3 teaspoons chopped fresh thyme, divided
1/2 teaspoon salt, divided
¼ teaspoon freshly ground pepper
1 tablespoon extra-virgin olive oil
1 shallot, chopped
2 cloves garlic, minced
¾ cup white wine
1 14-ounce can diced tomatoes
1/4 cup heavy cream or half-and-half
½ teaspoon cornstarch

Steps:

  • Season fish with 1 teaspoon thyme, 1/4 teaspoon salt and pepper. Heat oil in a large skillet over medium heat. Add shallot, garlic and 1 teaspoon thyme; cook, stirring, until beginning to soften, about 1 minute. Add wine, tomatoes and the fish to the pan; bring to a simmer. Cover and cook until the fish is cooked through, 4 to 6 minutes. Transfer the fish to a large plate; keep warm.
  • Whisk cream and cornstarch in a small bowl. Add to the pan, along with the remaining 1 teaspoon thyme and 1/4 teaspoon salt. Cook, stirring, for 1 minute. Divide the fish and sauce among 4 shallow bowls.

2 pounds fresh or frozen skinless cod fillets, 3/4- to 1-inch thick
1 teaspoon paprika
½ teaspoon seasoned salt
8 wedges Lemon wedges and/or fresh parsley sprigs

Steps:

  • Preheat broiler. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl, combine paprika and seasoned salt. Sprinkle paprika mixture over both sides of each fish fillet. Measure thickness of fish.
  • Place fish on the greased unheated rack of a broiler pan. Broil 4 inches from the heat for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork. If desired, garnish with lemon wedges and/or parsley sprigs. Makes 8 servings.
  • Microwave directions: Prepare as directed through Step 1. In a microwave-safe 2-quart square baking dish, arrange fish in a single layer (fish may be tight in the dish but do not overlap). Cover with vented plastic wrap. Microwave on 100% power (high) for 5 to 7 minutes or until fish flakes easily when tested with a fork, turning dish once halfway through cooking if necessary. If desired, garnish with lemon wedges and/or parsley sprigs.

2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, undrained
4 cod fillets (6 ounces each)
2 tablespoons olive oil, divided
2 medium onions, halved and thinly sliced (about 1-1/2 cups)
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
Hot cooked whole wheat pasta
Minced fresh parsley, optional

Steps:

  • Place tomatoes in a blender. Cover and process until pureed., Pat fish dry with paper towels. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add cod fillets; cook until surface of fish begins to color, 2-4 minutes on each side. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add onions; cook and stir until tender, 2-4 minutes. Stir in seasonings and pureed tomatoes; bring to a boil. Add cod; return just to a boil, spooning sauce over tops. Reduce heat; simmer, uncovered, until fish just begins to flake easily with a fork, 5-7 minutes. Serve with pasta. If desired, sprinkle with parsley.

¼ pound cod fillets
1 tablespoon flour, or as needed
salt and pepper to taste
1 tablespoon butter
1 tablespoon chopped onion
4 ounces tomatoes, sliced
4 ounces zucchini, sliced
2 ounces creme fraiche
1 teaspoon dried rosemary
1 pinch salt and freshly ground black pepper to taste
1 tablespoon tomato paste, or as needed

Steps:

  • Place sun-dried tomatoes in a bowl and cover with warm water. Soak for 15 minutes. Drain and chop.
  • Lightly dust cod with flour and season with salt and pepper. Heat butter in a skillet and cook cod until lightly browned, about 3 minutes per side. Transfer cod to a baking dish with a lid.
  • Preheat the oven to 350 degrees F (175 degrees C).
