These cookies have an intense almond flavor, a crunchy crust with a chewy, tender inside. Coconut is nowhere to be found in this delicious little cookie.

18 ounces almond paste (not marzipan)
½ cup superfine sugar
½ teaspoon salt
4 tablespoons amaretto liqueur
1 cup powdered sugar

Steps:

  • Preheat the oven to 375 degrees. Line 2 baking sheets with parchment paper or Silpat mats.
  • In a large mixing bowl, crumble the almond paste. Add the sugar and salt.
  • Using your hands, mix all the ingredients together until well mixed.
  • Pour in the amaretto and gently work the liquid into the almond mixture until a paste forms.
  • In a shallow, flat bowl, sift the powdered sugar into the bowl. Set aside.
  • Use a 1-ounce cookie scoop to scoop out the dough into the powdered sugar.
  • Roll each ball in the powdered sugar and place on the prepared baking sheet. Be sure to leave at least 1-inch space between the balls.
  • Repeat with the rest of the dough.
  • Allow the dough balls to sit on your counter for 20 minutes to dry out.
  • Bake in the preheated oven for 10-12 minutes until lightly golden brown.
  • Remove from the oven and cool completely.
  • Store any leftovers in an airtight container.

1 1/4 cups plus 1 teaspoon confectioners’ sugar
1 cup (4 ounces) finely ground sliced, blanched almonds
6 tablespoons fresh egg whites (from about 3 extra-large eggs)
Pinch of salt
1/4 cup granulated sugar
Macaron Filling

Steps:

  • To make the macarons: Preheat the oven to 350 degrees. In a medium bowl, whisk together confectioners' sugar and ground almonds. In the bowl of an electric mixer fitted with the whisk attachment, whip egg whites with salt on medium speed until foamy. Increase speed to high and gradually add granulated sugar. Continue to whip until stiff glossy peaks form. With a rubber spatula, gently fold in the confectioners' sugar mixture until completely incorporated.
  • Line baking sheets with parchment paper; set aside. Fit a pastry bag with a 3/8-inch #4 round tip, and fill with batter. Pipe 1-inch disks onto prepared baking sheets, leaving 2 inches between cookies. The batter will spread a little. Let stand at room temperature until dry, and a soft skin forms on the tops of the macarons and the shiny surface turns dull, about 15 minutes.
  • Bake, with the door of the oven slightly ajar, until the surface of the macarons is completely dry, about 15 minutes. Remove baking sheet to a wire rack and let the macarons cool completely on the baking sheet. Gently peel off the parchment. Their tops are easily crushed, so take care when removing the macarons from the parchment. Use immediately or store in an airtight container, refrigerated for up to 2 days or frozen for up to 1 month.
  • To fill the macarons: Fill a pastry bag with the filling. Turn macarons so their flat bottoms face up. On half of them, pipe about 1 teaspoon filling. Sandwich these with the remaining macarons, flat-side down, pressing slightly to spread the filling to the edges. Refrigerate until firm, about 1 hour.
  • Variations: To make coffee-flavored macarons: In step 1, add 2 drops brown food coloring to the egg whites after they are whipped. In step 4, blend 1/2 cup macaron filling with 1 1/2 teaspoons espresso powder dissolved in 1/2 teaspoon warm water for the filling. To make cassis-flavored macarons: In step 1, add 2 drops purple food coloring to the egg whites after they are whipped. In step 4, use 1/3 cup good-quality cassis jam for the filling. To make pistachio-flavored macarons: In step 1, add 2 drops green food coloring to the egg whites after they are whipped. In step 4, combine 1/2 cup macaron filling with 1 tablespoon pistachio paste for the filling.

rice paper (you know, those wrappers for fresh spring rolls. If you cook on silpat not needed)
4 ounces ground almonds
6 ounces sugar
2 egg whites
1 tablespoon cornstarch
1/4 teaspoon vanilla
1 tablespoon coffee extract (if you do not have make with 1 tsp instant coffee and 1 tbs hot water)
12 chocolate-covered coffee beans, to garnish (optional)

Steps:

  • Line 2 or 3 baking trays with rice paper or silpat.
  • Preheat oven to 375 F.
  • Mix the round almond, sugar and all but one tablespoon of the egg white. Stir until evenly blended.
  • Stir in the cornstarch, vanilla and coffee.
  • Spoon into a piping/pastry bag fited with a 1/2 inch plain nozzle. Pipe one pans in large round circles. If you don't want to pipe, spoon onto pan neatly.
  • Tope each with a chocolate coffee bean (optional).
  • Bake for 15 minutes or until lightly browned, risen and slightly cracked.
  • If you used the rice paper, cut to fit each and leave to cool on a wire rack.

1/4 tsp salt
3 eggs, separated
1 1/2 c sugar
1/4 c cold coffee
2 Tbsp melted butter
1 tsp lemon juice
1/4 tsp almond extract
1 1/2 c coconut, shredded ; cut up
1 unbaked 9" pie shell

Steps:

  • 1. Add salt to egg yolks and beat until thick and lemon-colored.
  • 2. Add sugar , 1/2 cup @ a time , beating well. Add coffee , butter , lemon juice and almond extract ; blend well.
  • 3. Fold in coconut and stiffly beaten egg whites. Turn into pie shell.
  • 4. Bake in oven @ 375° for 50 minutes or until knife inserted in center comes out clean ; cool before serving.
  • 5. NOTE : IF YOUR OVEN RUNS A LITTLE HOT BAKE @ 350°
