COD IN RED WINE SAUCE

2 teaspoons unsalted butter cold
1 teaspoon olive oil
4 4-ounce cod fillets
4 shallots peeled and minced
2 cups red wine
4 tablespoons balsamic vinegar
2 tablespoons port
1 teaspoon salt
Freshly ground pepper to taste
2 teaspoons chopped Italian parsley

Steps:

  • Heat 1 teaspoon of the butter and the oil in a large skillet over medium heat. Add the cod and sauté just until cooked through, about 2 minutes per side, turning the cod carefully with a wide spatula. Remove the cod to a plate and keep warm.
  • Place the shallots in the skillet and sauté until softened, about 1 minute. Add the wine and cook, stirring and scraping the bottom of the skillet with a wooden spoon, until reduced by half, about 5 minutes. Stir in the vinegar and port. Cook for 1 minute longer. Cut the remaining teaspoon of butter into small pieces and whisk it into the sauce. Season with the salt and pepper. Strain.
  • Spoon the sauce into the center of 4 plates. Top with a cod fillet and sprinkle with parsley. Serve immediately.

2 tablespoons olive oil
1 onion, thinly sliced
1 garlic clove, minced
1/2 cup red wine
1/2 cup fish stock or 1/2 cup clam juice
1 tablespoon capers
1/2 teaspoon dried thyme
1/2 lb cod, cut into 1-inch chunks
1/2 cup packed parsley, chopped
1 tablespoon butter (optional)
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Heat the olive oil in a skillet. Add onion and garlic and begin to saute. Cover and cook until softened, about 5 minutes (if onions begin to stick add a spoonful of water to the skillet and continue to cook).
  • Add the red wine, clam juice, capers, and thyme and bring liquid to a boil. Simmer over low heat until reduced to 1/2 cup.
  • Right before serving bring the sauce back to a simmer and add the fish. Cover and cook over very low heat until the fish is just cooked through, about 5 minutes. Remove from heat and swirl in butter and parsley (don't worry if fish falls apart).
  • Adjust seasoning and spoon into deep plates over rice, potatoes or garlic croutons.

4 cod fillets or other sturdy white fish
Salt and pepper
Flour for dredging
Vegetable oil for frying
1 shallot (minced)
8 oz white mushrooms (sliced)
2 cloves garlic (minced or grated)
2/3 cup beef stock
1/3 cup red wine (regular or sweetened (such as Marsala or Madeira))
2 tbsp lemon juice
1 tbsp unsalted butter
Chopped fresh parsley for garnish

Steps:

  • Pat fish dry with paper towels; season with salt and pepper. Coat each piece of fish with flour.
  • Fry the fish, in batches in hot oil until cooked through and golden brown, about 2 minutes on each side. Drain on paper towels and transfer onto a platter.
  • Remove all but 1 tablespoon of oil from the pan. Add shallot and mushrooms and sauté until mushrooms begin to soften, about 3 minutes.
  • Add the garlic and 1 teaspoon flour. Stir for a minute and then add the stock and red wine. Bring to a boil for a minute or two, until sauce starts to thicken.
  • Turn off heat and then add lemon juice and butter, whisking until butter has melted and sauce is glossy.
  • Pour mushroom sauce over the fish. Sprinkle with chopped parsley.

Steps:

  • Heat the olive oil in a skillet. Add onion and garlic and begin to saute. Cover and cook until softened, about 5 minutes (if onions begin to stick add a spoonful of water to the skillet and continue to cook).
  • Add the red wine, clam juice, capers, and thyme and bring liquid to a boil. Simmer over low heat until reduced to 1/2 cup.

  • For the red wine sauce, place half the butter in a saucepan over a medium heat. Add the carrot, celery and onion and cook gently, stirring, for 10 minutes until the onion is lightly browned. Add the cloves, cinnamon, chilli, cardamom and curry powder, and cook for a further 1-2 minutes until fragrant. Add the red wine, stock, sugar and the salt. Increase the heat to high, then boil for 20 minutes until the sauce has reduced by two-thirds (to about 450ml). Strain through a fine sieve into a small clean pan, discarding the vegetables and whole spices. Set aside and cover to keep warm.
  • Whisk the remaining softened butter with the flour in a small bowl until combined. Set this butter paste (beurre manié) aside. Put the lentils in a small pan and cover with water. Add 1 thyme sprig and the bay leaves, then bring to the boil over a high heat. Reduce the heat to medium-low and simmer, uncovered, for 20 minutes until the lentils are tender. Drain, discarding the herbs.
  • In a separate deep frying pan, melt 20g of the butter over a medium heat. Add the onion and cook, stirring, for 2-3 minutes until soft but not coloured. Add the lentils and 2 tbsp water, then season to taste and stir to warm through. Reduce the heat to low, then cover and keep warm while you cook the fish.
  • Lightly sprinkle the cod on both sides with curry powder, salt and black pepper. Heat the oil in a large, non-stick frying pan over a medium heat. Cook the cod skin-side down for 3 minutes until pale golden and just cooked through. Add the remaining 20g butter and turn the fish carefully to coat it in the butter, then turn off the heat.

  • Whisk together 1 cup hot water and demi-glace in a small bowl until dissolved; set aside. Cook bacon in a high-sided large skillet over medium, turning occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a plate lined with paper towels, reserving drippings in skillet.
  • Add quartered mushrooms, onion, and 2 tablespoons butter to bacon drippings in skillet. Increase heat to medium-high, and cook, stirring often, until mushrooms are lightly browned, about 10 minutes. Stir in wine, and bring to a simmer; cook 5 minutes. Stir in demi-glace mixture, ketchup, maple syrup, onion powder, garlic powder, chili powder, and Creole seasoning. Return to a simmer over medium-high. Reduce heat to medium; and gently simmer, stirring occasionally, until sauce is thick enough to coat the back of a spoon, 5 to 7 minutes. Remove from heat, and stir in 1/2 teaspoon salt. Cover sauce, and keep warm.
  • Heat oil in a large nonstick skillet over medium-high. Sprinkle fillets with remaining 1 1/2 teaspoons salt. Place fillets in hot pan; cook until edges are golden brown, about 5 minutes. Carefully turn fillets over; add remaining 1/4 cup butter. Tilt skillet so butter pools, and cook, basting fish often, until just cooked through, about 3 minutes. Remove from heat.
  • Place 1 fillet in each of 4 shallow bowls. Spoon about 1/2 cup sauce over and around each fillet. Top evenly with crumbled bacon and remaining thinly sliced mushrooms. Garnish with herbs.
