Whenever I can get salmon for a good price, I always turn to this simple and delicious recipe. It's good served with mashed potatoes and fresh green beans, too. -Edie DeSpain, Logan, Utah

- Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon., Bake 12-15 minutes or until topping is lightly browned and fish just begins to flake easily with a fork.

This is a great "carb concious" main course. The Diet Coke makes the Salmon so tender and moist -it practically melts in your mouth and leaves you craving more!

Steps:
- Preheat oven to 375.
- Place butter in 9x9" glass pan and place in oven to melt as oven preheats.
- Once butter is melted, place salmon steaks in dish.
- Sprinkle seasoning evenly over steaks.
- Pour Diet Coke over steaks and bake approximately 40 minutes or until salmon is cooked all the way through.
- Fabulous served with carmelized onions!

COCA COLA GLAZED SALMON WITH SAUTEED VEGGIES

- 1. Combine the coke, balsamic vinegar, and half the sea salt in small saucepan. Bring to a boil and reduce to about 1/2 a cup.
- 2. Add 1 tbsp. oil to one skillet and add the peppers, mushrooms, shallots, and garlic. Saute until softened. Season with salt and pepper. Set aside and keep warm.
- 3. Add 1 tbsp oil to another skillet and add the salmon and season with remaining sea salt. Saute 5 to 7 minutes each side. Pour coke mixture over and cook until glazed flipping once. Garnish with parsley and serve with sauteed veggies

- Preheat oven to 350 degrees F (170C).
- Spread the breadcrumbs and pine nuts in a baking dish and bake for 10 minutes. (Chopped almonds may be used in place of the pine nuts.).
- Wash the salmon fillets.
- Pat dry, and brush with the Dijon mustard.
- Sprinkle the bread crumb mixture over the salmon steaks, pressing to adhere to the fish.
- Heat the oil, butter and shallot in oven-proof skillet over medium-high heat.
- Add salmon, crumb-side down and cook until golden brown, 3 to 5 minutes.
- Turn fish over.
- Transfer skillet to oven.
- Bake 8 to 10 minutes more, until cooked.
- For the sauce: Reduce the lemon juice in a saucepan to 1 teaspoon.
- Add the heavy cream and boil until slightly thickened.
- Whisk in the butter until smooth. Add the fresh dill.
- Season to taste with salt and pepper.
COLA NUT SALMON RECIPE

- Preheat grill to medium heat using mesquite chips. Rinse salmon and pat dry. Brush with oil. If using skin-on fillets, cut 1" diagonal slits into the skin; set aside. Toast pecans in a skillet over medium heat for 5 minutes, or until browned. Remove pecans; set aside. Pour cola into same skillet over medium-high heat. Bring to a boil; reduce heat and simmer until cola is reduced by half and has the consistency of syrup. Stir in the Tabasco sauce, butter and pecans. Keep warm over low heat. Grill salmon fillets, starting with the side without skin, for about 4 minutes. Carefully turn salmon over and grill for about 3 minutes, or until fish is opaque and firm to the touch; remove from grill. To serve, spoon sauce over salmon.
