4 tablespoons canola oil
2 cups chopped cauliflower florets
¾ cup chopped onion
¾ teaspoon salt, divided
4 cups frozen corn
1 clove garlic, minced
3 cups Swanson® Chicken Broth

Steps:

  • Heat oil in a large saucepan over medium heat; add cauliflower, onions, and 1/4 teaspoon salt. Reduce heat to medium-low; cover. Cook until onions are softened, stirring occasionally, about 8 minutes. Add corn and garlic; cover. Cook 4 minutes; add Swanson® Chicken Broth and remaining 1/2 teaspoon salt. Increase heat to medium-high; bring to a boil. Remove from heat.
  • Place half of corn mixture in a blender. Cover and hold lid down; pulse a few times before leaving on to blend. Blend until smooth. Repeat procedure with remaining corn mixture. Chill at least 4 hours.
  • Serve chilled soup with your choice of garnishes.

Cold Cauliflower Soup with Bacon and Croutons image

Number Of Ingredients 14

1/2 loaf sourdough bread (about 8 ounces), cut into 1/2-inch cubes
1/4 cup extra-virgin olive oil
1 tablespoon chopped fresh thyme
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper, optional
10 to 12 strips thick-cut applewood-smoked bacon (about 1 pound)
3 tablespoons unsalted butter, at room temperature
2 ribs celery, chopped to yield 3/4 cup
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper
2 cloves garlic, coarsely chopped
4 cups low-sodium chicken broth
1 tablespoon chopped fresh thyme
1 head cauliflower (1 1/2 pounds), cut into 1-inch pieces

Steps:

  • For the croutons: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Arrange the bread cubes in a single layer on a rimmed baking sheet. Drizzle with the olive oil. Sprinkle the thyme on top and season with the salt and pepper if using. Toss until coated. Bake until golden and crisp, 10 to 12 minutes. Set aside to cool.
  • For the bacon: On another baking sheet, arrange the bacon in a single layer. Bake until browned and crisp, 15 to 17 minutes. Drain on paper towels. When cool enough to handle, chop into 1/2-inch pieces and set aside.
  • For the soup: In a large saucepan or Dutch oven, melt the butter over medium-high heat. Add the celery, shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until soft, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Stir in the chicken broth, thyme and cauliflower. Bring the mixture to a boil. Reduce the heat to a simmer, cover and cook until the vegetables are tender, 20 to 25 minutes.
  • In batches, puree the soup in a food processor until smooth. Season with salt and pepper. Cool the soup to room temperature, then refrigerate until ready to serve, at least 2 hours.
  • Ladle the chilled soup into bowls and garnish with the croutons and bacon.
  • Cook's Note: The soup can also be blended using an immersion blender.

2 slices turkey bacon, chopped
½ cup chopped onion
½ cup sliced celery
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 medium russet potato, peeled and chopped
4 cups coarsely chopped cauliflower florets
¾ teaspoon salt
1 cup low-fat milk
1 (10 ounce) can whole baby clams, drained
1 teaspoon lemon zest
ground black pepper to taste
2 tablespoons fresh celery leaves

Steps:

  • Heat oil in a large saucepan over medium heat. Add turkey bacon and cook until crisp, 4 to 6 minutes. Transfer bacon to a paper towel-lined plate to drain, reserving drippings in the saucepan.
  • Add onion and celery to the saucepan; cook over medium heat until onion is translucent, about 4 minutes. Add garlic; cook, stirring, 30 seconds more. Add chicken broth and potato; bring to a boil.
  • Reduce heat, cover, and simmer for 5 to 7 minutes. Add cauliflower and salt; simmer, stirring occasionally, until vegetables are just tender, about 5 minutes.
  • Working in 2 batches, transfer cooked vegetable mixture to a blender. Add milk and blend until very smooth, about 2 minutes.
  • Stir mixture back into the saucepan. Bring to a gentle simmer to heat through, about 2 minutes. Remove from heat. Stir in clams and lemon zest.
  • Sprinkle servings with pepper, bacon, and celery leaves.

1 medium head cauliflower, broken into florets
1 medium carrot, shredded
1/4 cup chopped celery
2-1/2 cups water
2 teaspoons chicken bouillon or 1 vegetable bouillon cube
3 tablespoons butter
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup shredded cheddar cheese
1/2 to 1 teaspoon hot pepper sauce, optional

Steps:

  • In a Dutch oven, combine the cauliflower, carrot, celery, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender (do not drain)., In a large saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cheese until melted, adding hot pepper sauce if desired. Stir into the cauliflower mixture.

24 tiny littleneck clams, scrubbed well
1 cup white wine
1 clove garlic, peeled and smashed
4 teaspoons sweet butter
1 cup coarsely chopped white onions
1/4 cup uncooked white rice
3 to 5 cups milk
1 head cauliflower
Kosher salt and freshly ground black pepper to taste
1 tablespoon minced parsley, for garnish
4 large cloves garlic, peeled
1 egg yolk
1/2 teaspoon kosher salt
1/8 teaspoon white pepper
1/8 teaspoon fresh lemon juice
1/2 cup vegetable oil
1/2 cup extra virgin olive oil

Steps:

  • To make the soup, place the clams, white wine, garlic and 1 teaspoon of butter in a large pot over high heat. Cover and steam for 5 to 7 minutes, until the clams are open but still very tender. Strain the mixture. Reserve the clam broth, which should equal about 1 1/2 cups. Pick the meat from the clams, set aside and discard the shells and garlic.
  • In a large pot over medium heat, saute the onions in the remaining butter until soft, about 3 minutes. Add the rice, 2 cups of the milk and the reserved clam broth and simmer for 15 minutes.
  • Meanwhile, using a sharp knife, remove 2 cups of the smallest florets from the cauliflower and set aside. Remove the coarse stems from the cauliflower and discard. Chop the remaining cauliflower and add to the rice mixture, along with another cup of milk, after the rice has cooked for 15 minutes. Cover and cook until the cauliflower is tender, about 8 minutes.
  • Puree the rice and cauliflower mixture in a food processor and return to a saucepan. Add the remaining milk and stir until a velvety, souplike consistency has been achieved. Season to taste with salt and pepper. Add the small cauliflower florets, stir, cover and simmer until soft, about 10 minutes. Stir to avoid sticking and add more milk if necessary to keep the consistency of the soup constant.
  • Meanwhile, to make the aioli sauce, place the garlic cloves, egg yolk, salt, pepper and lemon juice in a blender and pulverize completely. Combine the oils and, while the blender is on, slowly drizzle the oil into the yolk mixture. Blend until the mixture has the texture of mayonnaise. Transfer to a small bowl and season with salt and pepper to taste.
  • Ladle the soup into 6 bowls. Place a dollop of aioli in the center of each, arrange 6 cooked clams in a circle around the aioli, garnish with parsley and serve immediately.
