COD BASQUAISE

Cod Basquaise image

In this easy one-pot dish, Chef Boulud marries clean, mild cod with bold chorizo, wine, garlic, and espelette, the iconic pepper of the Pays Basque region of France. The fish is first spiced and seared for a bit of texture, then gently poached in the bright broth to absorb flavor without overcooking.

Provided by Daniel Boulud

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 17

4 fillets cod, skinless, preferably center cut, about 1.5 lb total
Sea salt
1 teaspoon ground espelette pepper, divided, available at specialty markets or online; may substitute unsmoked hot paprika
1 teaspoon paprika, divided
4 tablespoons extra-virgin olive oil, divided, plus more for garnish
1 link Spanish chorizo, cut into ¼-inch coins; about ½ cup
1 small red onion, thinly sliced
1 small red bell pepper, thinly sliced, about ¾ cup
1 small yellow bell pepper, thinly sliced, about ¾ cup
1 small green bell pepper, thinly sliced, about ¾ cup
Freshly ground white pepper
2 cloves garlic, finely chopped, about 1 tablespoon
1 teaspoon tomato paste
1/2 cup high-quality white wine, preferably from the Basque region
2 plum tomatoes, blanched, peeled, seeded, cut into strips
1/2 cup Water
Flat-leaf parsley leaves, for garnish

Steps:

  • Season one side of the cod fillets with a pinch of salt, a pinch of espelette pepper, and a pinch of paprika. Heat 2 tablespoons olive oil in a large skillet over medium heat. Once oil is hot, arrange chorizo coins around the edge of the pan; then place the cod fillets, spiced side down, in the center. Sear the fillets until they are lightly golden on one side, about 30 seconds; then remove from the pan and set aside, spiced side up. Flip chorizo coins and continue to sear until they release some fat, 1 minute.
  • Add 1 tablespoon oil to the pan. Add sliced onions and peppers; stir, then season with a pinch of salt and freshly ground pepper. Toss or stir to combine, then add a pinch of espelette pepper and a pinch of paprika. Stir and sweat until vegetables are soft but have taken on no color, 6-8 minutes.
  • To the vegetables, add chopped garlic and 1 more tablespoon olive oil; toss and stir. Add the tomato paste and white wine, stir, and simmer for about 30 seconds. Add the sliced tomatoes. Continue simmering until the pan is nearly dry ("au sec"), 5-7 minutes. Add water, then nestle cod fillets into the vegetables, spiced side up. Reduce heat to low and poach the fish, uncovered, until cooked, 10-15 minutes.
  • Cod is done when it's no longer translucent. Garnish the dish with parsley leaves and a drizzle of olive oil. Serve immediately.

SPANISH BASQUE SALT COD CASSEROLE (BACALAO A LA VIZCAINA)

Spanish Basque Salt Cod Casserole (Bacalao a La Vizcaina) image

The dish is even better reheated the next day. It may work with fresh cod, although I've never tried it.

Time 6h30m

Yield 6 serving(s)

Number Of Ingredients 17

2 lbs dried salt cod fish, best quality (use only the lean side portions, not the fatty center)
1/2 cup olive oil
1/4 cup lard
1/4 lb bacon, diced
1/4 lb smoked ham, diced
4 large mild red onions, chopped
2 garlic cloves
3 parsley sprigs
2 cups boiling water
8 -10 canned pimientos, diced (enough to give the finished dish a rich red color)
3 tomatoes, peeled, seeded, and cubed
2 hard-cooked egg yolks
water
1/2 cup soft breadcrumbs
salt and pepper
1 dash cayenne
sugar (optional)

Steps:

  • Cut cod into 6 equal servings.
  • To remove salt, soak about 20 hours in fresh cold water, changing water 4 to 5 times.
  • Several hours before you plan to cook the cod, start the sauce (for which they take over 5 hours in Spain, but you may need less).
  • In large skillet with cover, or Dutch oven, heat oil, 1/4 cup lard, bacon, and ham. When mixture bubbles, add onion, whole garlic cloves, and parsley. Cover, turn down heat as low as possible and cook for 3 hours, or until onion is very soft but not at all burned. Add boiling water and continue simmering for 2 hours longer, or until onions are completely fallen apart. Add more boiling water as necessary to keep from sticking. Add pimientos, tomatoes, and egg yolks mashed with bread crumbs and mixed to a fine paste with a little cold water. Simmer for a few minutes longer.
  • Put everything through a sieve, food mill, or blender so you have a smooth sauce. Add salt and pepper to taste, and if you want to be authentic, a dash of cayenne.
  • Meanwhile, when cod has soaked for 20 hours, dry it thoroughly with paper towels. Remove any scales, being careful not to damage the skin (which adds a smooth, gelatinous quality to the finished dish's sauce). In large saucepan, combine cod and unsalted cold water to cover; bring to a boil. As soon as water starts to boil, take out the pieces of cod; carefully remove bones.
  • Grease a heatproof casserole with lard or bacon fat. In it, arrange a layer of cod; pour sauce over; repeat until all the cod and sauce are used up. Sauce should cover the fish, not drown it. Cook slowly until fish is done, about 20 minutes.
  • During cooking, shake the casserole often so the sauce runs to the bottom. Also, with a wide pancake turner or spatula, losen the bottom layer of fish often to keep it from sticking, being careful not to break the pieces.
  • Taste from time to time, and add salt and pepper if necessary; or a pinch of sugar if the cod is make the sauce too salty.
  • Finished dish should be savory, neither too salty, too peppery, not too sweet, and of a good red color. Makes 6 servings.

  • Prepare the sauce: heat a large pan over medium high and when warm, add the olive oil and onion. Cook until soft and translucent, about 5 minutes. Then add the peppers and pancetta, cooking until pancetta has rendered it’s fat and the peppers are soft. Add tomatoes and thyme and simmer for 10 minutes on low heat. Add the wine or balsamic and cook for another 5-10 minutes, until the wine reduces by half. Remove from heat and add the parsley. Season to taste with salt and pepper and set aside.
  • In the now empty pan, heat the two tablespoons of avocado oil until hot. Season the fish generously with salt and pepper and lay it into the oil. Immediately reduce the heat to medium and add the garlic and thyme. Cook, without moving until the fish is browned on the first side, about 6-8 minutes. Flip the fish over and cook another 2-3 minutes, or until cooked through. Serve atop the sauce.
