Air fryer or oven Chinese steamed cod fish recipe is simple & delicious. With 6-ingredients, this Chinese fish cod recipe is Paleo, Whole30, low carb, and Gluten-free.

1 lb. Cod fish fillets (boneless/skinless at about 1-inch thick)
½ tsp coarse sea salt
2 tbsp coconut aminos (or 1 tbsp gluten free tamari)
2 tsp toasted sesame oil
1 tbsp finely chopped ginger
3 bulbs scallions (chopped)
0.8 oz. Fresno or serrano red chilies (seeds removed and finely chopped)
4 tbsp avocado oil

Steps:

  • Slice the cod fillet into two equal weight pieces, ½ lb each fillet. Pat dry with a paper towel.
  • Fold one piece of the parchment paper in half and place 1 fish fillet in the center and closer to the seam. Repeat with the other half of the fish.
  • Season each filet with ¼ tsp coarse salt, 1 tbsp coconut aminos, and 1 tsp toasted sesame oil.
  • To make a paper pouch: Fold the paper over so the two ends meet, enclosing the food. Beginning at either end of the center crease, make small, overlapping diagonal folds around the filling, pleating it all around to make a semicircular airtight package that looks like a half-moon shape calzone. Seal the packet tight. You might need to twist and fold the end tip to secure the envelope.
  • If use air fryer: place 1 packet inside of the basket. Lightly press the paper pouch down so it won't get burnt. Air fry at 300F for 15 minutes or until the fish is soft and flaky. Test with a skewer, if it goes in easily, the fish is done. If not, air fry for 5 additional minutes. If your fish is thinner than 1-inch, reduce the cook time by 5 minutes.
  • If use oven: Place both packets over a large sheet pan. Bake at 400F for 15-20 minutes or until the fish is buttery soft. The exact bake time will depend on the thickness of the fish fillets and type of fish.
  • In the meantime, finely chop ginger, scallions, and chili peppers. Divide them into 2 equal piles.
  • When the fish is about 5 minutes away from ready, in a heavy bottom saucepan, heat up the avocado oil over medium-low heat for about 5 minutes. Cover the saucepan with a lid but leave a small gap open to allow air to come-in.
  • Carefully remove the fish pouch. Let cool for 3 minutes before using a kitchen scissors to cut open the packet (be careful of the hot steam). Add the aromatics - ginger, scallions, and chilies - on top of the fillets and season with a pinch of salt.
  • Carefully pour half amount of the hot oil over each fillet and the aromatics on top. Serve hot and immediately.

Here's a virtuous though incredibly flavorful way to prepare any firm white-fleshed fish like cod, halibut or rock fish. Marinate the fish in a bit of fresh ginger and sesame oil then bake in the oven for about 10 minutes. Finish it off with a sprinkling of black sesame seeds, chopped scallions and a few slices of pickled ginger. Serve over a bed of steamed spinach and tender white rice.

4 cod fillets, about 6 ounces each (or substitute halibut, rock fish or other firm white-fleshed fish)

1 teaspoon finely grated ginger
1 teaspoon roasted sesame oil
1 teaspoon black sesame seeds
3 or 4 scallions, sliced thin
Pickled ginger, for serving

Steps:

  • Season each fillet lightly with salt and pepper. Combine ginger and sesame oil in a small bowl, then rub the mixture on the fillets, massaging with fingers to coat evenly.
  • Place the fish in one layer in a baking dish, and tightly cover the dish with foil. Let the fish marinate at room temperature for 15 minutes, or refrigerate up to 3 hours and bring to room temperature before baking.

10 oz Cod fillet
3 stalks Scallion
1 Ginger
2 tbsp Soy sauce
1 tsp Sugar
4 tbsp Peanut oil
1/2 tsp Salt
1/2 tsp Pepper

Steps:

  • Slice scallions and julienne ginger, set aside for later use
  • In a saucepan, mix the soy sauce with sugar on low heat until homogeneous
  • Season the fish fillet with a little salt and back pepper
  • Use a deep, wide frying pan or a wok, put the steaming rack inside, and pour water into the pan
  • Place the fish on a plate and put the ginger coins on top of the fish. Put the fish on the steaming rack and turn the heat on high to bring to boil. Place the lid on and steam for about 10 -12 minutes.
  • Right before the fish is ready, heat up cooking oil in a small pan over high heat for about 2-3 minutes.
  • Take out the fish from the pan when it's done. Place the julienned scallions and ginger on top of the fish fillet.
  • While the oil is blazing hot, quickly pour it over the fish, scallion, and ginger
  • Drizzle the sweet soy sauce over the fish. Serve warm

1 1/2 cups dry white wine
1/4 cup Champagne vinegar
1 medium carrot, coarsely chopped
1 medium leek, coarsely chopped
1 medium onion, coarsely chopped
1 rib celery, coarsely chopped
1 ripe tomato, coarsely chopped
1/2 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon whole white peppercorns
1/2 bay leaf, crumbled
4 cups of water
Salt to taste
1 sprig each fresh dill, basil and mint
8 scallions, split lengthwise
1 whole ripe tomato
1 1 1/2-inch piece of fresh ginger, peeled and sliced
4 six-ounce fillets of black bass, with skin
1/2 lemon, peeled, seeded and diced fine
20 coriander leaves, cut in slivers

Steps:

  • Place the wine, vinegar, coarsely chopped vegetables, coriander and fennel seeds, peppercorns and bay leaf in a saucepan. Add water, bring to a boil, season with salt, and simmer about a half hour. Remove from heat, add the dill, basil and mint, and steep the herbs for an hour. Strain the broth and transfer to a deep saute pan large enough to hold the fish in one layer.
  • Bring the broth to a simmer, add the scallions, tomato and ginger, cook about a minute and remove with a slotted spoon, reserving the liquid. Peel, seed and dice the tomato. Cut the ginger slices julienne style. Set the vegetables aside.
  • With a sharp knife, lightly score the skin side of the fillets in a crisscross pattern to prevent them from curling. Bring the broth back to a very gentle simmer, place the fish in the broth skin side down and poach until just cooked through, about 5 minutes. Transfer the fish to soup plates.
  • Bring the broth to a simmer again, spoon some over the fish and top the fish with the scallions, diced tomato, ginger and lemon pieces. Garnish with the coriander and serve. Freeze any leftover liquid for future use.

Salt and freshly ground black pepper
1 1/2 pounds cod or other mild, delicate white-fleshed fish fillet
1 tablespoon minced peeled fresh ginger
1/2 cup minced fresh cilantro, plus more for garnish
1 small fresh or dried hot red chile, minced, or 1/4 teaspoon cayenne, or to taste
2 teaspoons peanut or vegetable oil
Lime wedges for serving

Steps:

  • Boil the potato in salted water to cover until it is tender but not mushy, 30 to 40 minutes.
  • Meanwhile, put the fish in a skillet that can later be covered. Add water to cover, salt the water, and bring to a boil over high heat. Cover, turn off the heat, and set a timer for 10 minutes. Use a slotted spoon to transfer the fish to a bowl.
  • When the potato is done, peel it and mash it with the fish. Add the ginger, cilantro, and chile along with some salt and pepper to taste and work the mixture with your hands until it is well blended. Shape into 8 equal burger-shaped patties.
  • Preheat the broiler and set the rack about 4 inches from the heat source. Brush the patties on both sides with the oil, then place on a nonstick baking sheet. Broil carefully until nicely browned on top, then turn and brown on the other side. Sprinkle with more cilantro and serve hot, with lime wedges.
  • Variations
  • Panfried Fish Cakes: Increase the oil to 1/3 cup, or more if necessary. Heat about 1/16 inch oil in a large skillet over medium-high heat. When it is hot (a pinch of the fish mixture will sizzle immediately), add the cakes. Cook, turning once, until brown on both sides, about 10 minutes total.
  • Substitute minced garlic, shallot, scallion, or onion for the ginger and parsley for the cilantro.
  • Season with a grating of nutmeg or a teaspoon or more of curry powder (in place of the seasonings in the original recipe).
  • Add 1/4 cup or more sour cream and a little butter to the potato as you mash it.
  • Add minced yellow or red bell pepper to the mix.
  • Serve with Mayonnaise (page 305) or tartar sauce (page 306), Worcestershire sauce, or any other condiment

A staple of classic Japanese cooking, teriyaki is wonderful with not only seafood but also poultry, beef, vegetables, and tofu. Often, however, this versatile sauce can be quite sweet. My version uses fresh orange juice, which adds just a touch of natural sweetness as well as some acidity to temper the sweet mirin. Pouring some of the teriyaki sauce into the hot pan with the fish further reduces it so the sauce really coats the fish with a deep, caramel glaze that enhances the delectable moist, buttery, and tender qualities of black cod perfectly. Other good fish for this dish are Alaskan cod, true cod, sablefish, or wild salmon. Searing each side of the sticky rice cake gives a nutty flavor and crisp texture. I also like to serve these rice cakes with vegetable stir-fries in place of plain rice. If you have a rice cooker, use it to prepare the rice according to the manufacturer's directions. If not, follow the instructions in the recipe to prepare it in a saucepan.

3/4 cup sushi rice
Grapeseed or canola oil spray
2 tablespoons sliced scallions (white and green parts)
1 teaspoon minced garlic
1 tablespoon minced peeled fresh ginger
1 tablespoon unseasoned rice vinegar
1 1/2 teaspoons mirin
Pinch of kosher salt
Pinch of freshly ground black pepper
1/2 cup low-sodium soy sauce
3/4 cup fresh orange juice (from 3 oranges)
1/4 cup mirin
1 teaspoon minced peeled fresh ginger
1/2 teaspoon cornstarch
6 (4-ounce) skinless black cod fillets, each 1 inch thick
1/4 teaspoon freshly ground black pepper
Grapeseed or canola oil spray
1/2 cup thinly sliced scallions (white and light green parts), for serving
1 tablespoon sesame seeds, toasted, for serving

Steps:

  • Bring a large pot of water to a rapid boil. Prepare a bowl of ice water. Add the bok choy to the boiling water and cook for 30 seconds. Drain the bok choy and immediately transfer it to the ice water for 2 minutes to cool. Drain the bok choy and set aside on a clean kitchen towel to soak up excess moisture.
  • Prepare the sticky rice cakes. Put the rice in a large bowl and cover with cold water. Use your hand to swish the rice around a few times. Drain and repeat until the water in the bowl is clear; you may need to rinse it several times.
  • Put the rice in a small, heavy-bottomed saucepan and add water to cover by 1 inch. Cover the pan; for best results, do not uncover the pan at any time during cooking. Bring to a boil over medium-high heat, 4 to 5 minutes; you will be able to tell the water is boiling by the large amount of steam pouring out from under the lid. Reduce the heat to low and simmer, covered, for 10 minutes. Remove the pan from the heat and let stand, covered, for 15 minutes.
  • Spray a small sauté pan with grapeseed oil and heat over medium heat. Add the scallions, garlic, and ginger and cook, stirring, until just softened and fragrant, about 30 seconds. Fold the scallion mixture into the warm, cooked rice along with the vinegar, mirin, salt, and pepper.
  • Line a platter or baking sheet with parchment paper sprayed with oil or with waxed paper. Have a separate bowl of water ready. Dip your hands into the water and scoop up 1/4 cup rice. Form it into a tightly packed cake about 2 inches thick and place the cake on the platter. Repeat with the remaining rice to form five more cakes. Set aside in the refrigerator.
  • Meanwhile, in a small saucepan, combine the soy sauce, orange juice, mirin, and ginger. Bring to a boil and reduce the heat to low. Simmer just until reduced by half, 30 to 40 minutes. In a small dish, mix the cornstarch and 1 teaspoon water and stir this slurry into the simmering sauce. Simmer 30 seconds and remove the pan from the heat.
