Steps:
- Preheat the grill to medium heat. Set out a large bowl. Add the ground beef, diced bacon, grated jalapeños, and Burger Grill Seasoning. Mix by hand until well combined.
- Divide the meat mixture into 8 equal portions. Press each portion into a patty slightly wider than the buns.
- Place the patties on the grill. Cook for 5-6 minutes per side. The insides can be slightly pink in the middle, but not medium-rare because of the bacon. The moment the burgers come off the grill, place a slice of cheese over the top of each patty, so they start to melt.
- Stack the burgers on the buns with lettuce, tomato slices, pickles, barbecue sauce, and fried onions on top. Serve warm.

BACON-COLBY LASAGNA
With both bacon and ground beef, this hearty dish is a real crowd-pleaser. The recipe came from my grandmother, now in her 80s. I've learned so much from helping her in the kitchen. -Cathy McCartney, Davenport, Iowa

- The first step to this amazing burger is getting the bacon-wrapped onion rings done properly. Have our Colby cheese cut into long thinner strips 1/8” thickness.
- Cut your onion in half and then make onion rings that are 1/4” thick. Take the largest onion ring and place it down and then fit another one that is a bit smaller, you want a slight gap in between, this is where you will stuff the thin strips of Colby cheese.
- Now you wrap the bacon tightly around the onion ring until it's all covered. Typically this will be about 2 full strips of bacon.
- Now set your smoker to 350-375, using hickory wood, and place the onion rings on the smoker and smoke for about 45 mins. You are looking for the bacon to be nice and crispy.
