This recipe combines the flavors of coffee and chocolate into an ice cream pie. For something different, try using coffee or chocolate chip ice cream in place of vanilla.

1 ⅛ cups chocolate wafer cookies, crushed
½ cup unsalted butter, melted
6 tablespoons coffee-flavored liqueur
1 teaspoon instant espresso coffee powder
3 ounces semisweet chocolate, chopped
1 tablespoon unsalted butter
1 pint vanilla ice cream, softened
2 tablespoons coffee-flavored liqueur
1 pint chocolate ice cream, softened
2 tablespoons coffee-flavored liqueur
¾ cup whipped cream, beaten stiff

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). In a medium bowl, stir together the cookie crumbs and melted butter. Press mixture evenly onto bottom and sides of a 9 inch pie pan. Bake crust in oven for 10 minutes. Remove from oven and cool completely.
  • In a small saucepan, heat 6 tablespoons of liqueur and espresso powder over low heat. Heat until warm and powder is dissolved. Stir in chocolate and 1 tablespoon of butter until mixture is melted and smooth. Allow to cool completely.
  • Place vanilla ice cream into mixing bowl with 2 tablespoons of coffee liqueur. Using an electric mixer, blend together on low speed. Spread over bottom of cooled crust and freeze until firm. Then spread cooled chocolate mixture over frozen ice cream. Freeze pie until firm.
  • Blend together chocolate ice cream and 2 tablespoons liqueur. Spread chocolate ice cream mixture over frozen chocolate sauce in pie. Freeze until firm. Serve pie with a decorative piped border of whipped cream around the inside edge of the pie.

Steps:

  • Mix crushed cookies with melted butter. Press into the bottom of a 12" Pie taker. Spread ice cream over top of cookies. Pour fudge topping in even layer over ice cream. 1 Oreo cookie crumb crust (store-bought or homemade )
4 cups/1 quart vanilla ice cream (or Oreo Ice Cream, softened)
1 package Oreos
Garnish: chocolate syrup

Steps:

  • Gather the ingredients.
  • Carefully spoon the softened ice cream into the crust.
  • Place 8 of the Oreo cookies so they are standing up along the edge of the prepared cookie crumb crust.
  • Finely crush the remaining 5 or 6 Oreo cookies and sprinkle on the surface of the pie.
  • Drizzle the chocolate syrup in thin lines over the top of the pie.
  • Freeze for at least 4 hours. Remove from the freezer about 10 minutes prior to serving.
  • Use the standing Oreo cookies as a guideline when cutting the pie into pieces.
  • Top with a dollop of whipped cream if you like, and serve.

1 1/2 cups finely ground or crushed chocolate wafer cookie crumbs (about 7 ounces)
1/2 teaspoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup coarsely chopped chocolate-covered English toffee bars (such as Skor or Heath; about 4 ounces)
1 1/2 pints coffee ice cream, slightly softened
For topping
1/3 cup whipping cream
1 tablespoon unsalted butter
6 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 teaspoon vanilla extract

Steps:

  • Make crust and filling:
  • Preheat oven to 325°F. Butter 9-inch-diameter tart pan with removable bottom. Mix cookie crumbs and cinnamon in medium bowl. Add melted butter and stir until crumbs are evenly moistened. Press crumb mixture firmly onto bottom and up sides of prepared pan. Bake until crust is set, about 9 minutes. Cool completely.
  • Sprinkle 2 tablespoons chopped toffee over cooled crust. Spread ice cream evenly in crust. Freeze until firm, at least 4 hours or overnight.
  • Make topping:
  • Combine cream and butter in medium saucepan. Bring to simmer. Remove from heat. Add white chocolate; let stand 1 minute. Stir until chocolate is melted and smooth. Mix in vanilla. Let topping stand until cool and slightly thickened but still pourable, about 15 minutes.
  • Pour white chocolate topping over ice cream tart; tilt pan to cover top of tart completely. Freeze until topping is firm, about 1 hour. Sprinkle remaining toffee over. Freeze until tart is firm, about 4 hours. (Can be prepared 5 days ahead. Cover tightly and keep frozen.)
  • Using small knife, carefully loosen crust from pan sides. Gently push up tart bottom to release tart and serve.

1/2 gal ice cream (coffee flavored (or whatever your favorite we love to make this with Cookies and Cream ice cream too!))

Steps:

  • Grease a pie plate or cake pan.
  • Mix together crushed Oreos with melted butter, then spread it in the pie plate. (Make sure to coat the sides and bottom evenly, so it's easier to cut)
  • As the ice cream is defrosting on the counter, stick the crust in the freezer.
  • Set a timer for 20 minutes. Stay away from the Oreos that are left.
  • When the timer goes off, scoop the ice cream into the Oreo crust. If the ice cream is still hard, put it in the microwave for 30 seconds or so.
  • Top with Magic shell or Hershey's syrup.

This cool and creamy coffee ice cream pie has a chocolate crust and layers of coffee ice cream, dark chocolate, and coffee whipped cream.

24 Oreo cookies (crushed)
1/4 cup butter (melted)
1.5 quarts coffee ice cream ((48 ounces))
6 oz dark chocolate bar
2/3 cup evaporated milk
1 cup whipping cream
1 1/2 Tablespoons Kahlua
2 teaspoons sugar
Garnish: chopped chocolate covered espresso beans (chopped pecans or crushed Oreos)

Steps:

  • Crush cookies in food chopper, blender or place in large ziploc bag and crush with rolling pin.
  • In a small bowl, combine crushed cookies and melted butter.
  • Press into a 9"-10" deep pie plate and freeze. I usually leave mine in a minimum or 30 minutes.
  • Remove ice cream from freezer and leave out until softened then spread ice cream on crust and freeze again. Usually the ice cream takes about an hour or so to freeze again.
  • Break up chocolate and place in microwave safe dish. Melt in 30 second increments, stirring in-between until smooth.
  • Stir chocolate and evaporated milk together until well blended.
  • Pour over ice cream layer and freeze again.
  • In a large mixing bowl, combine whipping cream, kahlua and sugar and beat until soft peaks form. Make the whipped cream right before serving the first time.
  • Remove pie from freezer approximately 10-15 minutes prior to serving to make it easier to cut. Spread whipped cream on top of pie and sprinkle crushed espresso beans or chopped nuts around edge.
  • After serving, return and store in freezer.

Press into a 9 inch pie plate. Tip: Press crumbs along side of pan first and then the bottom, this will help make an even crust. Freeze overnight for easier cutting.
