Steps:
- Place all ingredients in bread pan of your bread machine.
- Select dough setting and press start.
- When dough cycle has finished, remove dough from pan and turn out onto a lightly oiled surface (or use nonstick cooking spray).
- Form dough into an oval, cover with plastic wrap and let rest for 10 minutes.
- After resting, divide the dough into 16 pieces; shape as desired.
- Preheat oven to 375 degrees.
- Cover rolls and place in a warm spot to rise, approximately 20 to 30 minutes.
- Bake approximately 20 minutes or until nicely browned.

HAWAIIAN SWEET ROLLS (BREAD MACHINE)
Great for sliders and light Summer fare, these are better than store-bought. Found on a bread machine forum: thanks CaliforniaBreadMaker for posting a great recipe! *The original recipe called for 1/4 cup of milk but after making these twice and adding more, I corrected it to 1/2 cup: it may be my bread machine, so add the milk carefully, but with 1/2 cup it turned out perfectly for me :-)

- Prepare the bread machine: Combine ingredients as recommended my your machine's manufacturer.Use the dough setting.
- After the cycle, turn out onto a floured surface and preheat the oven to 350.
- Stretch dough into a log and with a sharp knife cut into 12 pieces.
- Use a 9x13x2 greased baking pan. Let it rise for an hour to 90 minutes.
- Brush with milk and bake at 350 degrees x20 minutes.
- Cover with aluminum foil after 10 minutes to prevent burning**.
- Note on directions:
- **One baker used a glass Pyrex dish, like you would use for lasagna,lined it, ungreased, with waxed paper. Raised and baked it as directed, and it did not require the aluminum to prevent burning. I make these in a lower oven shelf and also haven't needed to cover them up.

- Measure carefully, placing all ingredients except apple and pecans in bread machine pan in the order recommended by the manufacturer. Add apple and pecans at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
- Select Sweet or Basic/White cycle. Use Light crust color. Do not use delay cycle. Remove baked bread from pan, and cool on wire rack.

So good we ate the bottom crust! I had 1/2 can of coconut milk left and found this recipe to utilize it. Aroma and taste are delightful, it toasts beautifully-definitely worth making.

HAWAIIAN SWEET ROLLS (BREAD MACHINE)
Every time I make these rolls, I get raving compliments! This is an excellent potluck dish! It is very important to use McCormick brand coconut extract for the right flavor! For the fluffiest rolls, make sure all the ingredients and the kitchen are warm. This was intended to be a copycat of King's Hawaiian Rolls, but according to my husband, these taste way better when done right!

Steps:
- Bring all cold ingredients to room temperature (pineapple juice, egg, milk, butter). This will take about 30 minutes, but you can speed it up a little bit with the microwave if you're not feeling patient.
- Add the pineapple juice to your bread machine.
- Beat the egg and add to your bread machine.
- Add the milk to your bread machine.
- Divide the butter into small pieces (no larger than 1 tablespoon) and add to the bread machine.
- Add McCormick coconut extract, ground ginger, salt, sugar, potato flakes, and flour to the bread machine, in that order.
- Make a small well in the flour, and pour the yeast in the well.
- Run your bread machine on the dough cycle to knead the dough.
- After the kneading cycle, let the dough rise until doubled in size - about 1 hour. (I let mine rise in the bread machine).
- Grease a 13"x9" pan.
- Divide the dough into 12-15 rolls and place next to each other in the pan (this will get them soft sides).
- IMPORTANT! Sometimes the dough will be a little sticky to handle while you're doing this (and that's okay!). Do NOT even think about adding more flour! I mean it! I can't stress that enough! It will toughen your rolls. You can try greasing your hands with cooking spray if you want them to be easier to handle. If that still doesn't work, then just enjoy the stickiness knowing that your rolls will be nice and fluffy!
- Cover with a towel and let rise until doubled in size - about 1 hour - in a warm place. Meanwhile, preheat your oven to 350 degrees.
- Bake rolls in preheated oven for 25 minutes or until golden on top.
- Immediately upon removing the rolls from the oven, brush the tops with butter.
- Let cool in the pan until the rolls are cool enough to handle. Then remove from pan.
- TIP: If you will not be eating the rolls right away, transfer the rolls to a large enough bowl to hold them. Place a lid on top and vent it, taking care that no rolls touch the lid. Closing the airflow off while they are warm will make the rolls soggy. Leaving them out in open air will make the rolls crusty. Keeping them in a vented bowl until they are completely cool is very important for obtaining soft rolls! Once the rolls are completely cool, seal the bowl.
CARAMEL-PECAN ROLLS FOR BREAD MACHINE
These are really good, especially for breakfast. They can be eaten any time, but I prefer breakfast. These rolls just melt in your mouth, and are really yummy. Hope you enjoy them as much as my family does.

- 1. Place all Dough ingredients in bread pan in the order listed. Select SWEET DOUGH cycle.
- 2. Grease 13x9x2 inch rectangular pan. Mix 1/3 cup margarine, the brown sugar, corn syrup and pecan halves. Spread mixture in pan.
- 3. Mix 1/2 cup granulated sugar and the cinnamon. Flatten dough with hands or rolling pin into 15x10 inch rectangle. Spread with 2 tablespoons margarine: sprinkle with sugar-cinnamon mixture. Roll up tightly, beginning at 15 inch side. Pinch edge of dough into roll to seal. Cut roll into 1 inch slices. Place in pan. Cover: let rise in warm place about 1 hour or until double.
- 4. Heat oven to 375 degrees. Bake 22 to 27 minutes or until golden brown. Immediately invert pan onto heat proof serving plate or tray. Let pan remain a minute so caramel can drizzle over rolls.
BREAD MACHINE SWEET ROLLS

You can make these without the bread machine but I like using the bread machine because it cuts out a lot of the work and the time. Plus it does not take away...

- 1. Place ingredients for dough in machine in order given, covering liquid ingredients with flour and adding yeast last. Upon completion of dough cycle, remove dough, divide into 12-18 equal pieces (depending on how large you want your rolls). For the best way to shape your rolls watch the video.
- 2. Place on lightly greased baking sheet, cover and let rise until doubled. I have baked these on two different kinds of baking pans. A 8 inch round and a 9x13 sheet. The 8 inch round makes them more of a "Pull A Part roll" and you have to bake a bit longer. The 9x13 bakes them all the way around and they come out very nice. I prefer the 9 x 13.
- 3. Beat together egg and milk and brush rolls with wash just before baking.
- 4. Bake in preheated, 350-degree oven for 15 - 20 minutes or until golden brown.
BREAD MACHINE SWEET DOUGH/ROLLS
Since this is an original bread machine recipe I firstly tryed it on my Zojirushi Home Baker bread machine and results were great! I have since adapted it to make on my Kitchen Aid stand mixer, I will be happy to forward the KA measurement adaptations to any who wants them. Prep time is only for the last rising time, and servings is only estimated. This delicious sweet dough can be used for buns or sweet rolls.

- Place the water, milk, egg, butter, sugar, salt, flour and yeast into the bread machine pan in order stated (starting with water and ending with the yeast).
- Select dough cycle, then press start.
- Since all bread machines are different the water or flour amounts will need to be adjusted slightly to your bread machine to create a soft smooth semi-sticky dough, so make certain to check after about 5 minutes of kneading time and adjust water or flour amounts.
- When the dough cycle has finished (including the rising time) remove and place dough on a lightly floured work surface.
- Divide into sections; let the sections rest for 5 minutes (important, the dough MUST rest for 5 minutes) then shape as desired.
- Place the shaped dough onto a greased baking sheet; cover with a light clean towel.
- Let rise in a warm place for about 1-1/2 hours or until doubled in size (due to the addition of an egg rising time will be longer).
- Bake in a 375°F oven for about 20-25 minutes or until until browned.

- Rolls:
- Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
- After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
- Caramel Pecan Topping:.
- Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
- Increase heat to medium and boil, stirring constantly, for 3 minutes.
- Stir in vanilla and remove from heat.
- Pour into cake pan, then place pecan halves over the caramel.
- Filling:
- Mix together brown sugar, pecans and cinnamon.
- Moisten the dough by brushing with milk.
- Sprinkle brown sugar, pecan and cinnamon mixture over top.
- Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
- Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
- Place into pan on top of caramel.
- Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
- Bake at 350° for 20 minutes, until golden. Do not overbake.
- Invert onto a cookie sheet immediately, before caramel hardens.
THOSE COCONUT PECAN ROLLS
The dough is made in the bread machine. The topping is just the 16 ounce coconut pecan frosting I think it's for the German Chocolate Cake. The results are pure heaven. Every time my grandsons came over if the bread machine was running they would ask me if it was "those" rolls they just devoured the whole batch in one...

Steps:
- 1. Place everything in the bread pan except for chopped pecans and frosting.
- 2. Turn machine on, and when it beeps that the dough is made, take dough out and turn a floured counter top.
- 3. Gently stretch and roll into a 20 inch rope.
- 4. Spread frosting on bottom of a 9x13 pan, sprinkle pecans on top.
- 5. With a sharp knife divide dough into 12 pieces, then roll into a ball. Place into the prepared pan, cover and let rise in a warm place.
- 6. A good hint to rise is to turn oven on to warm setting, let heat 2 min, then turn off. Place pan in warmed oven and let rise until doubled maybe 45 minutes.
- 7. Preheat oven to 350 degrees, bake for 25 to 30 minutes, or until golden brown.
