion into 1/8 inch slices, and cut the rounds in half. Separate the strands as you add them to the bowl. Add the chopped dill and pickles and toss well.
