THAI PINEAPPLE CHICKEN CURRY
This is a quick, easy, and authentic Thai curry dish that's sweet and very spicy. I became addicted to the dish at a local restaurant and then worked to duplicate it at home. I think I've got the taste and presentation pegged. I'm guesstimating on the amounts since I don't measure much when I cook. Feel free to adjust to taste.

Steps:
- Bring rice and water to a boil in a pot. Reduce heat to low, cover, and simmer 25 minutes.
- In a bowl, whisk together curry paste and 1 can coconut milk. Transfer to a wok, and mix in remaining coconut milk, chicken, fish sauce, sugar, and bamboo shoots. Bring to a boil, and cook 15 minutes, until chicken juices run clear.
- Mix the red bell pepper, green bell pepper, and onion into the wok. Continue cooking 10 minutes, until chicken juices run clear and peppers are tender. Remove from heat, and stir in pineapple. Serve over the cooked rice.

COCONUT-PINEAPPLE CURRY SAUCE
I created this recipe for a Thai Curry Challenge. It is a sweeter curry sauce with a bite from the red curry paste.

- 1. For the sauce: Combine the 1st 5 ingredients (coconut cream through sweet chili sauce) in a bowl and mix well.
- 2. Heat 3 tablespoons coconut oil and add the scallions, water chestnuts and pineapple. Cook 1-2 minutes and add the cooked chicken and heat through.
- 3. Add the curry sauce and cook until slightly thickened.
- 4. Serve over rice and garnish with chopped cilantro and scallions.

- Chop the veggies + onion and put everything in a large pan or pot with a little water (or use oil, if not oil-free) and fry on medium heat for about 8-9 minutes. Add the garlic and fry for a further minute. Stir frequently.
- Drain and rinse chickpeas (or beans of choice) and add them to the pan together with the pineapple chunks.
- Add coconut milk, all spices + salt and pepper to taste. Simmer for about 10 minutes or longer (for a thicker curry). You can also add 1-2 tsp of cornstarch (mix it with some coconut milk before you add it) to make the curry sauce even thicker.
- Serve the curry with cooked rice of choice, potatoes, or naan bread. Garnish with fresh coriander. Enjoy!

- A QUICK GUIDE ON HOW TO CUT A PINEAPPLE. Have a bowl ready to hold the discarded skin of the pineapple. Cut off the crown and the bottom stem. If your Pineapple is large and long, cut it in half. this makes it easier to remove the skins. Keep the pineapple in a standing position and slowly trim the skin. - HOW TO MAKE THE PINEAPPLE CURRY.Place pan over medium fire, pour in the oil(3 tbs), heat it for a few minutes. Add curry leaves(a sprig), onions(1 large), green chillies(1), cardamom(3), turmeric(1tsp). (see notes above for a more spicier pineapple curry). Cook the ingredients for 5 minutes over low heat until the onion slices turn translucent. Add the mustard seeds(1/2tsp) to the pan just as the onions are turning slightly brown and sauté for 3 minutes over medium heat. Add the Pineapple to the tempered ingredients. Carefully twist the tails of the body and clean under running water. Using scissors carefully cut the shell and remove the tail. Curl up the tail and stick a toothpick through it to hold its shape. Using scissors again carefully remove the claw meat and knuckle meat. You can also remove the leg meat if desired.
- Turn the heat back on under the poaching liquid and once hot place the tails in the pot, after 4 minutes add in the claws and then the knuckle and leg meat last once two minutes are remaining for a total of 8 minutes of poaching. Remove immediately and set aside.
