FRIED COLBY CHEESE ROLLED IN COCONUT

Steps:
- To make tempura batter, mix the flour, cornstarch, and baking powder in a large bowl and add seltzer in a stream while whisking constantly. Season with salt and pepper.
- Heat canola oil to 375 degrees F in a deep fryer. Spread coconut on a utility platter. Place slices of cheese on a slotted spoon and ladle tempura batter over. Deep-fry in the basket of a deep-fryer until golden brown, briefly drain then transfer to the plate of coconut so that the coconut will stick to the surface while the batter is freshly fried and still hot.
- Serve with small skewers or cocktail toothpicks.
COLBY CHEEZE (VEGAN)
Tangy but mild, orange colored cheez that slices well for sandwiches and snacks. It also makes fantastic grilled cheez sandwiches! - Lightly oil a 3 cup plastic storage container and set aside.
- Mix the water(or soymilk) and agar in a small saucepan and bring to a boil. Reduce the heat and simmer, stirring often, until dissolved, about 5-10 minutes.
- Move to a food processor(or blender) and add the remaining ingredients.
- Process a few minutes until completely smooth, scraping down the sides of food processor as necessary.
- Pour into the oiled container and cool uncovered in the refrigerator.
- When compleetly cool, cover and chill several hours or overnight.
- To serve, turn out of the container and slice.
- Store leftovers covered in the fridge. Keeps 5-7 days. Enjoy!
- Variations: In place of red peppers, use 1/2 cup cooked chopped carrots, 2-3 teaspoons paprika, or 2 tbls. unsalted tomato paste.
- Chedda Cheez: Add 2 tbls. light or chickpea miso before blending.
- Olive cheez: Replace dry mustard with 1 tbls. Dijon mustard. After blending, stir in 3/4 cup chopped black olives(or kalamata) or sliced pimiento-stuffed green olives.

- Preheat the oven to 425°F. Melt the butter in a large, heavy-bottomed, oven-safe braiser over medium-high heat. Add the onions and sauté until they begin to soften and become translucent.
- You’ll want to start boiling the noodles while you’re making the sauce. Do this according to package directions but remove them a few minutes before they become al dente, and reserve about a cup of the pasta water.
- Stir in the garlic and cook until fragrant, then sprinkle the flour over everything. Stir together. It will form a very thick paste: stir that around as best you can for about 4 minutes. We’re cooking the flour taste away, so don’t skip this step.
- Reduce the heat to medium-low. Whisk in the oat milk about one cup at a time. Make sure it’s completely incorporated – the only lumps should be garlic and onion – before adding more.

- Give oat milk to a casserole, and heat up slowly. Add vegan cream cheese and vegan Colby, but reserve 1 cup for the garnish. It is really important to use a low temperature: be patient until everything is melted into a creamy and silky mixture.
- Now add garlic, onion powder, smoked paprika. Stay on low heat, so everything get really smooth and creamy.
- Finally mix in macaroni until everything is combined, top with vegan Colby Jack and bake for 20 minutes at 380°F.
- After baking please allow to cool down for around 5 minutes. I find this really makes the texture so everything will taste even more delicious.
