CHERRY COKE SALAD



Cherry Coke Salad image

This sparkling salad was as popular at my sister's party as the cherry-flavored cola was back in the 1950s.-Judy Nix, Toccoa, Georgia

Number Of Ingredients 5

1 can (20 ounces) crushed pineapple
1/2 cup water
2 packages (3 ounces each) cherry gelatin
1 can (21 ounces) cherry pie filling
3/4 cup cola

Steps:

  • Drain pineapple, reserving juice; set fruit aside. In a saucepan or microwave, bring pineapple juice and water to a boil. Add gelatin; stir until dissolved. Stir in pie filling and cola. , Pour into a serving bowl. Refrigerate until slightly thickened. Fold in reserved pineapple. Refrigerate until firm.

This is one of the many recipes from my Grandmother's cookbook. She passed away in May of 2005. I am recording her wonderful recipes for my family and the many generations that will follow. I hope you enjoy her recipes as much as we do. I have not made each one yet so cooking time and servings may not be posted on some. Blessings from FOURMRANCHWIFE in Texas.

20 ounces pineapple chunks in juice, juice reserved
20 ounces bing cherries in juice, juice reserved
2 (8 ounce) packages cherry Jell-O
3 (8 ounce) packages cream cheese, softened
1/2 cup pecans, chopped
1 1/2 cups cola

Steps:

  • Drain pineapple and cherries; reserve juice.
  • Heat 1-1/2 cups of reserved juice; most of the 1-1/2 cups should be pineapple juice and just a little cherry juice.
  • Dissolve Jell-O in heated juice; add softened cream cheese; whip.
  • Add pineapple, cherries, and pecans.
  • Stir in Cola.
  • Chill until firm.
  • The ounce sizes are guesses; it is the big can of cherry and pineapple; the Jell-O is the small box. When I make it I will look at sizes and edit.

1 (8 ounce) package cream cheese
1 (20 ounce) can crushed pineapple (Drain; set juice aside)
1 (8 ounce) can mandarin oranges (Drain; set juice aside)
1 (28 ounce) can dark pitted cherries (Drain; set juice aside)
12 ounces Coke
1 cup chopped pecans

Steps:

  • Use Juices from fruit instead of water to make jello-- once it's hot, add Coke.
  • Put in Mixing bowl and add cream cheese, fruit, and nuts.
  • Pour into mold and allow it to set.

1 (20 ounce) can bing cherries
1 (20 ounce) can pineapple, crushed
12 ounces Coke
1 (8 ounce) package cream cheese, cut into small pieces

  • Drain juice from pineapple and cherries, heat and add jello.
  • Add coke and let set for 45 minutes or until slightly thickened.
  • Add pineapple, cherries, cream cheese and nuts.
  • Refrigerate until set.

I was looking for something a little different to take to a family BBQ and found this in my Taste of Home 2003 annual recipes cookbook. The thing I like most about this recipe is the ingredients are usually in my cupboards. Very pretty if you make it in a glass serving bowl. Makes a great dessert, too.

1 (3 ounce) package raspberry gelatin powder
1 (3 ounce) package cherry gelatin
1 (14 1/2 ounce) can seedless white cherries
1 (20 ounce) can crushed pineapple
1 cup pecans, Coarsely Chopped
1 (8 ounce) package cream cheese (frozen)
2 (12 ounce) cans Coca-Cola, partially frozen

Steps:

  • Dissolve gelatin in juices (headed) from cherries and pineapple Then add cokes, cherries , pineapple and nuts. Grate frozen cream cheese over tops of molds (gives appearance of snow). Place in refrigerator to congeal. The "frozen" cokes make congealing faster.

This is adapted from the 1970 Congressional Club Cook Book. I was never a fan of jello salads growing up until I tasted this amazing creation at my first Thanksgiving with my in-laws. Always a treat!

1 (15 1/4 ounce) can dark sweet pitted cherries (cut in half)
1 (20 ounce) can crushed pineapple in juice
1 (3 ounce) package cherry jell-o gelatin (dark cherry works well, too)
1 (3 ounce) package strawberry Jell-O gelatin dessert (raspberry works well, too)
1 (12 ounce) can Coke (Coke Zero works well, too)
1 (8 ounce) package cream cheese (use fat-free to reduce fat)
1/2 cup chopped pecans

Steps:

  • Drain juice from cherries and pineapple and bring juice to boil.
  • Pour juice over Jello.
  • Let cool a few minutes and then add Coke.
  • Add cherries, pineapple, cream cheese and pecans.
  • Pour mixture into mold and let congeal (8-24 hours).

  • Place the Jello in a large bowl. Pour the boiling water over it and stir until dissolved. Stir in the Coca-Cola. Refrigerate mixture until partially firm, about 30 minutes. NOTE: check and stir every 3 to 5 minutes. You want it a thickened but not set.
  • Place the cherries and juice in a food processor fitted with a knife blade or in a blender. Pulse or blend a few times to lightly chop the cherries.
  • Once the Jello mixture has thickened, stir in the chopped cherries and it's juice, pineapple and it's juice, and pecans. Pour into a Jello/gelatin mold. Refrigerate until set or overnight. Remove salad from the mold by inverting onto a serving platter. Serve cold.
