COCONUT RICE PUDDING WITH RASPBERRY SAUCE



Coconut Rice Pudding with Raspberry Sauce image

This Creamy Coconut Rice Pudding recipe is vegan, gluten-free, dairy-free, and downright heavenly! Topped with a fresh, saucy, sweet, and mildly tart Raspberry Sauce and garnished with cranberries, red currants, and cinnamon to make this porridge even more special. It's also perfect for breakfast served with cherry compote as featured in my cookbook.

Number Of Ingredients 11

¾ cup short-grain rice (*see suggestions above)
⅔ cup water
15 oz coconut milk (1 can (400 ml))
3 tbsp agave syrup (or another sweetener to taste)
2 tbsp desiccated coconut (or other nuts as desired)
1 ¾ cups raspberries (frozen or fresh)
¼ cup water (or fruit juice)
1 tbsp cornstarch (or try arrowroot or tapioca flour)
½ tsp vanilla extract (optional)
a squeeze of lemon juice (optional)
2-3 tbsp sugar (or syrup to taste)

Steps:

  • Add the rice, water, and coconut milk to a saucepan and bring to a boil. Cook over low heat for about 20-25 minutes, stirring frequently, until the rice is tender and the mixture is creamy. Stir in agave syrup and desiccated coconut to taste.
  • While the rice is cooking, make the raspberry compote. In a small cup, whisk 2-3 tbsp of the water and the cornstarch until well combined. Set aside.
  • Add the raspberries and the rest of the water to a saucepan and bring to a boil. Cook until the raspberries are soft and mash them with a fork. Then stir in the cornstarch mixture and bring to a boil for a second time until thickened to desired consistency (Note: it will thicken more as it cools). Add vanilla extract, a squeeze of lemon juice, and sugar to taste.
  • Serve your creamy rice pudding in bowls or jars and layer it with raspberry compote. Garnish with your favorite fresh fruits and cinnamon as desired.
  • Enjoy warm or cold!

1/2 cup uncooked rice blend (such as Rice Select Royal Blend, with quinoa and freekeh)
One 15-ounce can unsweetened coconut milk
2 tablespoons pure maple syrup, plus more for serving
1/8 teaspoon ground cinnamon
Kosher salt
1 cup frozen raspberries
Fresh raspberries and toasted unsweetened coconut flakes, for serving

Steps:

  • Bring uncooked rice blend and 1 cup water to a boil in a small saucepan. Reduce heat, cover, and simmer until tender and water is absorbed, about 18 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork.
  • Add coconut milk, maple syrup, and 1/2 cup water; stir to combine. Stir in cinnamon and a pinch of kosher salt. Return to low heat and simmer until slightly thickened, about 5 minutes. Remove from heat; fold in frozen raspberries. Transfer mixture to a bowl set in an ice-water bath; stir occasionally until chilled. Serve with more maple syrup, fresh raspberries, and toasted unsweetened coconut flakes, if desired.

RASPBERRY COCONUT PORRIDGE

100g rolled porridge oats (not instant)
25g creamed coconut , chopped
200g frozen raspberries
125g pot coconut yogurt (we used COYO)
a few mint leaves , to serve (optional)

Steps:

  • Tip the oats and creamed coconut into a large bowl, pour on 800ml cold water, cover and leave to soak overnight.
  • The next day, tip the contents of the bowl into a saucepan and cook over a medium heat, stirring frequently, for 5 -10 mins until the oats are cooked. Add the raspberries to the pan with the yogurt and allow to thaw and melt into the oats off the heat. Reserve half for the next day and spoon the remainder into bowls. Top each portion with mint leaves, if you like.

1/4 cup sugar
1/2 vanilla bean, split and scraped
1/4 teaspoon coarse salt
3/4 cup sweetened shredded coconut
1 1/2 cups half-and-half
1/2 cup unsweetened coconut milk
3/4 cup Cooked Short-Grain Rice
1 pint ripe or overripe raspberries
1/2 cup unsweetened large coconut flakes, toasted, for garnish

Steps:

  • Preheat oven to 325 degrees and bring a kettle of water to a boil. Whisk together eggs, sugar, vanilla seeds, and salt in a large bowl. Stir in shredded coconut, half-and-half, coconut milk, and rice.
  • Place six 6-ounce ramekins (each 1 inch deep and 5 inches in diameter) in a roasting pan and divide rice mixture evenly among ramekins. Transfer pan to oven and pour in enough hot water to reach halfway up ramekins. Bake 20 minutes, then stir each pudding to distribute rice evenly. Divide raspberries among puddings, scattering them over tops. Bake until puddings are set and barely wobbly when shaken, 18 to 20 minutes more. Carefully remove each pudding as it is ready (some will take longer than others because of placement in pan), and let cool slightly, about 15 minutes. Garnish puddings with coconut flakes and serve warm.

400g raspberries
140g light muscovado sugar , plus 4 tbsp more
100g butter , melted, plus extra for greasing
6 tbsp good-quality raspberry jam
140g self-raising flour
140g desiccated coconut
3 large eggs
250ml coconut milk , from a can
1 tsp bicarbonate of soda
coconut yogurt , to serve (we used Yeo-Valley Greek-style)

Steps:

  • Put roughly one-third of the raspberries and the 4 tbsp sugar in a small saucepan. Cook over a low heat, mashing the berries into the sugar, until saucy and the sugar is dissolved. Stir in the remaining berries for 1 min, taste for sweetness, then remove from the heat, tip into a bowl and chill until ready to serve.
  • Heat oven to 180C/160C fan/gas 4. Grease 6 large (about 250ml) heatproof coffee cups or ramekins. Add 1 tbsp raspberry jam to the bottom of each.
  • Put the flour, sugar and 85g of the coconut into a food processor and whizz until finely ground and no bits of visible coconut are left. Beat the eggs, butter and coconut milk together. Tip the dry ingredients into a bowl, stir in the bicarb, then stir in the egg mix until smooth. Spoon the mixture into the prepared cups or ramekins and scatter with the remaining coconut. Bake for 30 mins on a baking tray until risen, golden and a skewer comes out clean.
  • Let the puds stand for 5 mins, then spoon over a little of the raspberries and coconut yogurt, and serve with extra on the side.

3 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
2 cups flaked coconut
1 ½ cups margarine, softened
¾ cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
¼ cup water
¾ cup raspberry jam

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix flour, baking soda, salt, baking powder, and coconut together in a bowl. Set aside. Beat the margarine, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time. Beat in the vanilla extract and water with the last egg. Mix in the flour mixture until just incorporated. Add more flour if the dough becomes too sticky.
  • Roll the dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets. Make an indentation in each cookie using a 1/2 teaspoon size measuring spoon. Fill each cookie with the raspberry jam.
  • Bake in the preheated oven until slightly golden, 10 to 12 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

175g unsalted butter , softened, plus extra for the basins
6 tbsp raspberry jam
175g caster sugar
3 large eggs
150g self-raising flour
25g desiccated coconut , blitzed in a small food processor until fine
1 tsp vanilla extract
2 tbsp coconut cream , plus 2 tbsp to serve (optional)
500g thick custard , to serve

Steps:

  • Butter six small pudding basins and spoon 1 tbsp jam into the bottom of each one.
  • Put the butter and sugar in a medium bowl and beat with an electric whisk until pale and fluffy. Beat in one of the eggs followed by a spoonful of the flour, then continue until all the eggs have been incorporated. Fold in the remaining flour, the coconut and a pinch of salt, then the vanilla and coconut cream. Spoon the mix into the prepared basins, leaving a 1cm gap at the top.
  • Put the basins on a baking tray, transfer to the freezer and freeze until solid. Will keep in an airtight container, or tightly wrapped in the freezer for up to three months.
  • Heat the oven to 180C/160C fan/ gas 4. Put the basins in a deep baking dish and half-fill with boiled water from the kettle. Tightly cover the dish with foil and bake for 1 hr, or until a skewer inserted into the middle of a sponge comes out clean.
  • Warm the custard with the remaining 2 tbsp coconut cream, if using, and pour into shallow bowls. Run a knife around the sides of the basins and carefully turn out the sponges onto the custard.
