This is a great way to dress up hashbrowns! Substitute Colby cheese for a change from the usual Cheddar.

- Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch pan with non-stick cooking spray.
- In a large bowl, combine the potatoes, butter, salt, pepper, onions, soup and cheese. Gently mix and pour into prepared pan or dish.
- Bake in the preheated oven until browned, about 60 minutes.

- Preheat oven to 425 degrees F (220 degrees C). Coat a large baking dish with 1 tablespoon of butter.
- In a large bowl, mix together the hash browns, Colby cheese and onion. Transfer to the baking dish.
- In a medium bowl, mix together the remaining butter, milk, beef broth, pepper, salt and garlic powder. Pour over the hash brown mixture.
- Microwave the casserole in 5 minute increments, stirring before restarting, until the cheese has melted.

- Preheat oven to 350°F. Spray 9 x 13-inch casserole dish with non-stick spray. Set aside. (See Tip 6)
- Melt 1/4 cup of butter in a skillet over medium heat. Add minced onions and cook until onions are tender, about 5 minutes. Cool for 10 minutes.
- Combine sour cream, soup, bacon, garlic powder, salt, pepper and cheese in a large bowl. Add frozen hash browns; stir to combine. (See Tip 7)
- Transfer to prepared casserole dish. Top with Panko bread crumbs and dot with butter. May be made in advance up to this point
- Bake in preheated 350°F oven for 45 minutes or until bubbly and golden brown on the top.
