2 1/2 cups green cabbage
2 1/2 cups red cabbage
2 1/2 tablespoons balsamic vinegar
6 1/2 tablespoons cider vinegar
2 1/2 tablespoons Dijon mustard
2 teaspoons sugar
1 teaspoon celery seed
1 teaspoon caraway seed
1/4 teaspoon pepper

Steps:

  • shred the cabbage into a large bowl.
  • in separate bowl, prepare the dressing by mixing the vinegars, dijon mustard, sugar, celery seed, caraway seed, and pepper. mix well.
  • pour over cabbage and mix well. serve chilled.

1 (16 ounce) bag shredded coleslaw mix (cabbage and carrot)
1 apple, cored and diced with peeling on (tart variety such as honey crisp, granny smith)
1/3 cup rice vinegar or 1/2 cup cider vinegar
1/3 cup canola oil or 1/2 cup light olive oil
2 tablespoons sugar
1 tablespoon Dijon mustard
1 tablespoon light mayonnaise
salt
1 teaspoon pepper sauce (Tabasco)
1/4 teaspoon celery salt
1/4 teaspoon paprika

Steps:

  • Combine shredded cabbage and diced apples in bowl.
  • Separately mix the rest of the ingredients in a cup and adjust spice or salt to taste.
  • Pour liquids over cabbage and stir.
  • Cover with lid and store in fridge for 1-4 hours prior to serving, stirring occasionally (or just flip the bowl upside down to mix).

100 g shredded carrots
2 teaspoons salt
4 tablespoons mayonnaise
2 tablespoons Dijon mustard
1/2 teaspoon sugar
2 tablespoons vinegar (optional, depending on the brand of mayo you use)
pepper, dash
salt, as needed

Steps:

  • Mix the cabbage, carrots and salt well. Let sit for an hour and squeeze away the resulting salt water.
  • Stir in the mayo, Dijon mustard, sugar, vinegar, pepper, and salt to taste.

1 ½ tablespoons lemon juice
1 tablespoon prepared horseradish
½ teaspoon onion powder
½ teaspoon dry mustard

½ teaspoon salt
½ teaspoon ground black pepper
1 (28 ounce) package coleslaw mix

Steps:

  • Whisk mayonnaise, sugar, rice wine vinegar, lemon juice, horseradish, onion powder, dry mustard, celery salt, salt, and black pepper in a large mixing bowl, stirring to dissolve sugar. Fold coleslaw mix into dressing. Cover bowl and refrigerate 1 hour before serving.

1/3 large green cabbage (shredded or chopped fine)
1 medium carrot (shredded or small matchstick cuts)
6 radishes (shredded or small matchstick cuts. If your radishes are large, reduce the number of radishes)
1/3 green bell pepper, small diced
1 1/2 green onions, thinly sliced
1 tablespoon ketchup
1/4 cup sugar
1/3 cup cider vinegar
1/4 cup vegetable oil
1 teaspoon salt
1/3 teaspoon ground mustard
1/3 teaspoon celery seed

Steps:

  • Combine the cabbage, carrots, radishes, green bell pepper, and green onions in a large bowl.
  • Combine the ketchup, sugar, vinegar, oil, salt, mustard and celery seed in a small saucepan. Bring to a boil, stirring constantly so sugar dissolves and all ingredients mix well.
  • Pour over the cabbage mixture and stir to coat.
  • Cover and chill in the refrigerator. It is best to wait at least 2 hours before eating so the flavors develop. More chilling time makes it even better.
