SIMPLE COD WITH SAUTEED SPINACH
Simple Cod with Sauteed Spinach is a healthy and delicious meal that is fast enough to make any night of the week , and fancy enough to serve on date night!

Steps:
- Heat the olive oil in a large skillet over medium heat. Season the cod with ground black pepper {or seasoning of your choice} and place it in the skillet. Sear the first side and flip over. Cover and cook for 4 to 5 minutes. Remove from pan and set aside.
- Clean out the skillet and add olive oil. When oil is heated, add the garlic. Cook for one minute, stirring to keep it from burning.
- Add a handful of spinach and toss to combine. Saute and stir until spinach is wilted.
- Add another handful of spinach, wilt, and continue until all of the spinach is wilted. Squeeze one wedge of lemon over the spinach and toss to combine. Season to taste with sea salt and pepper.
- Divide the spinach between two plates, using a slotted spoon to drain off excess moisture. Top with the cod and season with black pepper and lemon strips and serve.

- 1. Cook and drain well the frozen spinach. 2. In sauce pan melt butter sub, add flour and salt & pepper. 3. Whisk till mixed and then slowly add; milk and half n half. 4. In a 9 x 13 baking dish spread spinach over bottom 5. Top with mushrooms. 6. Pour cheese sauce over mushrooms. 7. Layer fish over cheese and season with 1 tbsp of seafood seasoning. 8. Bake uncovered at 375 till fish is vooked and sauce is bubbly, approximately 20 minutes
BAKED COD FISH WITH TOMATO CHEESE SAUCE AND BACON
To be honest, I made this for another recipe contest. This was not chosen but my husband loved it very much and I did too. Big flavor and crunchy, crispy texture which is fun to eat. I just wanted to share this recipe.

- Chop tomato and bacon.
- Rinse cod fish fillets with cold water and pad dry with paper towels. Cut each fillet into little bit bigger than bit size and put into a shallow bowl with white wine. Add salt and black pepper to season. Set aside.
- Make tomato cheese sauce. In a bowl, mix together tomatoes, soy sauce, oregano leaves and shredded cheddar cheese.
- Make crumble. In another bowl, mix together panko, bacon and wild rice.
- In a skillet, heat 1 tablespoon olive oil and sauté spinach over medium heat for about 1 minute then put into each serving ramekin (10-12 oz each) equally. Place cod fish equally with the liquid remaining in the bowl on the spinach. Put the tomato cheese sauce on the fish and sprinkle crumble. Sprinkle black pepper to season (as much as you prefer) and pour the olive oil (1 teaspoon for each) over the top.
- Bake in preheated 400 degrees F oven for 15-20 minutes until fish are cooked through and crumbles are golden brown and crisp.

GRILLED COD WITH SPINACH AND TOMATOES

- Preheat an outdoor grill for medium-high heat.
- Place cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top cod with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over cod creating a packet, crimping the edges together making a seal.
- Cook on the preheated grill until fish flakes easily with a fork, 7 to 9 minutes.

- Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Mix 1 tbsp rapeseed oil with the thyme and garlic, spoon over the fish, then grate over the lemon zest. Bake for 10-12 mins until the fish is moist and flakes easily when tested.
- Meanwhile, heat the remaining oil in a non-stick pan and fry the pepper and leeks for 5 mins until softened. Add the almonds and cook for 5 mins more. Tip in the tomato purée, 5 tbsp water, the bouillion powder and vinegar, and cook briefly to warm the mixture through.

- Heat the oven to 450*. Coat an 8-inch square or other small glass baking dish with cooking spray. In a large skillet over medium-low, heat the oil. - In a small bowl, combine the spices. Coat the fish with half the spice mixture and some seasoning. Set aside.
- In a medium lidded frying pan, heat the oil over a medium heat. Add the onion, garlic and ginger, and fry for 8 mins until softened. Add the remaining spice mix and gently cook for 1 min to release the flavour of the spices.
- Pour in the coconut milk, bring to the boil and simmer for 3-5 mins to reduce slightly, then add the cod and spinach. Pop the lid on and continue to cook for 5 mins or so until the spinach has wilted and the cod is cooked through. Season to taste and serve with basmati rice and naan bread, if you like.

- Cook spinach according to package directions. Let stand until cool enough to handle. Drain spinach in colander; squeeze out as much liquid as possible. Transfer spinach to a cutting board, and chop with a large knife.
- Melt butter in a medium saucepan over medium heat. Add shallot; cook 2 minutes. Add cream, and bring to a boil. Stir in spinach, 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Cook 5 minutes, stirring constantly, until mixture has thickened.
- Season cod with remaining 1/2 teaspoon each of salt and pepper, and place in a lightly buttered 2 1/2-quart baking dish. Spread creamed spinach over fillet to cover. Combine breadcrumbs and cheese until well blended; sprinkle over top of fillet.
- Bake at 400° for 28 to 30 minutes, or until fish is just opaque in thickest part. Cut into 6 portions, and transfer to plates, spooning any creamed spinach and juices from sides of dish over portions. Serve immediately.
