COD WITH TOMATO CREAM SAUCE
This silky tomato sauce with a touch of cream makes mild-flavored cod sing. Serve with: Farro or rice and a salad of mixed greens.

- Season fish with 1 teaspoon thyme, 1/4 teaspoon salt and pepper. Heat oil in a large skillet over medium heat. Add shallot, garlic and 1 teaspoon thyme; cook, stirring, until beginning to soften, about 1 minute. Add wine, tomatoes and the fish to the pan; bring to a simmer. Cover and cook until the fish is cooked through, 4 to 6 minutes. Transfer the fish to a large plate; keep warm.
- Whisk cream and cornstarch in a small bowl. Add to the pan, along with the remaining 1 teaspoon thyme and 1/4 teaspoon salt. Cook, stirring, for 1 minute. Divide the fish and sauce among 4 shallow bowls.

- Preheat broiler. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl, combine paprika and seasoned salt. Sprinkle paprika mixture over both sides of each fish fillet. Measure thickness of fish.
- Place fish on the greased unheated rack of a broiler pan. Broil 4 inches from the heat for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork. If desired, garnish with lemon wedges and/or parsley sprigs. Makes 8 servings.
- Microwave directions: Prepare as directed through Step 1. In a microwave-safe 2-quart square baking dish, arrange fish in a single layer (fish may be tight in the dish but do not overlap). Cover with vented plastic wrap. Microwave on 100% power (high) for 5 to 7 minutes or until fish flakes easily when tested with a fork, turning dish once halfway through cooking if necessary. If desired, garnish with lemon wedges and/or parsley sprigs.

- Place tomatoes in a blender. Cover and process until pureed., Pat fish dry with paper towels. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add cod fillets; cook until surface of fish begins to color, 2-4 minutes on each side. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add onions; cook and stir until tender, 2-4 minutes. Stir in seasonings and pureed tomatoes; bring to a boil. Add cod; return just to a boil, spooning sauce over tops. Reduce heat; simmer, uncovered, until fish just begins to flake easily with a fork, 5-7 minutes. Serve with pasta. If desired, sprinkle with parsley.

DELICIOUS COD WITH TOMATO-CREAM SAUCE
Steps:
- Place sun-dried tomatoes in a bowl and cover with warm water. Soak for 15 minutes. Drain and chop.
- Lightly dust cod with flour and season with salt and pepper. Heat butter in a skillet and cook cod until lightly browned, about 3 minutes per side. Transfer cod to a baking dish with a lid.
- Preheat the oven to 350 degrees F (175 degrees C).
- Add onion to skillet and cook over medium heat until soft and translucent, about 5 minutes. Add drained sun-dried tomatoes, tomatoes, zucchini, creme fraiche, rosemary, salt, and pepper. Cook for 2 minutes. Stir in tomato paste to thicken sauce. Pour mixture over fish in the baking dish and cover.
- Bake in preheated oven until fish flakes easily with a fork, about 30 minutes.
