EASY MORNING COFFEE ROLLS
Fill your kitchen with the aroma of fresh baked cinnamon rolls. Perfect for a long weekend. I found this recipe in Healthy Meals In Minutes recipe cards. I have not tried this recipe I'm posting it in a response to the request board.

Steps:
- Spray a 12-cup muffin pan with vegetable cooking spray. Set aside. In a small bowl, sprinkle yeast over warm milk. Let stand until foamy, about 5-10 minutes.
- In a large bowl, combine flour, sugar, and salt. Mix well.
- Stir yeast mixture, oil, and egg into flour mixture until a dough forms.
- To prepare filling, in a medium bowl, combine brown sugar, pecans, and cinnamon. Mix well.
- On a lightly floured surface, knead dough for 5 minutes. Divide dough in half. Roll each half to a 12x9-inch rectangle.
- Sprinkle each rectangle with half of the filling, leaving a 1/2-inch border. Lightly press filling into dough. Starting with a short side, roll up dough, jelly-roll style. Cut each piece into 6 rolls. Place rolls in prepared pan. Cover; let rise until doubled, about 1 hour.
- Preheat oven to 425°F Bake until golden, about 15 minutes. Place on a wire rack and cool slightly. Serve warm.
SCANDINAVIAN CINNAMON COFFEE ROLLS
I found this recipe in an old fundraiser church cookbook. These are baked in muffin cups, which I have never attempted to do with cinnamon rolls.

Steps:
- Soften yeast in warm water.
- Scald milk and set aside to cool.
- Combine flour, salt and sugar in large bowl.
- Cut in margarine with pastry blender.
- Stir in yeast, egg yolks and lukewarm milk. Beat well.
- Chill overnight in refrigerator.
- Divide dough in half. Roll each half to 12x10-inch rectangle.
- Brush with melted margarine.
- Combine 1/4 cup sugar and cinnamon. Sprinkle over dough.
- Starting with 12-inch side, roll jelly-roll fashion.
- Cut into 1-inch slices.
- Place in 24 greased muffin cups.
- Cover; let rise in warm place for 1 hour.
- Bake at 375 degrees for 20 to 25 minutes.
- Combine ingredients for icing. Ice while warm.

- Combine 1/4 cup instant espresso and hot milk in the bowl of a stand mixer, and let cool until just warm to the touch, about 95 degrees F (35 degrees C).
- Add yeast, egg, white sugar, salt, and 6 tablespoons melted butter. Add most of the flour, attach the dough hook, and knead on low speed until everything comes together and begins to pull away from the sides of the bowl.
- Remove dough from the mixer, form into a ball, and place back in the bowl. Cover and let it rise in a warm place until doubled in size, 1 to 2 hours.
- Meanwhile, make filling. Melt 1/2 cup butter in a small pan over medium heat. Stir in brown sugar, cocoa, and 1 tablespoon instant espresso powder. Once combined, remove from heat and let cool.
- Once dough has risen, use your hands to press out the air, and reshape into a ball. For best results, transfer dough to a plastic bag and place in the refrigerator overnight.

- In a medium size bowl, combine the butter, sugars, coffee granules, and cinnamon. Stir with a spatula until mostly combined-- some larger chunks of butter are ok. Set aside.
- Starting with one of the short sides, roll the dough up into a tight 12" log. Using a sharp serrated knife, cut the log into 6 even slices. Place the slices cut side down in the prepared pan (one in the center with five around it), then cover loosely with foil or a kitchen towel and allow to rise for 1 and ½ hours.
- In a large bowl with a handheld mixer or the bowl of a stand mixer fitted with a paddle attachment, beat the butter and cream cheese on medium-high speed until smooth.
