This is so good on a chilly day. My husband (Cork) really likes this soup.

Number Of Ingredients 8

6 large potatoes..peeled & cubed
1 tsp salt
1 large onion..chopped
1/4 c butter or margarine
2 can(s) (14 3/4oz each) cream style corn
4 bacon strips..cooked & crumbled
3 c milk
8 oz colby cheese..cubed

Steps:

  • 1. Place potatoes in a large kettle;sprinkle with salt & cover with water.Bring to a boil.Reduce heat;cover & simmer until potatoes are done.
  • 2. Meanwhile ,in a skillet,saute onion in butter until tender. Stir in corn,bacon;heat through. Drain potatoes,add milk heat through. Stir in corn mixture & cheese,heat through. Serve immediately.

Number Of Ingredients 12

6 bacon strips, chopped
3/4 cup chopped sweet onion
2-1/2 cups water
2-1/2 cups cubed peeled potatoes
2 cups sliced fresh carrots
2 teaspoons chicken bouillon granules
3 cans (11 ounces each) gold and white corn, drained
1/2 teaspoon pepper
7 tablespoons all-purpose flour
5 cups 2% milk
3 cups shredded cheddar cheese
1 cup cubed Velveeta

Steps:

  • In a Dutch oven, cook bacon and onion over medium heat until onion is tender. Add the water, potatoes, carrots and bouillon; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender., Stir in corn and pepper. In a large bowl, whisk flour and milk until smooth; add to soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses; cook and stir until melted.

Large bag of frozen hash brown potatoes
1 teaspoon salt
1 large onion, chopped
1/4 cup butter, cubed
2 cans (14-3/4 ounces each) cream-style corn
4 bacon strips, cooked and crumbled
3 cups milk
8 ounces Colby cheese, cubed

Steps:

  • In a large skillet, saute onion in butter until tender. Stir in corn and bacon; heat through. Put potatoes in stock pot or large saucepan. Add milk; heat through. Stir in corn mixture and cheese.

Chowder is a classic comfort food here in the Northeast, especially during cooler weather. Whenever I make a trip home to Pittsburgh, Mom has this simmering on the stove for me.

1 large onion, chopped
1/2 cup butter
2-1/2 cups water
2 cans (14-3/4 ounces each) cream-style corn
4 medium potatoes, peeled and cut into 1/2-inch cubes
2 cups milk
1-1/2 teaspoons salt
3/4 teaspoon pepper
Minced fresh parsley

Steps:

  • In a Dutch oven, saute onion in butter until tender. Add the water, corn and potatoes; bring to a boil. Reduce heat; cover and simmer for 16-20 minutes or until potatoes are tender. Reduce heat to low. Stir in the milk, salt and pepper. Cook for 5-10 minutes or until heated through, stirring occasionally. Sprinkle with parsley.
