Cinnamon Roll Coffee Cake for a Crowd image

Warm and gooey with a hint of orange--serve an easy coffee cake sure to satisfy the whole crowd.

3/4 cup packed brown sugar
2 teaspoons grated orange peel
3/4 cup chopped pecans
1/3 cup sugar
1 teaspoon ground cinnamon
2 cans (17.5 oz) refrigerated Pillsbury™ Grands!™ Cinnamon Rolls with Original Icing (5 Count)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch pan with cooking spray.
  • In small bowl, mix butter, brown sugar and orange peel. Pour butter mixture into pan; top with 1/2 cup of the pecans.
  • In small bowl, mix sugar and cinnamon. Separate dough into 10 rolls. Cut each into quarters. Place dough pieces in sugar mixture; toss to coat. Arrange in single layer in pan.
  • Bake 20 to 25 minutes or until golden brown and no longer doughy in center. Drop icing by teaspoonfuls over top of coffee cake; sprinkle with remaining pecans. Cool in pan 10 minutes. Cut into squares. Serve warm.

¾ cup packed brown sugar
½ cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • Grease and flour a 9x13-inch baking pan.
  • Beat butter and white sugar in a bowl with an electric mixer until light and fluffy, about 2 minutes.
  • Beat eggs and sour cream into butter mixture until smooth.
  • Whisk flour, baking powder, baking soda, nutmeg, and salt together in a bowl until thoroughly combined; stir into the sour cream mixture to make a batter.
  • Pour the batter into the prepared baking dish.
  • Mix the brown sugar, pecans, and cinnamon in a bowl; sprinkle the mixture over the batter.
  • Cover the baking dish with plastic wrap and chill 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).

This from-scratch coffee cake is quick to put together, and it easily serves a crowd. While it's delicious with peach or apricot pie filling, I like to make it with cherry or strawberry filling during the holidays.

1 cup butter, softened
1-3/4 cups sugar
4 eggs
3 cups all-purpose flour
1-1/2 teaspoons salt
1-1/2 teaspoons baking powder
1 can (21 ounces) peach pie filling
ICING:
1-1/4 cups confectioners' sugar
1/2 teaspoon almond extract
3 to 4 tablespoons milk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, salt and baking powder; add to creamed mixture and beat just until combined. , Spread 3-3/4 cups batter into a greased 15x10x1-in. baking pan. Carefully spoon pie filling to within 1 in. of edges. Spoon remaining batter over filling. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean (cover loosely with foil if edges brown too quickly). Cool on a wire rack. , In a small bowl, combine the confectioners' sugar, extract and enough milk to achieve desired consistency. Drizzle over coffee cake.
