Everyone raves about my meatloaf recipe and you'll see why. Serve it with real mashed potatoes or you'll love it the next day in a fantastic meat loaf sandwich. Be sure to use a baking sheet and not a loaf pan so any grease can run off and all sides can brown. - Jenny Jones

Number Of Ingredients 16

1 teaspoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1/4 teaspoon dried thyme leaves
1/2 cup quick-cooking oats
1/3 cup milk (reduced fat or whole milk)
1/4 cup finely chopped red pepper
1/4 cup finely chopped green pepper
1/4 cup shredded carrot
1/2 cup ketchup
1 egg
1/4 cup chopped fresh parsley
1 teaspoon Dijon mustard
1/2 teaspoon salt
pepper to taste
1 1/2 pounds extra lean ground beef

Steps:

  • Preheat oven to 350° F. Line a baking sheet with foil or parchment paper and set aside.
  • In a small pan sauté the onion, garlic and thyme in oil over medium-high heat for 5 minutes. Set aside to cool.
  • In a large bowl combine all the ingredients, including cooled onion mixture, except the meat. When mixture is well blended add the meat by hand but do not overwork it.
  • Place on baking sheet and shape into a 9 by 5-inch loaf. Bake for about an hour or until the center reaches 160° F. Let rest 10 minutes.

This is an old family recipe, my grandmother got it from her youngest sister Grace, I am not sure about the year... but it was before I was born. This is a moist meat loaf and has a great flavor. Grandma always served this with corn, peas or green beans and mashed potatoes with a tomato gravy or a brown gravy.

MEATLOAF
1 3/4 c bread crumbs, fresh
1 large egg (well beaten)
1/2 c coca-cola
3 Tbsp catsup
1 Tbsp yellow mustard
1 tsp salt
1/2 tsp ground black pepper
1/8 tsp ground red pepper
1 tsp dry basil leaves (crushed)
1/3 c fresh parsley (minced fine)
1 medium onion (minced)
2 lb ground beef
TOPPING: (OPTIONAL)
1 small can tomato paste
1 can(s) stewed tomatoes

Steps:

  • 1. In a large bowl: Put egg, pop, catsup, mustard and bread crumbs and mix together well. Add spices, fresh parsley and onion, mixing well. Add the ground beef and mix together well.
  • 2. Put into a loaf pan (9x5 inches). Bake at 350 degrees for 55 to 75 minutes. Remove from oven and let rest on counter or stove top about 10 minutes before cutting.
  • 3. Optional Topping: Halfway through cooking, quickly spread the tomato paste over the meatloaf with a knife. Pour stewed tomatoes over the top. Return to oven to finish baking.

1/2 Teaspoon Black Pepper

1 Teaspoon Dried Thyme
1/2 Large Yellow Onion (Roughly Chopped)
1 Carrot (Peeled and Cut Into 1 Inch Pieces)
3 Cloves Garlic (Peeled)
1/2 Red Bell Pepper
18 Ounces Ground Chuck
18 Ounces Ground Sirloin
1 1/2 Teaspoon Salt
1 Large Egg
1/2 Cup Ketchup
1 Teaspoon Dried Cumin
Dash Hot Sauce
1 Tablespoon Honey

Steps:

  • Adjust oven rack to center position. Preheat oven to 325 degrees. Line a rimmed baking sheet with parchment paper. Set aside.
  • Combine the croutons, black pepper, cayenne pepper, chili powder and thyme in the bowl of food processor. Pulse until the mixture is a fine crumb. Pour crumb mixture into a mixing bowl. Add onion, carrot, garlic and red pepper to food processor and pulse until the vegetables are finely chopped (Don't over-pulse-since we don't want to go as far as puree). Add the chopped vegetables, chuck, sirloin and salt to the breadcrumbs and combine. Mix in the egg and combine thoroughly, but don't squeeze the meat.
  • Press the mixture into a 10-inch loaf pan to shape the meatloaf. Turn the meatloaf out onto prepared baking sheet. Bake for 10 minutes in preheated oven.
  • Meanwhile, make the topping by combining ingredients in a small mixing bowl. After meatloaf has baked 10 minutes, remove it from oven and brush the ketchup mixture over top and sides. Place back in oven and bake until cooked through, about 55-65 minutes, or internal temperature reaches 155 degrees. Cool for 10 minutes before serving.

1/4 small red onion, minced
1 tsp garlic powder
1 tsp dried parsley
1 tsp pink Himalayan salt
1/2 tsp black pepper
1 large egg
1/2 cup ground pork rinds ((1 oz whole pork rinds))
1/4 cup grated Parmesan cheese
1 tbsp Worcestershire sauce
2 tbsp tomato paste
2 tbsp water
1/2 tsp Worcestershire sauce
5 drops liquid stevia
1 tsp white vinegar
pinch of salt, onion and garlic powder

Steps:

  • Preheat the oven to 375°F degrees and grease a loaf pan (if using).
  • Add all meatloaf ingredients to a large bowl. Using your hands, combine well. Form the mixture into a loaf shape and place on a greased baking dish or press into your greased loaf pan and flip out on the baking sheet.
  • Bake for 20 minutes.
  • While the meatloaf is baking, add all topping ingredients to a small bowl and whisk together.
  • Remove meatloaf from oven and top with the ketchup mixture. Bake for an additional 10-15 minutes or until the meatloaf reaches 165°F.
  • Remove from the oven and allow to rest for 15 minutes to let the juices settle before slicing and serving.
  • Best stored in an air tight container in the fridge up to 5 days.

¾ cup whole wheat couscous
1 lb. extra lean ground beef
8 oz. Italian sausage, removed from casings and crumbled
1 onion, diced
1 red bell pepper, seeded and diced

2 eggs, beaten
1 cup reduced-sodium tomato sauce, divided
1 tablespoon sweet paprika
1 tablespoon ground cumin (see Notes below)
1 teaspoon ground coriander
½ teaspoon salt
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 F.
  • In a saucepan, bring water and beef stock to a boil. Gradually stir in couscous. Cover, remove from heat and set aside or let stand until couscous is tender and water is absorbed, about 15 minutes. Fluff with a fork before using.
  • In a large bowl, combine ground beef, sausage, onion, bell pepper, parsley, eggs, all but 2 tablespoons of the tomato sauce, paprika, cumin, coriander, salt, cayenne and couscous. Using your hands, mix until well blended. Transfer to a 9 x 5-inch loaf pan and spread remaining 2 tablespoons of tomato sauce over top. Bake in preheated oven until temperature reaches 165 degrees F on an instant-read thermometer, about 1 hour.
