½ cup vegetable shortening
1 teaspoon vanilla extract
3 cups confectioners' sugar, sifted
2 tablespoons milk, or as needed
1 (7 ounce) package sweetened flaked coconut, divided
¼ cup chopped pecans

Steps:

  • Beat butter and shortening with an electric mixer in a large bowl until smooth; beat in vanilla extract.
  • Gradually beat confectioners' sugar into butter mixture until well blended. The mixture will appear dry.
  • Stir enough milk into butter mixture to achieve desired consistency for icing.
  • Fold half the coconut into the icing; spread icing over cake.
  • Sprinkle remaining coconut and pecans over icing.

This is the perfect frosting for your favorite layered cake. It's easy and ever so quick to make any flavor you want. Instead of coconut you can us your favorite nuts, or mini chocolate chips or chopped cherries and your favorite flavoring... It could be chocolate syrup, a bit of Kool-Aid for color (only 1 T.) of lemon or lime...

16 oz container Cool Whip, thawed
2 Tbsp lemon or lime extract
1 1/2 c sweetened flaked coconut
12 oz can Betty Crocker whipped vanilla frosting
1 baked 8-inch lemon layer cake

Steps:

  • 1. Heat oven - make and bake according to package or recipe directions. (I used a lemon cake mix.) You can use your favorite cake mix or recipe. Bake and set aside to cool completely.
  • 2. Use a spatula to empty Cool Whip (only use this kind, if possible) into a large bowl. Add the lemon juice (or flavoring to match the cake recipe you are using). Now add the coconut. Mix and fold to get well blended.
  • 3. Spread a thick layer on this mixture on the bottom layer on your cake plate; place second layer on top of the filling.
  • 4. Empty the can of whipped frosting to the remaining Cool Whip mixture. Mix up well to blend. If you want to add more coconut do so now; but only about 1/2 cup.
  • 5. Spread this mixture on the sides of the cake, filling in any gaps between the layers. Be generous on the sides. Spread remainder of the frosting on the top. When finished, cover with a dome lid and refrigerate. For holiday's you can sprinkle colored sugar... enjoy.

How to Make Coconut Whipped Cream image

An easy, step-by-step recipe for how to make coconut whipped cream! Perfect for topping vegan and non-dairy desserts.

1 (14-ounce) can coconut cream or full fat coconut milk*
1/4 - 3/4 cup icing/powdered sugar (use organic to ensure vegan friendliness)
1/2 tsp vanilla extract ((optional))

Steps:

  • Chill your coconut cream or coconut milk in the refrigerator overnight (see notes for top brands!), being sure not to shake or tip the can to encourage separation of the cream and liquid. See notes for more insight / troubleshooting.
  • The next day, chill a large mixing bowl 10 minutes before whipping.
  • Remove the coconut cream or milk from the fridge without tipping or shaking and remove the lid. Scrape out the top, thickened cream and leave the liquid behind (reserve for use in smoothies).
  • Note: if your coconut milk didn't harden, you probably just got a dud can without the right fat content. In that case, you can try to salvage it with a bit of tapioca flour - 1 to 4 Tbsp (amount as original recipe is written // adjust if altering batch size)- during the whipping process. That has worked for me several times.
  • Place hardened cream in your chilled mixing bowl. Beat for 30 seconds with a mixer until creamy. Then add vanilla (optional) and powdered sugar (or stevia) and mix until creamy and smooth - about 1 minute. Avoid overwhipping because it can cause separation. Taste and adjust sweetness as needed.
  • Use immediately or refrigerate - it will harden and set in the fridge the longer it's chilled. Will keep for up to 1 - 2 weeks!
  • Coconut whipped cream is perfect for topping desserts like pie, hot cocoa and ice cream. It's also ideal for french toast, pie fillings, mousse, and even no-churn ice cream!

3 cup cake flour ((360 grams))
1 Tbsp baking powder
1 teaspoon kosher salt
1 cup full-fat canned coconut milk (well shaken)
¾ cup egg whites ((180 grams) about 5-6 large eggs)
2 teaspoon pure vanilla extract
¾ cup unsalted butter ((170 grams), room temp, softened)
1 ½ cup granulated sugar ((300 grams))
½ cup macapuno string*
2 cup heavy cream (or heavy whipping cream, very cold)
¼ cup confectioners' sugar
1 teaspoon pure vanilla extract
assorted fresh berries (as needed)

Steps:

  • Preheat oven to 350°F. Butter and lightly flour three 6-inch round cake pans. Line bottom with parchment paper. Set aside.
  • Whisk together cake flour, baking powder, and salt. Set aside.
  • In another bowl, mix together coconut milk, egg whites, and vanilla extract until smooth. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat together butter and sugar until smooth. Scrape down sides of bowl as needed to ensure thorough mixing.
  • Alternate adding dry and wet ingredients to the mixing bowl. Add ⅓ of dry flour mixture. Mix on on low speed while adding ½ of liquid mixture. Add another ⅓ dry mixture and follow with remaining ½ of liquid mixture. Add remaining ⅓ of dry mixture. Batter will be thick. Scrape down sides of bowl as needed.
  • Divide batter evenly among prepared cake pans ( about 390 grams of batter per pan). Use a mini offset spatula or the back of a spoon to spread batter into an even layer. Bake for 30-35 minutes until toothpick inserted in center of cake comes out clean. Cool cake in pan for 5 minutes. Run a mini offset or knife along cake pan edges to loosen cake. Unmold cake and cool to room temperature on wire rack.

Steps:

  • Heat oven to 350 degrees. Line 3 (8-inch) cake pans with parchment and coat paper with baking spray; set aside.
  • Mix flour, baking powder and salt.
  • In a large bowl, cream coconut oil and butter with 1 1/3 cups of sugar. Add flour mixture alternately with coconut milk, beginning and ending with flour; add vanilla and almond extracts.
  • If desired, add 1/2 cup of the shredded coconut to the batter.
  • In a separate bowl, beat egg whites and remaining 2/3 cup sugar to soft peaks. Fold egg white mixture into cake batter, just enough to incorporate.
  • Spoon batter into prepared pans and bake, rotating pans halfway through, 25 to 35 minutes or until cake is springy to the touch. Cool cakes completely.
  • For the frosting: Whip cream and sour cream to soft peaks. Add the confectioners' sugar and vanilla powder and continue whipping to stiff peaks.
  • Frost cake with whipped cream frosting, spreading a layer of frosting between each layer. Sprinkle remaining shredded coconut on top and sides of cake.
  • Refrigerate any leftovers.
