COKE FLOAT - 4 INGREDIENTS
The are a few tips to making this refreshing drink. I use real coca cola, but if you are watching your weight, you can use diet coke or coke zero. Other types of soda, such as root beer, work nicely too. Any brand of vanilla ice cream can be used. You want a brand that's fairly stable and creamy though. The same applies to the chocolate syrup. You can also use more than the suggested amounts if you like depending on your taste.

- Preheat oven to 350 degrees F. Line a muffin tin with 12 paper liners and set aside. Meanwhile, in a large bowl, beat together the cake mix and soda with an electric mixer on medium-low speed, about 2 minutes. You are ONLY mixing in the dry mix and the soda -- NOTHING else (no eggs, no oil, no water). Once combined, beat in the dram of Cola flavored oil or the Soda Stream Cola syrup to combine.
- Portion the batter evenly among the muffin cups, filling about ¾ of the way full. Bake for approx. 14-16 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool completely.
- In the bowl of a stand mixer, beat together the butter, heavy cream, Cola oil and vanilla extract with the paddle attachment until creamy and combined. Gradually add the powdered sugar, about a cup at a time, until frosting is light and fluffy.
- Pipe the frosting high onto cooled cupcakes; sprinkle with white non-pareils. Garnish with a patted-dry maraschino cherry and serve! *If you want the frosting high, like as shown in the photos, consider doubling your frosting recipe.*

- For the cakes: Preheat oven to 160°C/325°F/Gas Mark 3. Line 12 the muffin tray with 12 cupcakes. In a small saucepan, heat the coke, cocoa powder and butter over medium heat until the butter is melted. Add the sugars and whisk until dissolved. Remove from heat and let the cocoa mixture cool. In a large bowl, whisk flour, bicarb soda and salt together. In a small bowl, whisk the eggs. Fold the eggs and the coke mixture into the flour mix. Use a large whisk but don't overbeat or the cupcakes will be dense. Fill cupcake liners about ¾ full and bake cupcakes for 20 minutes until a toothpick inserted into the centre comes out clean. Cool in the tins for 5 minutes then move on a wire rack. For the syrup and top: Add the coke to a small pan and heat until boiling point, then reduce the heat and simmer for 15 minutes or until the coke has reduced by half. Leave to one side to cool. Once cool add 1tsp of cornflour and whisk until it has thickened and has a nice dark brown colour. You should still be able to pour the syrup, if it's too thick add a touch more coke. Leave to cool before adding to the cupcakes Using a skewer or toothpick, make a few small holes in the cupcakes - not right to the bottom or the papers will peel). Brush the tops of the cakes liberally with the cooled syrup. Serve with vanilla ice cream and a cherry. You can drizzle more syrup over the ice cream if you wish.

- Mix your bacon with 1 quart cream. Once the bacon is cooked, lift each piece into a medium bowl and pour your cream on top of it. Seal and refrigerate overnight.
- Mix the sweets. In a medium bowl, add 6 egg yolks, 1 cup sugar (you can also use honey), 1 teaspoon salt and 1 teaspoon vanilla extract. Whisk until smooth.
- Add it all together. Remove your cream and bacon mixture from the refrigerator and heat it in a pan on the stove until softened. Add the yolk mixture one cup at the time.
- Let it cool. Remove the pan from heat and strain the custard mixture. Cool on the counter or in the fridge until room temperature or cooler.
- Mix your ice cream. Add your custard to your ice cream machine and spin to the manufacture’s instructions. Once thickened, place your ice cream into the freezer to set.
- Fill a glass 3/4 with cola. Set the glass on small plates so you can catch the overflow from the fizz. Pour the soda slowly so keep from overflowing. For best results, start with chilled soda.
- Add the ice cream. Slowly add one scoop of vanilla ice cream into each glass. If you have more room, and you prefer more ice cream, add another scoop. For best results, make sure your ice cream is very cold.
- Top off your float. Drizzle a small amount of cola on top of the ice cream. This will turn to foam. Keep pouring until your glass is full. Tilt your glass slightly and pour the cola slowly to reduce foam, or add the ice cream first and pour the soda quicker for more foam.
- Mix it up (optional). Let your float sit a while. Give it about 5-10 minutes for the ice cream to melt but not too long, or it won't be cold enough. Stir until it reaches a consistency somewhere between "ice cream soup" and a milkshake.
