COCONUT CHIPS
My husband and I have spent a fair amount of time in the Caribbean, especially the little island of Bequia. While there, we were introduced to coconut chips, which were served like a munchy mix during happy hour. A bit different, but they can be addictive. A hammer is helpful to crack open the baked coconut.

Steps:
- Preheat oven to 400 degrees F (200^C/Gas 6).
- Butter baking sheets.
- Bore two holes in eyes of coconut using a clean skewer or ice pick.
- Drain liquid from coconut.
- Bake coconut until shell cracks, about 15 minutes.
- Remove coconut meat from shell and peel off brown skin.
- Using a vegetable peeler, shave coconut into thin slices.
- Arrange slices on prepared baking sheets and bake until light brown, turning occasionally, about 10 minutes.
- Sprinkle with salt.

- Place popcorn and oil in a 3-quart pot over medium heat and cover the pot with a lid. Shake the pot constantly as popcorn pops. When popping slows to a few seconds in-between pops, after about 3 to 5 minutes, remove pot from heat and pour popcorn into a large bowl. Season with sea salt.

Steps:
- take a coconut ,poke a "eye" out of the nut to remove milk,drink or save, hit nut w/hammer ,try to only split in 2 peices ,remove white meat and shave to real thin shavings lenth dosnt matter ,heat butter in frying pan on med heat DO NOT BURN fry coconut meat until golden brown.
- let sit on paper towel until cool enough to serve still warm put back in the coconut halves ,sprinkle salt to taste.

- In a large non-stick pot, melt the butter. Add the sugar, brown sugar, karo syrup, and sweetened condensed milk. Bring to a boil while stirring.
- While using a candy thermometer, bring to a rapid boil of 235-240 degrees. Remove from heat and add the coconut extract and the salt.
- Pour 3/4 of your caramel mixture onto your popcorn and stir until all of the popcorn is covered in caramel. If you want a lot of caramel on your popcorn, use less popcorn, I didn't give an exact amount of popped popcorn because everyone like it a little different. For this recipe I would error on the side of a light coating of caramel because we are still going to add a few layers. Spread the caramel popcorn onto a couple of cookie sheets sprayed with non-stick cooking spray to cool.
- With the remaining 1/4 of caramel, add the 2 cups of marshmallows. Stir until the marshmallows are melted or almost melted. Put it back on the heat to melt the marshmallows if needed.
