This healthy ginger-glazed cod is a simple and satisfying dish that you can serve for dinner.

Nonstick vegetable cooking spray
4 center-cut skinless cod fillets (about 6 ounces each)
Coarse salt and freshly ground black pepper
2 tablespoons freshly squeezed lime juice
1 tablespoon honey
1 tablespoon unseasoned rice vinegar
1 teaspoon soy sauce
1 teaspoon finely grated fresh ginger
1/2 teaspoon Asian chile sauce, such as a sambal or Sriracha
Fresh mint leaves, thinly sliced, for garnish (optional)
Scallions, thinly sliced, for garnish (optional)

Steps:

  • Preheat oven to 425 degrees. Spray an 8-inch square baking dish with cooking spray. Season both sides of the fish lightly with salt and pepper and place in the dish. Set aside.
  • Mix together the lime juice, honey, vinegar, soy sauce, ginger, and chile sauce in a small saucepan; bring to a boil. Reduce heat to a simmer, and cook until thick and syrupy, about 3 minutes. Spoon about 1 teaspoon of the glaze evenly over each cod fillet. Reserve any leftover glaze for serving.
  • Bake in the oven until fish is opaque and just cooked through, about 12 minutes. Garnish cod with mint and scallions, if desired.

2 tablespoons butter
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated orange zest
1/3 cup orange juice
1 tablespoon lemon juice
1/8 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Preheat oven to 375°. Place fillets in an 11x7-in. baking dish coated with cooking spray. , In a skillet, heat butter over medium-high heat; saute onion and garlic until tender. Spoon over fish. Mix orange zest and citrus juices; drizzle over fish. , Bake, uncovered, until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with pepper and parsley.

cooking spray
¾ pound cod fillets
2 tablespoons orange marmalade
1 tablespoon honey
½ tablespoon orange juice
1 teaspoon Dijon mustard
½ teaspoon sesame oil
½ teaspoon reduced-sodium soy sauce
⅛ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Set an oven rack 5 to 6 inches from the heat source and preheat the oven's broiler. Coat a broiler pan with cooking spray and place fillets on top.
  • Combine marmalade, honey, orange juice, Dijon mustard, sesame oil, soy sauce, and pepper in a small bowl. Mix well.
  • Broil cod in the preheated oven for 4 to 5 minutes. Brush 1/2 of the honey-orange glaze on top and broil until fish flakes easily with a fork, 4 to 5 minutes more. Adjust timing depending on the thickness of the fillets.
  • Brush the remaining glaze over the fillets. Garnish with parsley.

2 Tbsp Orange marmalade
2 tsp Sesame oil
1 tsp Soy Sauce, low sodium
1/2 tsp Ginger (Grated)
1 Clove Garlic (Minced)
1 Tbsp Rice wine vinegar
1/4 tsp Miso
1 Tbsp Olive oil
2 4 oz portions Cod filet
1/4 tsp Pepper

Steps:

  • Preheat oven to 400 degrees F
  • In a sauce pan over medium high heat add orange marmalade, sesame oil, soy sauce, ginger, garlic, rice vinegar and miso. Stir until thoroughly combined and just beginning to boil. Set aside.
  • Add oil to ovenproof frypan and turn to medium high heat. As it warms pepper both sides of cod and add to frypan. Saute cod 3-4 minutes until browned. Flip filets over and spoon about a Tbsp of sauce over each filet.
  • Place in oven 5-6 minutes until fish flakes easily.
  • Spoon remaining sauce over baked portions.

3 tablespoons lemon juice
4 teaspoons minced fresh gingerroot
2 teaspoons reduced-sodium soy sauce
2 teaspoons minced garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
3 cod fillets (6 ounces each)
2 tablespoons butter, melted, divided

Steps:

  • In a small bowl, combine the first seven ingredients. Pour a third of the mixture into an 11x7-in. dish. Arrange cod fillets in a single layer over top. Spoon remaining yogurt mixture over fillets. Cover and refrigerate for 1-2 hours., Using a slotted spoon, transfer fillets to a broiler pan coated with cooking spray.   • Add the ginger and cook over medium high heat, stirring often, for 2 minutes, until litely browned.
  • Add lemon juice, mustard, soy sauce and 1 cup of orange juice, stir to combine.
  • Add the fish in single layer.
  • Cover and cook over low heat for 6 to 8 minutes, until fish is opaque and done.
  • Remove the fish to a plate; cover to keep warm.
  • Mix cornstarch and remaining 1/2 c.
