The Ultimate Spanish Cod Recipe with Tomato Sauce image

2 tbsp extra virgin Spanish olive oil
1 fillet of cod 14oz/400g
3 cloves garlic
1 small onion
1/2 red bell pepper
1/2 green bell pepper
1/4 tsp smoked paprika
1 14 ounce/400 gram can tomato puree
sea salt
black pepper
white sugar
fresh parsley
lemon

Steps:

  • Thinly slice 3 cloves of garlic, finely dice 1 small onion, finely dice 1/2 of a red bell pepper and 1/2 of a green bell pepper, pat down a 14 oz/400 gram fillet of cod with paper towels, cut it into 4 evenly sized pieces, then season them with sea salt and freshly cracked black pepper
  • Heat a non-stick frying pan with a medium-high heat and add 2 tablespoons of extra virgin Spanish olive oil, 2 minutes after adding the oil add the fillets of cod into the pan skin side up, 2 minutes later flip the fillets, after a total cooking time of 4 minutes remove the cod fillets from the pan and transfer them into a dish and cover it with seran wrap
  • Using the same pan with the same heat add the sliced garlic and diced onions into the pan and mix them with the oil, scrapping up anything that was left over from the cod, after about 1 minute add the diced bell bell peppers into the pan and cook for about 5 minutes, then season everything with sea salt, freshly cracked black pepper and a generous 1/4 teaspoon of smoked paprika and mix everything together, then add one 14 ounce/400 gram can of tomato puree, season again with sea salt, freshly cracked black pepper and a kiss of white sugar, mix it all together until well combined and lower the fire to a LOW heat
  • After leaving the sauce to simmer for 5 minutes add the fillets of cod back into the pan and place a lid on top, 2 minutes later remove the lid and transfer the pan to a flat surface, serve directly from the pan, garnish with some freshly chopped parsley and a couple slices of lemon, enjoy!

12 roma (plum) tomatoes
2 cloves garlic, unpeeled
1 small onion, quartered
1 jalapeno chile pepper
1 ½ tablespoons olive oil
1 teaspoon ground cumin
¼ teaspoon salt
3 tablespoons fresh lime juice
¼ cup chopped fresh cilantro

Steps:

  • Preheat the broiler.
  • In a medium baking dish, place roma (plum) tomatoes, garlic, onion and jalapeno chile pepper. Drizzle with olive oil.
  • Checking often, broil 5 to 10 minutes, or until outsides of vegetables are charred.
  • Remove vegetables from heat. Remove and discard tomato cores, jalapeno stem and garlic skins.
  • In a food processor, coarsely chop the charred vegetables. Transfer to a medium bowl and mix in cumin, salt, lime juice and cilantro.

Baccala Alla Pizzaiola: Cod with Tomato image

2 pounds hydrated cod, de-boned
Flour, for dredging,
1 1/4 cups extra-virgin olive oil
2 cloves garlic, diced
1 chili pepper, crushed, optional
1/4 cup capers
1 (8-ounce) can peeled plum tomatoes, with juice
1 tablespoon fresh oregano leaves
Salt
Small bunch fresh Italian parsley, finely chopped

Steps:

  • Ready to use, hydrated cod can be found at most fish shops. However, if you choose to buy dry salted cod, soak it in a large bowl of cold water for 2 to 3 days, changing the water 3 to 4 times a day. This will rehydrate the cod and ensure that it is not too salty.
  • Cut the cod into 2 by 2-inch pieces. Lightly dredge the cod in flour, shaking off any excess, and set aside.
  • In a large saucepan, heat 1 cup of the extra-virgin olive oil. Make sure the oil is hot before adding the cod, otherwise the cod will absorb the excess oil. Cook until golden brown on both sides.
  • In another saucepan, heat the remaining 1/4 cup oil. Add the garlic, chili peppers, and capers, and let cook for a few minutes. Add the plum tomatoes along with the juices and crush some of the plum tomatoes with a wooden spoon. Add the oregano, season with salt, and cook for 5 minutes.
  • Put the cod in the sauce and cook for an additional 2 minutes. Sprinkle the dish with fresh parsley and serve warm or at room temperature.

ROASTED COD WITH SALSA VERDE

Cod is mild and meaty, so it pairs nicely with the tangy acidity of a sauce like salsa verde. The cod tastes very nice on it's own as well. Although the recipe calls for skin on cod, more often than not I use skinless fillets because that is what I can get. We love it.

4 tablespoons peanut oil
kosher salt
fresh ground black pepper
6 (7 1/4 ounce) skin on cod, 1 1/4 inch thick
4 tablespoons unsalted butter
2 sprigs fresh thyme
1 cup chopped fresh flat leaf parsley (about 3 bunches)
2 tablespoons capers, rinsed and chopped
2 anchovies, minced
1/2 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil, about
1/2 lemon, juice of
kosher salt
fresh ground black pepper

Steps:

  • Warm 2 skillets over medium high heat.
  • Add 2 TBS of the oil to each.
  • Salt and pepper the fish fillets and place three, skin side down in each pan.
  • Pan-roast the fish until the skin is crisp and the flesh opague about a fourth of the way up each fillet, about 7 minutes.
  • Turn the fillets over and reduce the heat to medium.
  • Add half the butter and thyme to each skillet and cook, basting the fish with the melting butter.
  • Cook about 5 minutes more.
  • Serve with salsa verde if desired.
  • For salsa verde;combine the parsley, capers, anchovies, and mustard in a bowl.
  • Gradually mix in just enough olive oil so the sauce holds together.
  • Shortly before serving add the lemon juice and adjust the seasoning if necessary with salt and pepper.
  • Using two spoons, form the salsa verde into quenelles on each plate with the fish.

6 plum tomatoes, sliced into quarter wedges
1/2 red onion, sliced into quarters
Olive oil
Kosher salt and freshly ground pepper
7 cloves garlic
1 jalapeno, sliced in half and seeds removed
3 tablespoons chopped fresh cilantro
Juice of 1 lime
4 (5-ounce) center-cut cod filets, skinned

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the tomatoes and red onion to a bowl and drizzle with oil. Season with salt and pepper. Add to a greased baking sheet. Add the garlic to a square of tinfoil, drizzle with olive oil and seal. Place on the sheet tray and roast for 25 minutes, until charred and tender.
  • Remove from oven and let cool for a few minutes. Add the vegetables and garlic to a food processor along with jalapeno, cilantro and lime juice; pulse until chunky. Taste for seasoning and season with salt and pepper, if necessary.
  • Add 1 tablespoon olive oil to a large nonstick skillet over medium-high heat. Once hot, add the fish and cook for 4 minutes per side. Top with the roasted salsa.

This is my favorite recipe for cod, but you can prepare any type of white fish this way. Baked in the oven, cod develops a great flavor and becomes extra tender.

3 pounds cod - scaled, gutted, and head removed
3 sprigs fresh rosemary, divided
salt and freshly ground black pepper to taste
5 large beefsteak tomatoes
2 tablespoons black olives
2 tablespoons green olives
3 cloves garlic, minced, or more to taste
1 teaspoon fennel seeds, or to taste
2 tablespoons olive oil, or to taste
2 teaspoons balsamic vinegar, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a casserole dish.
  • Wash cod and pat dry with paper towels. Place 2 rosemary sprigs inside the belly of the cod. Season inside and outside of cod with salt and pepper; place in the prepared casserole dish.
  • Bring a pot of water to a boil. Cut an 'X' into the bottom of 4 of the tomatoes and submerge in boiling water for 20 seconds. Remove from the hot water and peel off skin. Cut in half horizontally and place tomato halves around the cod. Dice remaining tomato and scatter between the cod and the tomato halves. Season with salt and pepper.
  • Sprinkle remaining rosemary, black olives, green olives, garlic, and fennel seeds over cod and tomatoes. Drizzle olive oil on top.
  • Bake in the middle of the preheated oven until cod flakes easily with a fork, about 25 minutes. Drizzle balsamic vinegar over tomatoes before serving.
