COLE SLAW, VEGAN
I had a mayo-free cole slaw at a restaurant in St. Petersburg. This is my attempt to create something like it. Use either green or purple cabbage, but be forewarned that the cucumber will turn pink if you do the latter. Tastes good anyway! Cooking time is marinating time. Kalonji seeds can be found in Indian spice sources, and may also be sold as nigella seeds.

Steps:
- Slice the cabbage as finely as you have patience for, and do the same with the cucumber.
- Place all the above in a large bowl, add water to just cover. Keep in fridge, and mix occasionally.
- After 3 or 4 hours, drain off most the liquid through a fine mesh colander (to keep most of the seeds). Serve.

VEGAN COLESLAW
A simple vegan coleslaw without any mayo. I add caraway seeds to my coleslaw as it helps with digestion. It tastes best after it has marinated for a few hours.

Steps:
- Combine cabbage and carrots in a large bowl, season with salt, and allow to sit for 30 to 45 minutes.
- Squeeze out as much liquid as possible from cabbage and carrots with your hands; drain well.
- Stir together oil, vinegar, confectioners' sugar, caraway seeds, and pepper and pour over the salad. Mix well. Allow to sit to intensify the flavor, about 4 hours.

- In a medium serving bowl, combine the prepared purple and green cabbage, carrots and parsley. Set aside.
- Measure out your seeds into a small skillet. Toast over medium heat, stirring frequently, until the seeds are fragrant and the pepitas are starting to make little popping noises. Pour the toasted seeds into the mixing bowl and toss to combine.
- To make the dressing, in a small bowl, combine the olive oil with 2 tablespoons lemon juice. Add the garlic, cumin and salt and whisk until thoroughly blended.
- Drizzle the dressing over the slaw and toss until all of the ingredients are lightly coated in dressing. Taste and add an additional tablespoon of lemon juice if the slaw needs a little more zip. Serve immediately or cover and refrigerate to marinate for up to several hours.
